Recently I've gotten back into looking for interesting and healthy recipes and what a treat! Last week I found something on food network, healthy sheet pan shrimp and greens which was so easy and so delicious:
Yesterday I made something from the New York Times, Farro Risotto with Sweet Corn and Tomatoes. It was time consuming but what else am I doing around 5? We've been getting really good corn and Whole Foods has amazingly good tomatoes so it was a real hit.
Last night I went through the Times to find some other recipes and have a few lined up. Will try chicken thighs w/peaches on Thursday.
For all that isn't going well in this world, we have been pleasantly surprised at the quality of the fruits and veggies. Everything has been perfect and delicious so am looking for recipes that showcase the freggies.
