salad eating every day is hard

Tuesday, June 30, 2020

I've been trying to eat a salad every day, but have fallen short of doing it :-( I've. not been able to keep up with this goal, usually because I'm out of lettuce, or spinach. But I will keep trying.

Buying the right amount of perishables for daily salads is a learnable skill. It takes practice and needs to be adjusted seasonally. Before our Work From Home mandate, I mastered 5 satisfying salad lunches per week without ever running to the market mid-week. Just stick with it and consider it a work in progress. Progress not perfection!

Do the best you can. You don't always need the greens. Make it a cucumber salad or a fruit salad until you get the greens. Your salad bowl is your masterpiece.

Dont know if this works for you, but I buy pre-made salad bowls when they are on sale. They are just enough for one meal and no waste. It can be a little bit pricey, but when I compared it to buying the ingredients and wasting them because I didn't have a salad for a couple of days, it was worth it. If you are not the only one that says salads, this may not work as well for you, but it's a suggestion.
