New Year's Eve and DH and I are "home alone". Wished our kids and my sister a Happy New Year and probably none of us will stay up to greet 2015. Been there, done that!
Party and dance is 6 doors from us - in Clubhouse, but we opted to stay home.
One of my goals for the new year is to try to get to bed early and get 8+ hrs. sleep. I am nolt very good at "sleeping in".
HAPPY NEW YEAR TO ALL MY RALEIGH TEAMMATES!!!

Good Morning!!

Yikes, it is after 10 am. I am real slow this morning. Woke after 8 am and just finished my 60 minute Hard Core Workout. This is the last day of my 60 day challenge. Monday I start a Quick Fit System Challenge which works well with my Running. Training for April Half Marathon. We shall see how I endure winter training!!

Wishing You All a Happy Healthy and Safe New Years!

I may put up the January thread later today just in case I am real late in the morning!!

Hello all!

I've had kind of a lazy day today. Slept till almost 9am. These rainy overcast days sure lend themselves to sleeping in! The guy came today to look at the treadmill. It does weird things, like suddenly stopping in the middle of a workout. He could find nothing wrong with it. I bought it in 2002, so it's 12 years old. We figure since it still works, just acts up sometimes I should just use it till it dies and then decide what to do. Probably replace it. If we replace the motor, which we aren't sure is the problem, then the console could give out the next day and they no longer make parts for that. He'd be dependent on getting it on EBay or something. I'll just use it till it gives out entirely and go from there. My friend Donna and her family came over for/with Christmas gifts. They got a large tin of cookies (only on of three big ones) and thankfully took every last cookie I still had left home with them! They stayed for early dinner, so we got in a pizza. About 10 minutes after they left I realized that the youngest had left the book I gave her. Her dad had been reading it and put in on the floor next to the couch. I sent a text and she will meet me in Fuquay tomorrow when I go to get my hair cut, to get the book. AND, she is getting a bonus of all the candy I have left! Removal of temptation works for me!

About the GF makeovers. Unless the recipe calls for SWEETENED condensed, they usually refer to the other stuff as Evaporated or Condensed. Big difference, I agree, but it sounded like Sharon's recipe called for the evaporated kind not the sweetened kind. They also make a fat free version of the SCM, and it actually has MORE calories than the original! I did some revising of recipes when I was on Atkins. Very difficult to do if you expect the same results. Baking is actually like chemistry. Change one thing and the entire product can fail miserably.

Tomorrow our Social Committee is having a gathering at the clubhouse and get this. They are going to move the clocks ahead 3 hours so everything will be done by 9pm!!! I may be old, but I can certainly stay up till midnight. Most nights I'm up that late anyway! We singles all agreed that we were going to remain after all those old folks hit the sack! Stay safe tomorrow if you venture out. And if you are driving, I do recommend that you get home before the clock strikes and celebrate in your own living room. The drunks out after midnight tomorrow are all amateurs! Happy New Year everyone!

Just wish I could get this hip and leg back in good shape so I could resume walking. Everytime I do water aerobics, I must overdo and the next day I am miserable. So I went back on the Flexeril today and hope that helps.
Sharon, is there a chance you are confusing evaporated milk with condensed? Could make one big difference.
We miss the kids and little lovable dog, but they are now at Lake House until Friday. They are leaving a day early to miss the rain and bad weather going back to OH.
We had sunny, cloudy, slightly rainy day and rather cool when we went out in golf cart in late afternoon. But now I need to turn on A/C
Last day of year tomorrow. Hard to believe, isn't it?

Good Morning!

I woke up late this morning but felt great to get a good night sleep! emoticon

My sinuses and head are feeling a lot of pressure, must be the rainy weather. Even my eyes feel bad. I took a sinus med and hopefully will feel a little better.

Carol, thanks for the tips on Gluten Free. I will find some smaller loaf pans and also I will use Arrowroot instead of baking powder. I saw if using Almond milk instead of condensed, to use 1/8 cup less liquid and 2 tbs. more of the corn starch which I will use arrow root instead.

My son goes back to FL later today. I am already feeling sad. I wish there was a way we could plan on getting down there for his birthday in February. My Best Damn Race was also deferred from last year to 2015 and would love to Run that with my FL Sunshine Running Buds. I miss them so much. We all met when I first moved to FL and our boys were just babies. We ran down Bayshore Drive with them in jogging strollers. Maintained friendship for over 20 years.

Please check the Wall Posts. It looks like we have a new team member that would love to get together for lunch and another who posts motivational quotes each day. I also have been trying to do that as a great way to start my day!

Got to get started with my exercise. Only two days left of my challenge before moving into 2015's challenge!!

Have a Great Day!

This is copied from 12/27 post.
Last night I typed long paragraph to Sharon, but got kicked off internet. Grrrr!
I would be very reluctant to alter GF recipes. Your Almond Milk would be very thin and watery compared to condensed milk which recipe called for. (I assume it meant sweetened, condensed milk) Also, GF recipes do take much longer to bake.
Another hint is to use two smaller pans rather than one bread pan. I never bake my nut breads in bread pans, but use the disposable aluminum pans that come in smaller sizes. If you want I will measure mine and let you know the sizes.
Remember: If at first you don't succeed, try, try again.
(But with GF, it is expensive)

Good Morning!

The rain woke me early this morning, 4:30 am so I am enjoying my coffee emoticon and reading Spark People emoticon . I have a double workout today on my challenge. Day 57/60. So looking forward in getting that done early too. My son heads back to FL Tuesday, so I want to spend all my time with him.

Carol, I am going to search again for your e-mail with those links. I thought I saved them on my favorites but could not find them. I did print out a couple of recipes, but want to keep those links for others. I think it is the rice flour that makes me retain water, when I make that pumpkin bread. I follow Low carb diet/ Paleo.. I am thinking of trying Pumpkin Cheesecake next.
I am ready to start some new goals for 2015 too..

Wishing all a Great Day and Week!

Good Morning! Happy Sunday!

Yesterday was a beautiful day here in NC. I actually pushed myself for a short run and later walked with my son and mother. It felt great to be outside getting our vitamin D!

