Welcome aboard Rodger,
I wish you success with your new diet.(just remember the Vitamin B12)
In our household we make both Kefir and Kombucha
We have each other Christmas presents to also start making Kimchi.

I would be very interested to here of your experiences and techniques.
Perhaps in the future you may consider making water Kefir too

My name is Rodger. I am a 56 year old, obese man. I am going vegan on January 30, 2017. I love kombucha. I also do other ferments, I love kraut, kimchi, and in the past have made milk kefir, and yogurt. I will no longer be consuming any meat, poultry, fish, egg, dairy, or any animal based food. I do plan on continuing to ferment. I am excited to try new ferments that will fit in and enhance my new whole plant based diet. I drink I bottle of kombucha a day, and feel awful if I miss a day. I hope that I can gain some friends and information from this group and it's members.
