Higher level math wasn't my best either... Almost flunk Geometry in HS. Had to take a math college course --- can't remember what it was probably Geometry.. Never ever took Physics. I graduate HS in '77. Anyway I did CLEP most of my other college courses in '94 and the only one I did not do so I could get my Associates in my field (Air Force) was Speech. i retired from Air Force in '95. Kinda wish I had attempted that Speech course. Oh well.

as a baker It helps you to have a sensitive palate. As a mathematician (Bachelor of Science in Mathematical Physics) I have a sensitivity for proofs, and errors in proofs.

Consider this:
Let x=y

Multiply both sides by x
x*x = x*y

Subtract y*y from both sides:
x*x - y*y = x*y - y*y

Now x*x - y*y can be factored as (x+y)*(x-y)
(x+y)*(x-y) = x*y - y*y

And the right side can be factored too:
(x+y)*(x-y) = y*(x-y)

Dropping the common factor of (x-y) on both sides:
x+y = y
And since x=y
y + y = y
So
2y = y
and dropping the common y on both sides:
2 = 1

So is there an error in the proof, or does 2 equal 1? Or equivalently, does mashed cauliflower taste like mashed potatoes?

lol i have one of those palates that can taste subtle stuff. its a curse i tell ya.
i had someone try to pass mashed cauliflower off as mashed potatos..i took a bite said REALLY??? they laughed..were trying to trick me. I dont care for them. its possible if i could train my brain to think of them as just mashed cauli instead of a replacement for potatos i could deal with it...
at thanksgiving i was trying to find a replacement for everything. i saw a tray..very small, either green giant or birds eye. it was a mashed cauli casserole..the outside said you may never go back to high carb mashed potatos again!!! \$6 for this tray with i think 4 half cup servings. said butter, cheese, cream..and pretty low in carbs. i baked it..it got that lovely browned top..i was so looking forward to it!! one bite..ugh. my mom tried it and LOVED it..and promptly plopped a spoonful on my stepdads plate. he took a bite..the look on his face was priceless...
my mom took the little tray home (better than tossing \$6 worth) with the caveat that she not make him eat any of "that slop" lol
i want so badly to like it....i keep trying and will continue to...i know many, many who love it!!!

If you want sandwiches, look up the recipe for oopsie bread or other keto breads. I like them a lot and a hamburger tastes better with oopsie bread then eating it with a fork and knife. Mission brand tortillas labled "carb balance" are low in net carbs and taste good. I use them instead of bread also.
If your husband won't give up Pepsi, try to get him to delete one serving a day. try tea or coffee instead so he can replace the caffeine. After a while, he will stop missing the pop and can then delete one more serving per day. If not, have him try the sugar free version. I always hated diet coke but found that a wedge of lemon in it hid the bitterness and made it more palatable. Maybe your hubby could try the diet drink with no calorie flavor additives.

I like to add a bit of sharp cheddar to my mashed cauliflower along with butter, cream and sour cream. I find that cauliflower has a slight funk to it and the cheese really plays well with the flavors. It's been a great replacement to mashed potatoes which I love and tend to eat way too much of

Sorry I was confusing there. I really like the mashed cauliflower. I put butter and cream in it as well and I like that I don't feel guilty eating it. Hubby didn't really care for the mashed cauliflower though.

well cooked, mashed cauliflower, with whipping cream in it, and spices actually tastes better to me than mashed potatoes.

A friend of mine once ate the mashed cauliflower at my house. It was a buffet. One bowl was mashed potatoes, one was mashed cauliflower. He told me he didn't like cauliflower and was going to take the mashed potatoes. But he made a mistake, and during the meal told me how good the mashed potatoes were. From the missing garnish on top I could tell he was eating the mashed cauliflower. I pointed it out.

So keep an open mind to what tastes good.