Today is also predicted to be nice so I hope we can get out again before the rains come back with cold weather again. I want to spend every moment with my son before he heads back to FL. He wanted to be with his friends for New Years Eve.

I am on Day 56 of my 60 day challenge so in a bit will work on a quick cardio and then Core
& More.

Carol, I certainly miss my fresh citrus fruits from FL! I was growing Lemons, Pineapples and Grapefruit. I have some lemon trees and Pineapples that I am trying to grow here in NC in Pots. Right now they sit on my windowsill and doing real good.

Wishing all a Great Day!

Today we had light breakfast, then headed to orange grove where we first picked a whole box full of large avocados, then lemons, tangerines, oranges and grapefruits.
On way home we stopped at Publix and then at Flea Market for more produce.
4 tired people had a late lunch at home and then headed to swimming pool where we stayed until 5 PM.
Chuckie thinly sliced some of leftover prime rib, colored peppers, put his big black cast iron pan on hot grille, melted two kinds of cheese over the meat and peppers and served us excellent Philly Steak Sandwiches. Soooo good!
I put frozen Cherry Crumb Pie in oven and they can have dessert tonight - after Penn State won the exciting game!
We've done a lot of good eating and I can't believe I haven't gained weight. About 3 lbs. away from lowest weight! Talk later, Carol

Good Morning!

I woke up Bright and Early! I am enjoying my coffee and thinking of my plans for today. I am also thinking of 2015 Goals. I am still within my weight range but the couple of pounds I lost earlier in the week I gained back. I am thinking it is the Pumpkin Bread. I follow a low Carb diet and the All Purpose Gluten Free Flour is made of Rice Flour. I found another recipe using Almond Flour which might work better for me..

ME, thanks for sharing Prime Rib recipe. I never attempted to cook one before, so I just might try it.

We all plan to try to get out to the Lake this afternoon. My son and hubby want to fish and I want to walk, pushing mom in wheel chair. Looks like it will be another beautiful day!

Wishing all a Great Day!

Hi, Friends,
Thanks for recipe ME. I will print that out and keep it.
I do have two ovens in FL Park Model as I have nice sized convection oven in addition to stove oven. The convection oven is large, also a rotisserie, toaster, broiler, and a couple more things.
We did not have to season the prime rib as it came sealed with all the juices and seasonings already on it. If you are familiar with Gordon Food Services, you know they carry top quality foods and he got it there. He buys foods there often for catering.
Today we had reservations for lunch at the Jacaranda, an old hotel in Avon Park where the culinary students from nearby college man the restaurant. The buffet style lunch was very good but we went mainly to see the beautiful, ornate Christmas decorations throughout the old building which has operated both room rentals and restaurant continuously since 1926.
There was lovely arcade where art gallery was in one wing and we found that interesting. The "piano player" is a highlight also. He plays by ear and can play any song you request.
Got home, changed and went to pool for 1 1/2 hrs. where we socialized while exercising.
Little snacks constituted "dinner" and it looks as though everyone is retiring early - including me! Talk tomorrow, Carol

Good Morning all!

I also slept in today. Felt nice. Yesterday I went to Pat's house about 2pm. Got to see some old neighbors before I finally walked in her door. We had a nice dinner. She made an Eye of Round roast that was really delicious. Wish I had remembered my slicer like Carol's son did! I brought home a few slices for a sandwich myself! And speaking of roasts, Carol, next time you do a prime rib, try the following recipe. It gives you a perfectly wonderful Prime Rib. From the first time I made it like this till this very day, it is the only way I will make my PR. I've done it for company and family, and even just for me with a small one I've gotten on sale at Lowe's. It is absolutely delicious! As noted in the recipe unless you have double ovens that are well insulated, baked potatoes or anything requiring baking is out (toaster oven would work of course) I have a recipe that threads potatoes onto Rosemary stems that is really nice and goes on the grill. Of course that was when I was living in California and could grill virtually 365 days a year! Not so here in NC. Anyway, I'm sure you can find some way to do the potatoes that doesn't use an oven. Give it a try If you like it rare/Med rare, it really is a perfect Prime Rib!

Perfect Prime Rib
Ingredients
1 prime rib roast
This will produce a rare roast, just the way I like it! Since using the oven for the potatoes is out, this can be served with Garlic Roasted Potatoes on Rosemary Skewers that are cooked on the grill.
For a 3.5 lb roast use the following rub:
1 tsp. Rosemary, crushed
tsp. dried Thyme
2 cloves Garlic
tsp salt
tsp. pepper
Servings: 6
Reviews
***** stars - ME 1/21/1995
Directions

1. Bring roast to room temp, letting sit out about 4 hours. Preheat oven to 500. Season the roast as desired. Place in preheated oven for 5 minutes per pound. Turn off the oven. DO NOT OPEN THE DOOR! Let stand in the oven for 2 hours. Roast is ready to carve at end of 2 hours.

I was online a lot on Christmas Day but somehow missed posting on this thread!
We had a very low key day also. Our daughter had sent box with gifts for all 4 of us (5 counting the dog) and we opened gifts first. We don't usually buy gifts but this year I just happened to find some very appropriate items at moderate prices. (That's what happens when you go shopping alone and DH is not sitting in car waiting for you!)
DH was thrilled with the Civil War books I gave him and can't wait to start reading them. Daughter gave me a Family Tree book so my work is cut out for me, but will do much of it on return to Wake Forest where I have some pertinent information.
After hearty breakfast of Belgian Waffles, ham, strawberries (first of season) sliced with bananas, and more, the John Wayne Movie Marathon got the attention of the other three in house, so I had time to do as I pleased. (and that lasted until 11 PM and they missed the final one.
We had a delicious dinner of Prime Rib which son brought from OH and we roasted for 2 1/2 hrs. to temp between medium and medium rare. He even brought his slicer to slice what is left for sandwiches. Added fresh broccoli, fresh beets, homemade applesauce, and several other sides. No need for buffet in restaurant.
We thank God for another safe and wonderful holiday.

Good Morning All!

It seems like this Holiday Season, I have been sleeping longer and longer. Just woke up and am enjoying my coffee.

