I am sorry for my absence... I was on vacation for a week and got absolutely overwhelmed when we returned. Not getting notifications is really making it hard to stay informed now! This teaches me a lesson.

I will start another challenge for the last half of february.

You all did great with the salads! Very well done!

And thank you REJ for the perspective on the green smoothies.

I too loved it- sorry I did not weigh in every day. Because I did actually have one every day and I really think the challenge helped.

We do what we can here- even if it is quiet I still feel support...lol..we have lives outside sparkyland..and so.. I do enjoy our Eat to lIve family! emoticon

Greens sound good- maybe for March?

I feel February is going by so fast!

I enjoyed the "Eat Your Salad" challenge. Thank you White/Green.

My salad today was romaine lettuce, mixed greens, onion and beans with an avocado dressing.

Maybe future challenges can be more general, like: Did you eat your greens (or mushrooms, or beans, etc.) today? That way, no matter how the foods are consumed (salad or smoothie) won't disqualify anyone. I don't like to drink my greens, I like to eat them. So if we had a smoothie challenge, I wouldn't do very well at all!

Hi White/Green: Enjoy your green smoothies! I imagine that these challenges are meant to help and encourage us, not weigh us down or discourage us. Yeah for green smoothies!

Maybe our next challenge should be something about soups rather than salads? It may not have been the best time of year for a salad challenge. LOL

I splurged today and had a slaw made of Chinese cabbage, purple cabbage, onion and tomato served with a homemade cashew mayonnaise sprinkled with hemp seeds. I say "splurged" because Chinese cabbage is quite expensive around here.

I am not doing so well. Something in me is resisting the idea of eating salads when it's the coldest time of the year...
I do have a green smoothie every day but... that's not a real salad is it... And I eat 3 servings of raw vegetables each day, beside my cooked veggies.

I'm here salad heads!!
And have been enjoying the salads!
I have avocado again for it which I love as a dressing- cut up about 1/3- I give DH the bigger half which is more like 2/3 and then I have some fig vinegar I got from the store I sprinkle in

Haven't had a salad in the past days but eating raw vegetables for lunch daily. Cucumber, bell peppers, carrots. I find it easier to just clean and cut those than to make a whole salad. I get in some leafy greens with my smoothie in the morning....

Everyone is doing very well!

I ended up eating a salad on Friday after all, and I had a salad yesterday; with iceberg lettuce, lentils, string beans and (sorry dr. Fuhrman) a little mayonaise, and herbs.

Here's the challenge for the rest of January, that's another 23 days: eat your salad for at least 4 times per week!

Post HERE on this thread, when you've eaten a salad that day.

After you've eaten a big salad the way Joel Fuhrman wants us to, for 4 days in one week, let me know (send me a sparkmail) and I will reward it with a row of vegetables - something like this:
