Today I'm heating up the oven and making some low-sugar granola. The maple syrup is optional. I love it for the great flavor that it adds. A little goes a long way!
It's a great addition to my breakfasts and snacks. I use it as a cereal and also on my greek yogurt.
8 cup dry Oatmeal (plain)
4 tbsp Extra Virgin Olive Oil
1 cup Pumpkin Seeds (whole seeds, roasted)
1 cup, hulled Sunflower Seeds, without salt
3 tbsp Shredded Coconut Unsweetened (Bob's Red Mill)
1 cup, chopped Walnuts
4 tbsp Cinnamon, ground
2 tbsp *Flax Seed Meal (ground flax)
4 tbsp Maple Syrup
.5 cup (not packed) Raisins