I tried making my Gluten Free, Dairy Free Pumpkin Bread yesterday and it still did not turn out right? It was hard on the outside and still uncooked in the middle. I was trying to modify recipe, instead of condensed milk use Almond Milk, and that has thrown off the recipe. I did lots of Googling last night and I did find some suggestions, such as use 1/8 of cup less and adding two tbs. of Arrow root. I will try again until I get this right.

I was doing real well maintaining my weight until eating that Pumpkin Bread- sampling. Yikes a 2 lb. weight gain. At least I am still within my range but inching close to the high end.. I am really beginning to think I just need to stay away from baked goods...

I just wanted to Thank You All for coming by our Daily Chat and sharing your day with us. I hope eventually more people on the Raleigh Team will come join in..

Well, I need to start my Cardio and shake these pounds off. Then work on yesterday's and todays challenge to stay on schedule.

Wishing all a Great Day!!

What a glorious day to commemorate Christmas! I didn't even put on my coat when I left Church this morning! Almost California-like.

I went to Midnight Mass (well, close enough...10pm!) last night and also went again today, and helped serve at the 10:30 Mass this morning. Later this afternoon I'll head over to the old neighborhood and join my "used to be" across the street neighbor and her family for a nice dinner. Nice and low key. I hope everyone on the team has a wonderful day! Looking forward to the New Year.

Good Morning!

emoticon Wishing all a Merry Christmas! emoticon

Waking up late this morning.
We had our Family Christmas gathering last night at my SIS house.
One of my nieces and her family ended up stopping by for a bit but had to leave after dinner to get to her husbands family. I took lots of pictures and hopefully will upload sometime today.
Christmas Day will be quiet at home with our family. I plan to start cooking in a bit to prepare my Buffet Green Bean Casserole and hopefully make that Pumpkin Bread I have been talking about.

Enjoy Your time with Your Family and Friends! Merry Christmas!

Full day on Christmas Eve. Son made wonderful Breakfast Burritos, very tasty and healthy. I baked one more batch of Blueberry Muffins to distribute with a few chocolates. Delivered them to 3 homes, then went to pool for more than 1 hr. Very windy day, but water was so warm, then followed with shower and washing hair. All 4 of us showered at Clubhouse - so much easier.
Friend came to tell us our Free WiFi finally started today, so now I have two methods to get online! Hallelujah!!! Spent some time on computer, nearly forgetting I planned to bake very simple Coconut Macaroons, so that job was accomplished. I had good meat sauce for spaghetti but son decided it needed onions, peppers, garlic sauteed and added for more texture so he undertook that project while I got the penne pasta started, then made salad for dinner.
We had no lunch so ate early dinner, left before 6:30 for first Candlelight Service which was lovely. Then watched "Miracle on 34th Street" from 8 to 11 and here I am. WOW! I'd better get to bed before Santa arrives! MERRY CHRISTMAS TO ALL!!!

It has been raining all night and expected to rain all day today!
We will be going to my SIS house this evening for Christmas Eve Dinner. My Brother and his wife will be there minus my two nieces and their families.

I finished up my grocery shopping yesterday and hope to do some baking today. I want to try again a pumpkin bread recipe that I made for Thanksgiving. I altered the recipe to be Gluten Free, sugar free and low carb. Last time it could of used more time in the oven. Live and learn.

Wishing all a Happy Holiday Season...

Carol, I had to laugh at your mention of squirrel. One of my travel buddies, Jean, lived in Hillsborough for many years, but was transplanted there from Minnesota. Hillsborough is quite redneck and one of her neighbors there finally accepted Jean as "one of them" after several years. Well, the neighbor was lamenting that sometimes they didn't have much meat for dinner and her husband would go out and shoot a squirrel and have Squirrel Pie for dinner. But, she cautioned Jean, you had to be pretty careful cause too much squirrel pie could give you "brain fever"! Need less to say Jean never had to worry about that particular ailment!! So just don't overdo it, OK?!

Glad your son got in, Sharon. Our two boys love to cook big breakfasts so this morning Chuckie tried a new recipe for biscuits and they were excellent. I cooked thick sliced bacon and he cooked the eggs - since I always break the yolks when flipping them. We didn't eat again until dinnertime when our meat was deliciously cooked squirrels - along with ham for Pam who did not want to eat squirrel.
We stopped to sing Happy Birthday to one of our friends and at another friend's to get directions to Streamsong, a luxurious resort out in the middle of nowhere in central FL where Mosiac has been mining phosphate and they have sunk many millions of dollars into this plush resort with two golf courses, tennis courts, pools, spas, and much, much more. I could go on and on, but won't.
Then to Wal-Mart for a few items and hurry home for dinner so we could go to Mike Thomas' annual "eve of Christmas Eve" concerts. (He performs at Disney and comes to our resort at least once a year) Much to our dismay it was cancelled because he has the flu.
So we 4 adults sat in the living room and watched Santa Clause 2 and thoroughly enjoyed it.
Thus we have come to the end of our busy day. Talk later, Carol

emoticon Good morning Team! emoticon

My son made it here late last night. He missed his first flight but he is finally here. He will not be staying through New Years! He wants to be back to FL and his friends during that time. I am hoping we will have nice weather, looks like it may start clearing after today. Keeping my fingers crossed. Our family gathering with Bro and SIS is Christmas Eve. Sounds like a smaller crowd this year. My niece's are not able to come with their families. One from Alaska will be coming down in May and spending a month after my other niece has her baby in late April. My local niece has plans with her husbands family.

I hoped to spend time in the kitchen but so many other things going on. No baking no temptations?

Ready to start Day 51 of my challenge after my Express Cardio Workout.
Goal for 2015 is to maintain weight and run 6 Half Marathons. So far I found three I want to run in. Frist being Rock N Roll in April. I am already signed up for that one.

Wishing you all a Happy Holiday's and Healthy Happy New Year!

