Do You Know The Recipe For Potato Chip Cookies?

Hello Sparkpeople,

Years ago, I had a recipe for potato chip cookies. I made the recipe twice and totally loved the cookies. Well, I placed the recipe away so as not to lose.

Now I cannot find the recipe! I did not memorize the recipe either.

I have searched online everywhere. No success.

If you know the recipe, would you kindly share?

    Thank you for the reminder today for me to look for the recipe again. I had searched through my old recipes last week that I had written on index cards, and I didn't find one. Then I got distracted and forgot to keep looking.

    Tonight I went through the indexes in the back of my cookbooks, and after looking through about 15 or so of them, I found the recipe in a cookbook by the members and friends of one of the churches in my hometown. Imagine my surprise when I turned to the recipe and saw that it had been submitted by one of my best friends, a classmate all through my school years, and we still text each other every week! How great is that?!

    My friend Dotty's recipe is very similar to the one that your SparkFriend KateBug-37 posted before this. My friend used margarine in her recipe, instead of the butter, and her recipe says, "Drop dough by well-rounded teaspoons" and "Sift powdered sugar on tops as they are removed from the oven." (There was no set amount of powdered sugar listed.) Other than that, they are the very same ingredients and directions that KateBug-37 found.

    My mother-in-law used to always tell me to put the dough in the refrigerator for a little while before forming the balls or dropping by teaspoons onto the sheet so that the cookies would come out rounder when they bake.If you don't use parchment paper to line it, you should probably lightly grease your baking sheet.

    I know that I have also eaten this potato chip cookie with some chocolate chips in it. So you might try throwing in some chocolate chips sometime for a variation.

    This is one I found ... I "think" it's similar to what I've had in the past (but it's been decades haha!)

    2 cups softened butter
    1 cup white sugar
    1 tsp vanilla extract
    3 1/2 cups ap flour
    1 1/2 cups crushed salted potato chips

    Pre-heat oven to 350F - line baking sheets with parchment
    Beat butter, sugar and vanilla until creamy - add flour slowly to combine - gently fold in potato chips
    Drop batter on baking sheet & bake until edges are golden about 15 min.
    Remove immediately and cool on wire rack!

    I remember hearing about potato chip cookies years ago, but I don't think I have the recipe. I will look tomorrow, though!
