Cooking Again

Recently I've gotten back into looking for interesting and healthy recipes and what a treat! Last week I found something on food network, healthy sheet pan shrimp and greens which was so easy and so delicious:

Yesterday I made something from the New York Times, Farro Risotto with Sweet Corn and Tomatoes. It was time consuming but what else am I doing around 5? We've been getting really good corn and Whole Foods has amazingly good tomatoes so it was a real hit.


Last night I went through the Times to find some other recipes and have a few lined up. Will try chicken thighs w/peaches on Thursday.

For all that isn't going well in this world, we have been pleasantly surprised at the quality of the fruits and veggies. Everything has been perfect and delicious so am looking for recipes that showcase the freggies.

    Yum, Martha. I often copy the NYTimes recipes, am eager tot try the sheet pan feta and roasted veggies they offered last week.
    Sorry to hear that you suffered some storm damage; we ended up with only an hour of moderate rain yesterday morning as the storm stayed well to the west in NewBrunswick and Quebec. No doubt our turn will come.

    The recipes look great and I think I'll give one a try. Also, I think that would be a different combination of chicken thighs and peaches. Would like to know how it turns out.

    The shrimp recipe looks great -- I can't get into the NYTimes (sometimes I can, sometimes I can't, totally unpredictable up here in the wilds of Canada) but I get the idea -- and have never cooked farro as a "risotto" so that should be interesting!!

    Yes, love the fresh fresh corn and beefstake tomatoes and peaches at this time of the year! Basil and mint fresh from my garden!!

    The recipes sound really good. Have gotten some fresh veggies from a couple of farm stands. I refuse to go inside a brick and mortar store, so not as many choices. Thanks for sharing the links.

    Oh, chicken thighs w/peaches, that sounds delicious! Chicken stir fry (emphasis on the veggies) is on the menu for tonight. DH's favorite.