Son arrived after midnight so we are all short of sleep today.
Didn't do much today, but fell asleep in PM as meds for hip are still making me woozy. Going to try going without any for a few days.
We all went to Golf Cart Parade tonight as DH had our cart all decorated and brightly lit up. 27 carts and we had fun. All ended up at Clubhouse where we had hot chocolate, hot cider, etc. That was a new and nice ending for the evening.
Came home at 8:30 and stemmed 2 qts. fresh strawberries which just came into season here in FL. Everyone had ice cream and strawberries while I had soy milk over my berries.
Highlight of day was learning to use my new "hot spot" son brought to me. No more waiting to get online. YAY!!!

Good morning everyone!

I got up bright and early this morning. It should have been a '"sleep in" day with the weather and all but I've pulled something in my back and it was just too uncomfortable to stay in bed any longer. Let me tell you, Excedrin is my drug of choice. My back has been bothering me for a few days now and it just keeps getting worse. This morning is the first time I've taken anything for it and Excedrin is truly a miracle drug. When I was married I used to practically live on it, but I actually had to go looking for it today. I found it in my little bag of travel meds. Probably has expired, but I took 2 anyway and I am glad I did. Remarkable difference. And it's a good thing, as I Have 7 ladies coming over for lunch today!

I made the SP recipe for Chicken Apple Grape salad. I added a large can of crushed pineapple and left out the Parmesan. Also did green onions instead of red. It's quite tasty. I'll serve it on Pita quarters with a slice of apple wedged into the salad for presentation. I think it should look very nice. I'm also serving those spinach fritters I made and didn't bake for T-giving, along with a salad. Pumpkin pie slices for dessert. Should be nice. All the ladies will get tins of cookies. I still have several tins in the freezer for folks I won't see till after the first of the year.

I wish we had better weather for your son's arrival today, Sharon. It's nice that he can make it up for both Holidays. So often distance or $$ demands that you make a choice of which Holiday you can swing, Thanksgiving or Christmas. I know you are terribly excited! Will he be able to stay through the New Year?

I've been using my treadmill pretty religiously. (perhaps the cause of my back issue?) but a few days ago it just zonked out on me. It had been acting strangely for a while. I called a guy and he had me turn it on to see if the console lit up and the darn thing was working again!! I'm still having him come out next Tuesday to check it out. Hopefully it is only going to be a case of "hairy motor" because of the cats and he can clean it up and get it going again.

Well, better get out the vacuum and touch up the place before my friends get here. Without that Excedrin there would have been no vacuuming going on!

Attitude is everything, pick a good one!

emoticon Good Morning Team! Yeah! It's Saturday!! emoticon

I am just waking up and enjoying my Cinnamon Spice Coffee. emoticon I guess I really needed my sleep. emoticon I did a lot of cleaning yesterday after my workouts and really was exhausted. I have not even started any type of baking. I don't plan on doing too much but would like to try another pumpkin bread and a couple of other things. Of coarse Gluten Free and using Stevia instead of sugar. Some recipes use Figs and Honey? Hum, I don't have those things, maybe a quick trip to Kroger.
I was hoping to stay away from the stores this weekend since it is the last one before Christmas.
Yesterday I had a double work out and I have another double today! Yikes, this challenge is getting more challenging! And I got a late start!!

Wishing You all a Happy Holiday and Weekend!

Hi, just haven't been able to get online much lately. My "hot spot" will arrive on Monday and I can't wait.
Saw wonderful Christmas entertainment last night. New Dawn Singers and dancers did a wonderful job. Six performers and some were Disney dancers. Going to another Christmas program tonight just around the corner at another resort.
Can't believe we have just a few days left. I'm not baking a lot of things to keep, but do send blueberry muffins to friends and neighbors.
Also will make some chocolates for us - even though I am not eating sweets. I can have them New Year's Eve. A few days off then will restart the program.
Talk later, Carol

emoticon Good Morning! TGIF! emoticon

I got a lot of shopping done yesterday and this morning finishing up my cards.

After my Cinnamon Spice Coffee I will start on day 47 of my Challenge and weather permitting a short 1-2 miles around the neighborhood.

After the 1st of the Year, I will be back to Half Marathon Training for Rock N Roll Raleigh Half Marathon in April. I am also signed up for The Best Damn Race in Safety Harbor in Feb. I hope this next year I will be able to come down and stay with my son to run this! I am so homesick but it is so hard to get away while caring for my elder mother.

Good morning!

My friend from Prince George CVA just called to let me know she will arrive here about 10:15 or so. She is dropping off the clothes I loaned her whan she went to Africa. I had 2 shirts in those drab African-essential colors (bright colors frighten the animals on safari), and she is returning them. We'll go out to lunch and she'll head back home.It will be nice to see her and I can give her a tin of cookies for Christmas.

Sharon, my happiest times are spent in the kitchen. Maybe that's why these added (this morning 17.5 pound) is being so stubborn in coming off! I went back to Dollar Tree and bought 10 more tins. That makes 43! And the last two I filled I ran out of toffee and none of the last 10 got the Fudgy Bon Bons! I am not making anything more so those last two are "extras" in case I remember someone or someone shows up and I have nothing for them. Too bad I can't post a picture here, but I took one of my kitchen lined up with all the open tins and it is an impressive sight! In fact I may use the picture as the heading of next years Christmas Letter! I haven't been eating much of the stuff I made. I"m trying not to get any higher than those already packed on 17.5 pounds.

Have a good day!

Good Morning All! Happy Hump Day!!

I woke at a normal time this morning! Yeah!

Enjoying my Cinnamon Spice Coffee. Hopefully this headache will go away.

It is an off day for me but in a bit I will do a quick cardio to get myself going. Still maintaining my weight in healthy range.

I take my mother later this morning to get that tooth extracted and then the rest of the day is free.

I want to do some holiday baking so will be checking some Paleo recipes. I like keeping healthy snacks and foods around just in case. I have not gone through any type of stress binging and I think maybe because I keep healthy protein snacks available. I also love my low carb cheesecake I make using stevia. I think that helps with any type of sweet tooth. I use a blueberry Organic preserve on top of it.

Maryellen, that fog was nice. I was hoping yesterday to get out for short run but the rains came a little earlier than I thought.

Wishing all a Great Day!

Good Morning everyone!

