I'm interested in trying new veggies too. I love fresh fruit, so snacking on fruit is not a problem for me. I'm thinking about trying veggie kabobs the next time I grill.

Putting them into smoothies sometimes helps. I have a much easier time with spinach that way.

Have you tried any of the V-8 Fusion or V-8 Splash flavors? Sparkpeople doesn't approve of drinking one's calories, but if that's the only way you can get your fruits and veggies, you do what you can, and there's at least a few people on the Yahoo Groups Picky Eating Adults mailing list who find that V-8 fruit and vegetable drinks work for them.

What are some of the creative ways that you have added fruits and vegetables to your diet? I have heard about pureeing veggies and adding them to your soup stock or sauces. Some of them I just do not like the texture of but I know that I need them to fuel my body. Just searching for new ideas...
