I think I originally got this from one of Neelam Batra's Indian cookbooks, and I don't really measure things anymore, but here's my best guess at it and next time I make it I'll pay attention to quantities and timings:

Warm a tablespoon or two of oil over a medium flame and add three to five cloves, a couple cardamom pods, a cinnamon stick, and an anise star. Cook "until fragrant" - which is to say until your kitchen starts to smell like the spices but well before it buns. The cinnamon stick will start to unfurl itself. Add a cup or two of rice and stir to coat. Add twice as much water as rice. Add salt to taste. Cover and bring to a full rolling boil. Turn down to a bare simmer and cook until the rice is done, or if it's a heavy enough pot (like cast iron) just turn the heat off. Fluff with a fork when ready to serve. If you have a rice cooker, you can toast the spices in oil and then add everything to the rice cooker and it will finish it perfectly.

Share the recipe for the brown rice with the cardamoms. That sounds interesting. I have liked everything that I have used this spice

I like brown rice, but it's what I grew up eating. I also tend to make cardamom rice, so the flavor is more from the spices than the rice, but brown rice certainly has a very different consistency than any white rice. It's sorta the opposite of sticky rice. Glad you're enjoying the Carolina golden rice. emoticon

I have not found a brown rice that I like. Most of it has a taste I do not like. I use regular white but have received a Carolina golden rice and it is a lovely old rice that is great tasting. My niece sent it to me for Christmas, a 2 pound bag. This rice is about 14 a pound, but oh so good.

Oh, WHITEANGEL, I am with you about tasting the box. And I too love gumbo. Do you like brown rice, or you're just trying to limit rice either way?

Annette, I totally empathize about how different your body feels when the water supports a bunch of your weight. I love camping and backpacking and my first trip after I got to my goal weight, I was thinking on every climb how heavy my 35 pound pack felt, and how I used to carry that much extra weight with me every day, everywhere I went.

Enjoy those water-walks!!!

Welcome to the team. Once you get on the bandwagon of eating real foods, you will begin to feel so much better. Hubby and I gave up so much several years ago and we fill so much better. He lost 56 pounds when we changed, of course it took me longer. We gave up all processed or prepackaged foods. I laugh now if we go somewhere and they are using prepackaged, I remark I can taste the box. Which I can. We limit all white foods. If we have potatoes this week, we will not have other. The next week we may have rice one day and then the next week a pasta dish. I only purchase potatoes as needed. If my recipe calls for 2 I go by the store ond purchase only that amount as if I have a bag there I will sue them before they go bad. We limit our bread. I do not waste my intake on poor quality bed. I go to the bakery and purchase the amount we need for a meal. Our meals are planned for the week and this week I am making a gumbo, so it is a rice week.

You know I really love the water, it feels so freeing! Of course I am very heavy, the burden on my knees is extreme! It was so nice the first time I got in the water, it took the burden off of my knees, it was great too move freely without the pain. I really realized how much strain was on my knees when I started out of the pool, going up the stairs.I know I have to lose weight, I want my life back.

Rebecca Thank you for the welcome! emoticon Actually I have never had a cycle emoticon , but I have always loved to ride them. I don't swim to much but go to the Kroc center and really have enjoyed walking in the river walk, I have a pic of it on my page. I don't know if you are familiar with what it is? It has a current and you can walk emoticon with the current or against it. The pic of the bird was on the web, have no idea where it is from

Hi I'm from Idaho. I have found out, by listening to what my body is telling me, that I feel so much better when I eat whole foods. Leaving the white sugar, flour, fast food, processed, and artificial sweeteners alone! That's why I am here, I need to work much harder on eating the right foods & leave the other foods alone.

A little bit of dark chocolate a day doesn't bother me, but just like most sweets, sometimes I lose control and eat way to much!

I have several health issues, weight of course, diabetes, arthritis, bad knees, and have become very sedimentary.

I want to lose weight, but I know I have to make up my mind and make right choices. I look forward to getting to know the team!