Nice foggy morning. I love foggy mornings as long as I don't have to drive in them! Rain is in the forecast for today and I believe Thursday. Our HOA is taking out all the small trees the developer planted because of poor planting and shallow root structure. I got to choose from a total of 5 species. I chose a River Birch. We had one at the house in Holly Springs and I really loved it. Well, the other trees they are replacing have about a 300 pound root ball. They didn't have that size for the RB, and I ended up yesterday with a tree, with a root ball weighing about 1000 Pounds!! It is gorgeous! It must already be about 20 feet tall! I am a happy camper!

I got 33 tins of cookies put together last night. I still have more if I need to put a few more together. Anything that is left over will go to my friend Donna who will take them to work at the American Airlines Reservations Center for the folks who have to work on Christmas Day. I used to do that myself, but it's been 5 years and I don't know many of the folks that are now there, so I'll let her be the bearer f the goodies from now on! I will label and deliver the ones I put together last night, beginning today. Hope the rain holds off.

Have a great day!

Good Morning Team!

Yikes! I was up bright and early.. Woke at 4:30 am and did not get back to sleep.

My son will be back visiting on Monday! So excited and really need to focus today on finishing my decorating and mailing cards.

Carol, I can handle 70 degrees cool temps. Yesterday we almost reached 60 degrees. I got out with my mother and did a Run/ Walk pushing her in wheel chair. I am sure we were a site to see. Those hills are so challenging pushing more than my own weight. What resistance. I am wondering if I should get a body strap to connect to the wheel chair for extra security. I remember my jogging stroller had that...

Got health insurance taken care of, thank goodness. and was able to order prescriptions for 90 day supply on mail order this year so I don't have to start over with deductible next year right away. Thank goodness I don't take much. I am totally off all antidepressants/ anxiety and sleeping scripts.

Well, today my workout is a double one, Abs on Fire and Core Challenge. After that I need to do some cleaning- including bird cages and then some shopping. Later, I take my mother for her acupuncture/ massage appointment.

Thanks all for your input on elder attorney's. I am going to do some calling right after the holiday's.

Wishing all a Wonderful Day!

Hi, it's still cool (70) in central FL, but sunny and beautiful. Went to Ladies Luncheon in very old hotel in Avon Park. You just can't imagine the gorgeous decorations both inside and out. There were lots of people and plenty of food, but I was able to pick healthy things and did not feel too full when done. And of course I by-passed desserts.
Sharon, our DIL is a lawyer but a patent lawyer who works in Intellectual Property for IBM, but I will ask her if she knows of anyone specializing in elder real estate. Will get back to you on that.
Internet is actually working well in Clubhouse, so I'm taking advantage.
Talk later, Carol

Good Morning!

Looks like a great day today. Lots of little errands I need to run today after devoting so much time to Christmas stuff last week. I need to get all those bar cookies out of the freezer so I can begin cutting them and getting the tins ready for distribution. Oh, and I forgot, I need to make my almond and peppermint bark fresh, as I don't know about freezing them, so I didn't attempt to make them ahead. Guess I have more work than I planned! Isn't that always the case?!

Sharon, I did a Google search for Elder Law Attorneys and came up with a lot of them. Not sure how many specialize in real estate. Looked like a lot of abuse and probate and power of attorney stuff, but the last category might be what you need. For my trust and all that stuff, I used a guy over by Cameron Village. Don't know if that is close to you or not. I can give you his name if you'd like.Let me know.

Have a good day.

Good Morning! Happy Monday!!

Woke around my normal time this morning but with a bit of a headache. Hopefully my coffee will cure that.

I spent so much time shopping around for health insurance and now after signing up, my husband is complaining about the plan I picked.

So far I have been maintaining my weight within my range. Yeah! I made some of my low carb cheesecake last night using this new Organic Stevia Extract. It requires a bit more than the Kal Brand I was using. I switched because I found out Kal is really not 100% Stevia. I have learned now not to be fooled by labels advertising Pure or Natural.

I am looking forward to longer days of Sunshine! I really think I suffer from SAD and since I have been back to NC have been feeling it a lot. I miss my outdoor living having a pool and Lanai.

Do any of you know of a Real Estate attorney for elders here in NC? My mother wants to give me her house and I was just thinking of having my name added to title with hers while she is still alive. I hate to spend money on updates and repairs, if in the end I could loose it since she did not do these things. Really would appreciate it.

Well got to go start my day, so much to do.

Have a Wonderful Day and Week! Tis the Season!

Hi Everyone! Sorry to be so late.

For some reason I have been waking up much later and moving so slow in the morning.
I have had so much to do and with deadlines. I am still trying to figure out health insurance.
Ours went up quite a bit and I was hoping to keep my doctor. Unfortunately, my doctor does not take the more affordable plans.

I have been keeping up with my exercise challenges, but have not been doing much running. I still am not done decorating or addressing cards either.

I will be taking my mother to the dentist Wed. to extract decayed tooth. Her jaw is still sensitive but thank goodness the pain is not as bad as it was..

I did get out is this nice weather this afternoon, pushing my mother in her wheel chair. Such a nice break.

So happy to see you both here.

Good evening!

I am over the hump! Busy, busy last few days, but I have nothing big scheduled till Thursday when a friend drives down from VA to return some of the clothes I loaned her to travel in Africa. Neither of us wear the drab colors that are required, so I loaned her some pants and shirts that I bought for my trip. She will return them, we'll go to lunch and then she'll head back home. Tomorrow I need to take my winter coat to the tailor shop to have the zipper replaced. I also have a headlight out so that needs to be replaced and I will begin doing my cookie tins for friends. I have way more people I want to remember this year what with all the new friends and neighbors I have so I will be doing the smaller tins to make the baking go a little further. I need to count the tins I already have and head over to Dollar Tree and buy what more I need. Other than those things there is nothing Holiday-wise added to my schedule. A week from tomorrow, I am hosting a Christmas Luncheon for the 7 other ladies in the Village who go to my Church. For that I'm buying Costco Rotisserie chicken and making a chicken salad and a green salad as well as the Spinach Fritters I made from the recipe I got in Argentina. I made them and froze them for Thanksgiving but didn't bake them because we had too much. I served them today to the group I had over for a pot luck and gift exchange. So maybe instead of running around like a chicken with its' head cut off, I can actually use the time to prepare for the real reason for the Holiday. The birth of Our Lord! What a concept! Shifting to a lower gear will be a nice change of pace, and help me reflect on the meaning of the season.

