Week Two of Lent

My DH and I are fasting the 2nd week of Lent by giving up dairy, carbs and sugar. It's just a week, so we should be able to do it. I made a beef bone broth vegetable puree soup. No meat in it, but the bone broth should give us plenty of protein. I cooked up several vegetables in the broth and that should give us needed fiber. That's breakfast and lunch. Dinner is a turkey bone broth with chunky vegetables and the turkey meat I cleaned off the bone when I made my bone broth. That will be dinner.
When making these soups, I have about 26-28 cups of soup. I used my 8 qt instant pot and it was almost to the 16 cup on the beef soup and about 12 cup mark on the turkey. Looking forward to trying them both tomorrow.
This is also week 8 of the Winter 5% Challenge. I am hoping this will bring me down to my 5% goal. We'll see on Saturday. We will be taking a short break before the Spring Challenge begins.
