Last night's dinner and today's lunch was this DELICIOUS and easy tomato soup (
nute-tomato-bisque-soup/) with half a panini and a side of veggies. It actually took 30 minutes - the longest part was chopping an onion and then letting things simmer for 15 minutes. You could easily forgo the cream for an even lighter option but it was honestly so good. The only thing I would have changed would be to put less orange juice (it may sound odd but it's a perfect subtle flavor for tomato soup. Squeezed fresh is best!). I encourage you to try it with a panini or a side of whole wheat toast or maybe some baked sweet potatoes. All pretty easy!Hope this helps :)

I am new here also. This evenings supper was a combo of our gardens veggies. I told my husband I wanted everything that was sitting on our counter waiting for something to happen for it to be chopped up and put in a stir fry. Started with a little olive oil and added whatever veggie should take the longest to cook (carrots this time) and shortly thereafter add the other veggies. We had yellow squash, onion, celery, carrots, tomato and put a dash of garlic and salt and pepper to taste, stir often. Didn't take long and supper was on the table. Low calorie and Delish! No carbs and if you go easy on the oil, you don't have to count or measure anything. Good luck!

Hi, everyone,

I just found this team! I am a novice cook - only know the basics. My husband is diabetic, allergic to seafood and a picky eater. He loves comfort food so any easy, healthy recipes would be appreciated.