Carol it's good to hear the hip is responding to the new meds. Too bad they are making you so sleepy though. Is that a listed reaction or are you just wiped out and need the sleep?

Sharon, it's unusual that you haven't checked in today. I hope things are OK with your Mom.

Hope everyone else is plugging along. Enjoy the sunshiny weather, Looks like showers on Tuesday but the rest of the week should be nice, albeit still too cool for my tastes. But hands down, it sure beats rain, wind and snow!

Can you believe it is already Dec. 14th?
Where is Sharon today? Hope she is alright.
Went to church, had pot luck dinner after, then slept most of afternoon. Not like me - this medicine just has to go! But the hip is feeling better.
Tomorrow will go to ladies luncheon at old hotel in Avon Park. They decorate nicely for holidays and I haven't been there for years, so am looking forward to that.
Hope everyone had a great week-end and is ready for a good week!

Well, Sharon, Tamps and the area were below 40 this morning. We were supposed to see sunshine but haven't yet.
I am in computer class right now, first class and we have people in all stages of computer ability so going over some basics. Better get back to listening!

Good morning! TGIF!

It is freezing here in NC. Temps in the 20's. I am not sure if I will ever get use to this after living in Tampa Bay over 20 years. We use to freeze with temps below 50 degrees. What a change.

I am getting ready to do some high intensity cardio workouts just to warm up. I am trying to finish my decorating and start on Christmas Cards. I am so behind... My SIS has a BD next Friday so need to get her something and a card. Thinking about getting her Gilad's Quick Fit System..

Got to go. I hope you all have a Wonderful Day! Keep warm!

Yep, the holidays are coming fast!!!
I'm just not going to do the baking I usually do, but will make a few things.
My hip is quite a bit better so think it is arthritis causing the trouble. But the meds make me tired and weak! Time will tell.
DH and I have to go to Winter Haven today and will go to local college for a great Christmas show.
It is sweatshirt weather in FL and quite windy, but sun is shining. mid to upper 60's and we won't complain
Have a great day, Everyone!.

Good Morning! Finally got a Great Night Sleep! emoticon
I really needed it. My mother has had a lot of pain due to tooth. She is on pain meds and antibiotics now and will have tooth extracted next week.

I am real behind and have lots to do getting ready for the holiday's. emoticon The only decorating I have done so far is my Spark Page. Yikes! I have not even started on my cards yet. emoticon

I am enjoying my coffee and will do Day 28 of my challenge and maybe an extra cardio. The weather has been either too cold or rainy to get out running so trying to do extra cardio indoors.

Wishing al a Great Day! Happy Hump Day!

Had very full day today! Came to Clubhouse for 30 min. to get online. Must hurry!
Christmas cards are ready to mail. Went over the 100 mark!
Ging to Winter Haven tomorrow as that is where we get our meds and dr. gave me new prescriptions to help this hip pain. Hate to take more, but will give it a try. Forgot to ask her if I should make myself walk more or rest more.
Too cold for water aerobics! Talk later, Carol

Good Morning!

I am really running late. I was hoping for sound sleep last night but my mother woke and needed attending to a couple of times. I am grateful I was able to get back to sleep but now I woke up so late.

Just wanted to stop by and say good morning. I need to get my coffee and exercise done and hope to be back here sometime later this morning!!

Great news! Harris Teeter had the Chocolate Wafer Cookies. Turns out they are made by Nabisco. I was at a disadvantage as I didn't know the brand when I went looking for them. But get the price... $5.19 for a 9 ounce sleeve! Yikes! but at least I found them and can continue with my baking.

Greetings from a gloomy and rainy Frostproof, FL.
DH and I have worked on Christmas cards for 2 days. Every year I try to cut back but am now up to 98 cards. It cost me $32.00 to have 70 letters printed - and that was with 30% discount. It cost extra because I wanted green ink. Could print my own, but chose not to. Had 80 photos made - bargain from Shutterfly at $20.00. Add the cost of cards and postage and am well over $100.00. Should I contribute that amount to another cause??? Makes me wonder.
Yes, I will keep the "hot spot". Chuck, Jr. was able to add it to his Verizon account without added cost since we don't use all of our minutes. Can't wait.
Sorry about your mom and her problems, Sharon. It is not unusual to have cavities under bridges and/or caps. Toothaches are painful, too. Hope she recupes real soon.
Better run, DH is waiting for me.

OH, Sharon. I am so sorry about your Mom. Aging is not for sissies. And that goes for the aging one as well as their caretakers! I know how frustrating it can be. My M-I-L was aphasic for many years and could not tell us where things hurt her, she would just cry. So very frustrating. Ind perhaps there was no pain, just incredible sadness about her own condition. It takes its toll on everyone. I hope the dentist can find the root of the problem and get her back to being relatively pain free.

I got my Christmas letters all mailed out last night and today I dropped off the only package I need to mail. I am still on a hunt for round Chocolate Wafer cookies. Not the long skinny filled in the middle kind of wafers, but the ones you can make a yule log out of with whipped cream. I have a wonderful bar cookie recipe that used them for the base. The only markets left to check out are Harris Teeter and maybe Whole Foods. After that I guess I'll check out the Mexican Markets, though I have no idea if they would carry them. It used to be that all the regular grocery stores had them in the freezer aisle by the ice cream toppings. No one around here has them this year. I hope I can find them as it is a really good recipe.

Carol, will the hot spot we available to you all the time or just while your son is visiting? Being without Internet certainly slows things down. But when I stop to think about it, when I was without it during the move in period, I certainly got more accomplished! Seems like we have a double edge sword!

