Your salads sound great, but you are going to be one busy lady! Quite a variety for just 14 people, but if you are having them as a main meal, they should work well.
Let us know how that ice cream turns out.
I have bought so many peaches this season and all have been delicious. Had about 6 or 7 left and last night I peeled and sliced them into pie dish and stuck in freezer so later I will add blueberries and streusel topping for a crisp. Probably make that one gluten free for kids.
Our grandson leaves for Clemson on Monday and I just decided I had better make up some gluten free oatmeal chocolate chip cookies to send with him.
His brother turns 13 and wants gluten free - dairy free ice cream cake so I have a challenge before me this week-end.

Carol, that salad sounds beautiful, but no, I am not doing that one. I am making a SP Broccoli Salad, an Antipasto Salad, Caesar Salad, Orzo with Spinach and Tomatoes, Taco Salad, and Pepper & Olive Rice, My co-hostess is bringing rolls and beverages and is making some tea cookies to go with that home-made peach ice cream that's in my garage freezer. (I am ignoring the fact that it is calling my name!!) We have several ladies that have issues with raw onions so only two of the salads have onions in them. We only have 14 attendees. Most times we have in the mid twenties, but the summer dates are not well attended because of folks traveling and having out of town guests visiting. I had several other recipes lined up depending on the numbers, but I think this will be enough for the numbers we have. It's a nice mix of main and side dishes. I am going to try to get everything made on Sunday. My next door neighbor is going to be out of town and she told me I could use her fridge if I needed an annex! So handy to have nice neighbors!

Oh, MaryEllen, are you doing what I call the Red, White, and Blue Salad? Everyone loves it! Our DIL has house guests from Calif. this week-end and she is making that salad. (at my suggestion)
I use a platter (or tray for large crowd), cover with cut romaine or spinach, red onion rings, sliced strawberries, fresh red raspberries and blueberries, sprinkle with Feta cheese and drizzle raspberry vinaigrette over it. Even kids love it and there are no leftovers!

Good Friday Morning!

Yesterday at this time I was still in my jammies. Today I am up, showered, stretched, and ready to go. I've taken care of 3 calls I needed to make and re-faxed some information that apparently did not make it to my Credit Union last week. I got my tax bill last week and almost swallowed my tongue! It is 3X higher than the house in Holly Springs! I need to start incorporating that into my monthly mortgage payments.I hope they can do that. Not sure I am disciplined enough to set money aside like that every month.

This Monday I am hosting our monthly Singles get together. I decided on a beach theme and will be doing a variety of salads. I need to shop for all those ingredients I don't normally have on hand today. I also need to run up to Costco and have my new glasses maneuvered so I can actually read without sticking my head out like a turtle! emoticon

Good Morning Team! TGIF!!

I am moving a little slow this morning. Yesterday was a very busy day for me.

I got out early for my 6+ Mile Run after warming up to some Express Cardio Workouts.
Later, I took my mother to her Aquatic Physical Therapy for her gym workout. They worked her out hard too. I love taking her to this place. I will try helping her with some of her stretches, especially on her legs. When she stands, she can not straighten her knees. Too much sitting in her wheel chair.

I read all your chat's from yesterday, sounds like you all have some wonderful plans coming up. Thanks for sharing!
