I think it will be Buddha bowls (veggie bowls, whatever you want to call it). I'll make it similar to the ones DD made when we visited. They are very busy and use Hello Fresh service and I really liked the recipes. While it is a good service for busy people, I'd never use it because these packaged dinners cost as much as 3x the cost of buying the ingredients yourself.
Anyhoo, our bowls will include rice, barbecued mushrooms, Green beans, Corn, cucumbers and lettuce. The dressings are lemon or lime "Crema" which I will make using plant based yogurt, and a homemade hummus with smoked paprika (hope I still have some). I don't have the fresh dill, unfortunately, but will put some dried dill on it.
The hello fresh version had roasted cherry tomatoes and squash in place of my barbecued mushrooms and green beans.