Thank you all for the friendly welcome. I've already started doing some things separately at meal time for my hubby. Last night we had fish tacos but I used lettuce to wrap mine while he used a tortilla at 30 carbs each. He had 4 wraps so that was 120 carbs for him!! That is crazy! I know he will never ever switch to diet pop but he is at least talking about cutting down so that is a start. When I realized my blood sugar was out of control at the beginning of January (Jan 3rd to be exact), I gave up pop completely cold turkey! I feel like an addict almost because I count the days and can tell you how many days I've been "pop free". I guess, really I was/am an addict but my drug is sugar/carbs. I'm hoping that I will do well with this WOE and have him be jealous enough of my progress to make the change too.

I do very little meat that has breading on it of any sort so that is helpful. I've already tried the mashed cauliflower instead of potatoes and I like it. He isn't as keen so he'll continue to get potatoes. We'll see what happens.

I was reading JIMK 1980'a post about what to eat for work and was thankful to see NIGHTSTARSKY's suggestions. I work 12 hour shifts that rotate between 7am-7pm or 7pm - 7am so I'm trying to find things that are not sandwiches for work. I do have access to a fridge now so that helps. We finally got one in the shop that I work in (I work at a Michelin plant) but I don't always have access to a microwave so I have to plan accordingly.

I'm doing ok so far today and all my numbers are still in check so that is good. Have a great day everyone.

welcome.

If your husband doesn't also eat Keto, but you are going to, that I suggest that for cooking you don't make dishes that mix carb high things with non-carbs. For example, if you make a meat, don't put a bread coating on the outside.

Make everything Keto except on item on the table. Maybe mashed potatoes all on their own.

P.S. On drinking Pepsi, or any soft drink, that is like eating pure sugar. I don't have any answer on that. I do drink the occasional diet cola, or similar, but never the real thing. Can he switch to diet pepsi?

questions are good!!

I woke up october 29th and just said ok today is it. i literally said i'm giving this till thanksgiving then i'm done. i was mad at myself for not eating the halloween candy first or making cookies and eating them all. one week in i was no longer wanting anything not on plan, and by thanksgiving i had found substitutions for almost everything for Thanksgiving dinner.. I've not looked back..you can do this!!!

There's alot of good links in the forums too in this group and some of the other groups that several us are in too.

Take your time. I started a few years ago with eating Paleo/Ancestral (for 6 months) WOE til I found KETO and that helped me besides following links (and bookmarking) in forums. I got rid of many things like processed dinner mixes, sugar free item. I restocked my frig with butter, real sour cream, bacon, sausage, low carb vegetables, etc.. Cooking with bacon fat, chicken fat, olive oil, coconut oil, butter.

It takes practice and I am learning everyday

You have an excellent reason to do keto. James is a good example of how the keto diet has controlled his blood sugar, but of course, whatever the reason... the keto WOE is the same. Feel free to ask questions. We are here for support.

My guy is a pepsiholic, too...but at least he switched to diet many years ago.
Still not healthy, but...and he is getting fatter and fatter over the years.
I cook only low carb and if he wants a starch he needs to buy it and cook it himself.
Same with sweets, crackers, etc.

Thank you. I will. I have to figure out how to cook for myself in a way that won't cause my husband to gain more weight. He won't come to the Keto side with me because he as a Pepsi addiction. He complained to me yesterday that he's never weighed this much before but he will not give up the pop.

I've been following some Keto boards on facebook and I joined this one a short time ago and have been just watching and trying to get information together and I kept telling myself that I should be doing this. Today is the day. I've finally decided to do this. I've been a type 2 diabetic for going on 10 years but I really haven't taken it seriously. I know how horrible that is because my Dad is type 1. In January my doctor put me on medication (I was diet controlled before even though there was nothing about my diet that I would call controlled). Yesterday the doctor upped the medication because my sugar still wasn't coming down. I have to get this under control and I've decided not to put this off any longer. I will likely ask a lot of questions so be patient with me please :)
