Here is my breakfast to welcome February! This is not the kind of food I normally eat - I'm more of the "fruit is nature's candy, so eat it sparingly" school. And I haven't had pancakes in well over a year. But I found a gluten free mix at the store and decided to splash out.
January recap:
I had three big goals in January.
1. Food: I wanted to build healthy, consistent, nurturing eating habits.
I think I did pretty well on this one. My biggest goals here were to keep my fridge and freezer stocked and to take a lunch to work every day. I only missed one day of taking my lunch to school and it was yesterday.
There were a couple places where I had difficulty. I discovered that I prefer having simple foods at lunchtime and that I hate eating a snack in the afternoon. But I also learned that if I go into the evening hungry, I'm much more likely to fall for junk. So right at the end of the month I started having protein powder in the afternoons. It isn't perfect, but it seems to be helping.
I also learned that having stuff in my fridge and freezer is only half the battle. I definitely need to keep food prepared and ready to eat. I knew that before, but now I really KNOW it.
2. Fitness: My goal was to work on flexibility, strength, and recovering from neck pain. My shoulder is still giving me trouble in the morning and at night, but it's slowly getting better. I didn't get as much exercise as I needed this month. I've been to the gym a bit recently, but I think I've gone backwards quite a bit after this month of shoulder pain.
3. Fun: My goal was to reduce stress because January-March is an incredibly stressful time at my job. I'm doing better than usual, but there is still room for improvement.
I am still watching too much YouTube, but I read a lot this month. I found some new music to listen to. I read my Bible almost every day, and I did pretty well at meeting people for coffee.
Now it's time to think about February!
