Homemade Chicken Broth

Yes. Yesterday was a strange day, so I used the rest of the roasted chicken to make broth in my crockpot. Since I had started late, I let it cool a bit during dinner, then refrigerated it overnight. I have been making broth most of my life, so I was surprised to find a crockpot full of jelled chicken this morning with a thin layer of fat on top. So I scraped the fat off, remembering fondly that me gramma referred to it as “precious schmaltz.”
Chicken salad for dinner tonight.
