There is nothing necessarily unhealthy about pudding and mashed potatoes. If anything, make your own; the pudding from a box isn't necessarily the best choice.

Have you tried mashed cauliflower or a mixed version including potatoes and cauloflower? It's yummy either way.

Do you like Ethiopian food? Injera is a really soft flatbread that is served with other dishes like stews and curries on top (so most of the vegetables and such are fairly well cooked).
Speaking of curries and stews you have a lot of options there as well. Some Indian recipes could be to your liking.

You can make mousse with tofu (soft tofu, not firm tofu) or avocado. Banana can be frozen and whipped up. Braised cabbage is tasty with something like five spice.

Soft suggestions I found helpful when I had to be on a soft diet: steamed veggies, boneless white fish steamed, green smoothies, plain greek yogurt, eggs, avocado, pureed soups.

What reason are soft foods being used? (there are various health reasons)

Mashed potato isn't normally a problem. It is lots of vitamins, fibre, etc. You could add some cheese to it, and finely chopped parsley, or you could add a raw egg into very hot mashed potato and mix it up with stuff. That will give it more balance and reduce the % of carbs if that is a problem.

* Mashed Banana
* Stewed Apple
* Canned Peaches
* Flaked Rice cooked with mashed banana and dried dates and milk/milk alternative
* Well-cooked (in some water) ground beef with grated veggies and lentils or mushed up chickpeas
* Custard with stewed fruit
* Pureed soup using any meat or veggie that you would have eaten on a plate (not bowl)

When I was a cook in a Rest Home, people who were unable to chew or who had swallowing issues, I used to put all their veggies and tender meat/gravy through a fine muli, each separately, and then plated it like I would have for the others, so they had things separately. That way it is much more appetizing than everything mixed together all the time.