I hope Betsy is doing better. I haven't heard anything about her last procedure. And Sarah and Bobbie and Linda...I hope you are all doing well this Holiday season. Lots of temptations lurking about. I just read in yesterday's paper that they did a study on mice (not yet on humans though) where they ate only during 9 consecutive hours a day and fasted the other 15 hours. They could eat as much as they wanted during those 9 hours, but nothing more. And they came to the conclusion that the schedule produced weight loss in a huge percentage of the mice. I may tinker with that a bit and see how it works.

emoticon Good Early Morning! emoticon Happy Monday!

I have been awake since 3:30 am. Lots of anxiety and could not get back to sleep.

I hope to get my workout done soon and then when dentist and doctor office opens will call to get an emergency appointment for my mother. Her bottom lip and side of face is swollen. She has been complaining of teeth pain. I hope we can get in today.

My weight crept up slightly over the weekend and am sure it is due to stress. I have still been keeping up with my 60 Day Challenge but my running has suffered.

I am trying to get so much done in such little time. I am trying to keep strong both physically and mentally. It is not easy caring for my elder mother, especially when she is in such pain.

Got to go! I hope I have sometime to check out recipes for Gluten Free/ Sugar Free Baking. I think I now have al ingredients needed.

Wishing all a Wonderful Day and Week.

Thanks Maryellen. I will see if I can do that also tomorrow. I use to do the home test and they always came out positive but then the doctors office would sent to the lab and nothing. I guess that's why I stopped.

Delirious? Check for a UTI. Bladder infections in older folks are often the cause of hallucinations and delirious behavior. I've seen and heard of it happening time and time again. Do check it out. It is often misdiagnosed, but easily remedied.

Hi!

Well, I had to call EMS to check my mother out. Very frightening experience with her BG and BP very high. She was in a delirious state. I thought she was experiencing a stroke or heart attack. I had given her baby aspirin to chew, insulin, pain pill and her heart med. Her numbers did go down but when she started gagging and was in a strange state, I really was scared again. Signs were not good. EKG showed all OK. She has been sleeping most of the day. Hopefully can get her dental appointment. She may have a gum infection?

Other than that, all is ok. Did not get out to run but tomorrow is another day!

Happy Sunday!!!
Heard Joel at 8:30, went to church, had lunch and now at friend's to use internet.
In 45 min. is ice cream social. I will go with Chuck but not eat ice cream - just be social.
I should take my frozen bananas made into "ice cream", but had that last night - with a few red raspberries sprinkled on to;. Mmmm good.
Cloudy day, temp in 70's, but nice.
Talk later, Carol

Good Morning! Happy Sunday!

Yesterday was a stressful day with my mother. She has been having some pain with her teeth and jaw. She has been complaining there is food stuck but I can't see it. She has used everything to try to get it out. I may set up dentist appointment Monday to see what the problem is. Caring for elder parent is not easy. Taking care of baby is much easier. You can probably tell I am a little stressed.

I overslept this morning so I am enjoying my coffee right now. I need to do a cardio workout to get my HRT going and hopefully feel not so stressed. I was hoping to get a short run in early this morning too. I just need to get away for a bit.

Wishing all a Great Day!

PS Can't wait until Dec. 21st when son will arrive from OH for Christmas! He made all the arrangements for me to have hot spot for internet from his Verizon account and will activate it when he is ready to come down here.
I can even use it in car and anywhere my cell phone is usable. (I always want to put an e in usable.)
Chuck, Jr., ex-wife and the dachshund will stay through Christmas, then go to Raleigh (our other son's) for New Year's. Can't wait!!!

Came to a friend's house this PM to use his DSL connection as I have not been able to connect from home. Late last night I got on long enough to spin the wheel and that is all.
Sharon, thanks for info on Xanthan gum. Will remember that.
ME, laughed at mental sight of hamster on wheels! That's great! You do keep soooo busy.
Almost done with decorating - DH did outside and golf cart, then helped me with a little of the indoor decorations.
Gotta' hurry as we pick up another couple to go to dinner tonight.

emoticon Good Morning Team!

I am a slow riser this morning, I really wanted to stay in bed.. emoticon
I am suffering a sinus headache and feel like I am fighting off a cold. I am very happy
I decided not to run the Jingle Bell 5K this morning. It is around 10 am and I am just enjoying my coffee. emoticon

I have lots to do and need to start my workout in a bit. Day 34 is a double- Abs on Fire and Core and More. I also need to look at my Health Insurance and also my Mother's. She is on Medicare and wondering if she has a better option. I have not started my decorating yet and would like to get that done.

Mary Ellen, Sounds like you are getting your place looking nice and Festive.
Carol, I miss my FL Christmas Holiday!!
Sarah and Bobbie, I hope you all are doing great! We miss you and hope you will come by!

Wishing all a Wonderful Weekend!

Back home but buried in "stuff to do"!

Tanglewood was really nice. Had a great hotel. Ever heard of Springhill Suites by Marriott? VERY nice! And not out of sight money-wise, especially when you share with a friend.

Still trying to finish decorating the tree and I still need to lay down the netting lights (used for bushes) on the pinestraw to create a "snow field" for my carolers in front of the house. We have aour Singles Christmas Luncheon today so that will burn several hours. I feel like a hamster on a wheel!

Attitude is everything, pick a good one!

Me again!! Carol, I found Xanthan Gum Gluten Free Hodgson Mill Individual packets at Kroger here in NC. The price was reasonable. Can't wait to do some Gluten Free Baking from Scratch. A lot of the premade mixes have sugar in it so I plan to modify using 100% Stevia...
Can't wait to try. I have family history of diabetes and the past two years my doctor did an A1C test. My reading was slightly elevated? I was never told I was pre diabetic but when I found out my parents were back in 1995, I changed my eating habits. I have been following Paleo way of eating- removing most processed foods.

Thanks again!

emoticon Good Morning! emoticon Happy Thursday!

My son left to go back to FL yesterday. I miss him already, but he will be back for the Christmas Holiday. emoticon

I am enjoying my coffee emoticon and then will do a quick cardio. Today is Day 32 of my Challenge- Phenomenal Abs. I forgot to do my weigh in on the 1st and take measurements so I guess I will do it now.

I need to do some clean up and then get ready to decorate the house. Taking my mother later to Doctor Appointment and run some errands.

Wishing all a Great Day!

