Considering the goals you mentioned, have you ever looked into joining a CSA?

"Has anyone tried the boxed meals such as Blue Apron, Freshly, etc?"
Yep.

Decide what you want first.
Some supply all the ingredients and you assemble and cook them. This can be nice as you don't need to purchase a variety of ingredients you may not use again. Also, you can get new ideas and cooking experience.

Some, like freshly, supply assembled meals you heat to eat. This can be nice, especially for people who eat lunch at work. But they have a shelf life you have to be aware of.

Realistically decide how often you want the meals. We found that two meals for each of us every other week works well. But we tire of them after 4 or so rotations, then cancel. Then we try something else in a few months.

They are pricey, but I find they are healthier and more convenient than eating out.
Scratch cooking at home is still the most cost effective!

I've used both Hello Fresh and Blue Apron in the past. I enjoyed both. They are pricey, but you pay for quality and convenience. The instructions were top notch with both services. The ingredients were good and healthy! I liked that you could NOT USE the salt they suggested, or as much oil ...

My biggest concern was the amount of packaging, but I think they finally amended that and use recyclable materials.

I would use them again, but I'm single and found even the minimum weekly order to be too much for just me.

I haven't due to being single and the high cost. I have a friend who has tried it and she likes it but she lives in an apartment complex so the delivery was poor; that wasn't due to whatever subscription service of course but she had to get a lot of refunds because she never got a few deliveries.

I have friends who used to use it regularly and liked it. But due to the cost, they opted to use it only once or twice a week and they find those days to be a nice break from needing to plan and shop for dinner.

Has anyone tried the boxed meals such as Blue Apron, Freshly, etc? What are your thoughts on them? We are considering trying them since it is just my husband and I and we are trying to eat more variety and healthier.
