How nice that you met the goal of the food prep, REJ!
I think you can add just about all kinds of vegetables to salads?
Or you can throw greens in with soup or stew, at the very end so they will only wilt but not really cook. I believe Dr. Fuhrman gave that advice in one of his books, somewhere....

A friend of mine has weekly deliveries of organic vegetables and she shares the contents (and the costs) with her neighbour.

Eating out sure can be a challenge, Em. It's a good thing you eat so well when you eat at home!

I've been doing lots of food prep this month, which was my goal, so I'm pretty happy about that. I'm not sure I will continue with the bi-weekly vegetable deliveries. Not because they're not delicious and nutritious, but because I'm eating fewer greens. If I want to eat all my veggies while they're fresh, I have to consume veggies that don't necessarily go into a salad. As I write this, I'm thinking maybe they CAN be added to a salad. Anyway, I don't want to waste anything, and I don't want to diminish my consumption of greens. My BIG daily salad is a big part of my routine, also I'm pretty good at getting my daily my GBOMBS.

My goal this month: food prepping. I purchased a large bag of tomatoes on sale yesterday, so I made 3 jars of salsa. It's the first time I make salsa from scratch. I also picked up my bi-weekly vegetables from the organic farm yesterday. So I'm not done with today's prepping. This is such a great time of year to be a nutritarian because of the abundance of harvest time! emoticon emoticon emoticon

My goal for the month is to keep up with my food prep, which I have been doing, whether it's cooked beans, chopped veggies in the refrigerator, or homemade vegetable broth. My cheap blender (with which I made almond milk) gave out about 3 weeks ago. I treated myself to a more powerful blender. It's nothing like a Vitamix, but it's got a 1200-watt motor and I picked it up at half-price. I'll be making some nut milk with it tomorrow (almonds are soaking), so I'm looking forward to seeing how well it works. emoticon

1 serving of beans or more: goal met both times, I am trying to eat more beans.
2 servings raw greens: goal met both times, made big salads for lunch and had my usual green smoothies.
3 servings of fruit: no problem!
4. sugar free and gluten free: yes, both days.

I got behind... Will have to see tomorrow if I can catch up, I do write down what I eat every day. I haven't eaten any foods with refined sugars in them since the last time I posted, I know that much!

It's fun that you can house hunt while taking your walks/runs, Em!

I see you've added limiting sugar to your goals, White. I know that's a challenging one for you and I wish you well! emoticon

I'm doing well with my food prep. This is such a great time of year to feast on an abundance of fresh vegetables and fruits! I'm enjoying the semi-weekly deliveries from the local family farm I've subscribed to. emoticon

I have been keeping it simple-
have to as I continue to bag and toss it out
House hunting continues
Jut had 2 serious considerations but I am being very careful and scotuing around- sometimes literally as I include the location very often as part of my walk/run/bike

I'm doing well with my food prep. My fridge is filled with chopped veggies and cooked beans. I can quickly and easily put together a nutritarian meal in just a few minutes, which is what I'm aiming for. emoticon

I did a lot of food prep yesterday. Large bean stew, salad dressing, cutting up fresh veggies, etc. It takes time and energy to prepare nutritious foods, but it's worth the investment! emoticon

I'm in!

Mine is keeping it simple. I did back out of a sale- we are looking and the location was great but i had huge misgivings about the house- so anyhow..I need to keep my cooking simple.
Batch cook beans
Have beans and greens/cooked veg and grains

I will get back to lentil loaf etc..when we move into our house!

On the eating end, I am really doing fabulous with eating lots of veggies every day.

I will work on cutting carbs like Crunchmaster crackers to only 1 serving a day. And, realistically--being summer, I may increase my meat eating to 1 time per week, but no more. I will also increase my fruits to 2 per day -- I have slacked on those, since I tired of smoothies.

What I'm working on this month is better food preparation. Today I will be making Em's delicious vegan mayo. If I don't have chopped veggies and other prepared foods in the fridge, I'm more tempted to eat what I shouldn't. I'll be getting my bi-weekly veggie delivery today, so it's a great opportunity to work on my prepping. emoticon
