Haven't had it yet but it's in the crock pot as I type: the recipe is called Mexican Supper in a Crock (LOL) from he Fix-It and Forget-It New Cookbook by Phyllis Good. It's got brown rice, chicken, black beans, red and green peppers, onions, garlic, tomatoes and spices all mixed together. I'm excited to try it!
