Need to Track: Leftovers

I had these soy crumbles in the fridge for a few days and needed to use them up. So I diced up some red bell Pepper and little bit of green onion. Cooked them up in a little olive oil and sprinkled some cumin in with it.

Then I was thinking that it was still missing something so I added some Mexican cheese on top.

Now to figure out how to put that into my nutrition tracker. It tasted pretty good and I have enough for later tonight after work if I am hungry then. I will track that after I watch an episode of "CHOPPED". I have missed this show for the last few weeks.