Nice day in FL. Got in both my walk and water aerobics. Next 3 days will be challenging as our calendar is jammed full.
Trying to get our Christmas decorations out and also start cards, but need to make trip to Staples to get letter printed. Plan on that tomorrow. Today I made and printed labels for back of family photo and got about 80 of those done.
Dental appointment tomorrow along with some shopping.
Sharon, I know you will miss your son. Will he be back for Christmas?
One of our sons will arrive on the 21st for a few days, then head to Raleigh to spend New Year's with his brother.
ME, that seems a long way to travel for a show. Hope it is worthwhile.
Talk later, Carol

emoticon Good Morning! emoticon

Already Wednesday.. My son heads back to FL today.. I wish I could go back with him.
My sinuses are bothering me today. I hope I am not coming down with something once again. I was hoping to run the Jingle Bell 5 K on Saturday, but still not sure. I wish it were next week. Just seems to soon.

My weight is back down to pre-Thanksgiving weight and I have been good following my 60 day U Challenge. Today is Day 31, Max Abs. I always love doing a Cardio Workout just to get my heart rate going.

Have a Wonderful Day!

emoticon Good Morning! emoticon

I am up Bright and Early! 4:30 am??

We got a lot done yesterday including getting all the leaves out to the street for leaf pick up. My son and husband made it out to the Lake yesterday.. I was all ready to go, had my mother in the car and tried starting it and yes, the battery was dead. My husband and son ended up going and my mother and I stayed home. We did end up going for a walk around neighborhood park and enjoyed being outdoors.

I uncovered my garden to see if anything survived the freezing temps. My Broccoli, Rosemary, Strawberry plants and Asparagus made it. Everything else is gone. I am happy I dug out my two pineapple plants and put them in pots indoors. They are doing great and my lemon trees too. I would love to one day get a green house so I can really truly do 100% Organic Gardening all year round.

ME, so happy you got your heat operating once again. I don't like the cold and have space heaters even when our heater is working.
You sure got a lot done with cooking and baking. Such a great idea to get it done and put in freezer.

Carol, how sweet to bring dinner to friends.. Sounds like a fun game of Sequence. Is that a card game? My husband and I use to play cards all the time when visiting his folks. Most of his family has past away now. I do miss them and all the great times we had.

Well, I need to get started early with my workout and maybe push myself out the door for a quick run when it is light out. We are expecting some rain sometime today. Temps at 50 degrees, warmer than predicted. Taking the car in sometime this morning..

Have a Wonderful Day!

Couldn't get on internet until late. Now I am sleepy.
Had very full day, got 100 minutes exercise and that felt great!
Used up remainder of turkey with a little ham in one of our favorite casseroles, called friends to see if we could bring dinner to their house (she doesn't cook anymore due to dementia), told them to invite another set of friends, and we all sat down to casserole, salad and the Pineapple-Angel Food Cake.
Easy dinner to prepare, they set lovely table, food was enjoyed by all, then we played a few rounds of Sequence. Darn! The men won 4 - 2.
Talk tomorrow!

Now that the temps were up today and it was gorgeous, I got the furnace fixed! Apparently when we took off the two front panels a very small, teeny tiny itsy bitsy copper wire somehow went from the furnace switch over to the A/C switch and they were running simultaneously! . It was a quick fix...snip the wire and put the panels back on! I did however learn that next time I have an extra $450-500 in my pocket, I can add an aftermarket whole house filter, like I had in my old house, so the ceiling filters will no longer be required. The filters last 18-24 months and involve nothing more than me walking up the stairs to the attic and changing it. Absolutely no ladders involved! I just couldn't fathom that these houses, built to accommodate walkers and wheelchairs have filters in the ceilings! The Fire Dept will send guys to change smoke detector batteries, but I know of no none who offers a filter changing service. Anyway, it will be worth it to me to spend the money...unless of course anyone out there knows of some filter fairies looking for work!

On the plus side, I got a lot of my baking done. I have 7 bar cookie recipes done and wrapped and frozen, and I made 3 batches of English Toffee. I still have 2 more bar cookie recipes I want to make and several other candy recipes. . I also do seasoned nuts for the diabetics on my gift list. I'll do those last.

I got most of the outside of the house decorated. I ran out of daylight. I didn't get started till about 2pm. I didn't realize what a wonderful day it was or I'd have been out there sooner and would probably have finished. I decided I need to buy a taller tree. My celiings here are higher than the old house. A friend gave me a tree they never used but it is only 6.5 feet and has colored lights. I really a 7.5 footer and I do prefer white lights. I heard that Michael's had some really nice ones. I went over there tonight and they had only 1 tree left in the whole store and it was too tall! I called Knightdale and they have one I was considering. I'll try to head over there tomorrow morning as they only had 2 of them. It was 20 minutes to closing when I called them so at least one of them should be available at 9am. I looked online at Lowes, HD and Target and they are out of sight price-wise. And what they do have is online only so you can't see them in person. Michael's has them 50% off through Wednesday. I guess I'd better jump on it if I want it for this year. And even if I waited for the after Christmas sales I fear there will be nothing left if they are that scarce now.

Sharon, if you made it to the lake today you had an excellent time of it I'm sure! It was glorious! How late can you sign up for the race? I'd put it off as long as possible to check on the forecast.

Carol, I'm sure you are relieved to be back on some kind of schedule. There is something comforting about the ruts we have for ourselves!

I hope everyone else is enjoying the weather and getting ready for the Holidays.

emoticon Happy December!! emoticon

A new month and new goals!!

I hope everyone had a great Thanksgiving! Now we are officially entering The Holiday Season!

I overslept this morning. I am off by 1 hour. In a bit, I will b doing my jumpstart Cardio to shake away the cob webs and then moving on to Day 29 of my 60 day challenge. Hard Core, such an appropriate name for this one.

Today is suppose to be one of the nicest days- Lots of Sunshine and Clear Carolina Blue Skies... We are definitely going to the Lake this afternoon. My son leaves Wednesday and Tuesday we are expecting a rainy day..

I still have not signed up for Jingle Bell Run. I wish it were next weekend. We shall see...

Wishing all a Great Day and Great Start of the Month!
