EASY CREAMY GRAPE SALAD - with cream cheese


2 lbs Grapes, green seedless
2 lbs. gravões, red seedless

1/2 cup Brown sugar
1/2 cup Granulated sugar
1 tsp Vanilla extract
Nuts & Seeds
1/2 cup Pecans, toasted

8 oz Cream cheese
8 oz Sour cream

4 lbs Grapes, seedless green and red seedless

1/4 cup Brown sugar, packed
1/2 tsp Cinnamon
8 oz Cool whip
2 tsp Vanilla extract
Nuts & Seeds
1/2 cup Pecans

8 oz Cream cheese
1/4 cup Milk (or sour cream)

Mix all and refrigerate

Old Fashioned Peach Cobbler

I went to a cooking demo and the peach cobbler was wonderful

INGREDIENTS

5 peaches, peeled, cored and sliced (ABOUT 4 CUPS) I always use more peaches, especially when I buy them from the farmers.
3/4 cup granulated sugar
1/4 teaspoon salt

For THE BATTER:

6 Tablespoons butter! (3/4 stick)
1 cup all purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
ground cinnamon

METHOD

1. Add the sliced peaches, sugar and salt to a saucepan and stir to combine.

* If using canned peaches, skip to step 3)
2. Cook on medium heat for just a few minutes, until the sugar is dissolved and helps to bring out juices from the peaches.
Remove from heat and set aside
3. Preheat oven to 350 F. Slice butter into pieces and add to a 9x13 inch baking dish. Place the pan in the oven while it preheats, to allow the butter to melt. Once melted, REMOVE the pan from the oven.
4. In a large bowl mix together the flour, sugar, baking powder, and salt.
Stir in the milk, just until combined.
Pour the mixture into the pan, over the melted butter and smooth it into an even layer.
5. Spoon the peaches and juice ( or canned peaches, if using) over the batter.
Sprinkle cinnamon generously over the top.
6. Bake at 350 F for about 38-40 minutes.
Serve warm, with a scoop of Ice Cream, if desired.

This is a wonderful salad. Of course,..... just look at the amount of mayo.....smile.....

Creamy Vinegar Coleslaw

INGREDIENTS

3/4 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon champagne vinegar
1 tablespoon whole0grain Dijon mustard
2 teaspoons honey
1 teaspoon celery salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
8 cups coleslaw mix (red and green cabbage) I'll use fresh cabbages
2 medium carrots, shredded, around 1 cup

METHOD

1. Whisk together mayonnaise, vinegars, mustard, honey, celery salt, onion powder, garlic powder, and pepper in a large bowl.

2. Add cabbages and carrots, and toss to fully coatmcabbage with dressing.

3. Chill the slaw in the refrigerator at least 2 hours or up to 8 hours.

Serves: 8

Superb! Make it the evening before. Keep overnight in the fridge. Bake it just before your guests are coming, or for your family.
I served it to guests, and the whole thing disappeared in just few minutes.

*I'll definitely doubt the recipe in the future and use two 9x13x2 baking dishes.

"Creme Brûlée" FRENCH TOAST
Serves 4 +

INGREDIENTS

1/2 cup unsalted butter
1 cup light brown sugar
2 tablespoons brown rice syrup (I used it, but you may use pure maple syrup. I think it is a good investment to have brown rice syrup at home)
9" round loaf of country-style bread (or Olde world French bread, or Baguette, or Chala bread)
5 large eggs
1 1/2 cups half-and-half
1 teaspoon vanilla
1 teaspoon Grand Marnier (I bought a generic brand. costs less)
1/4 teaspoon sea salt
Confectioner's sugar, sifted, for garnish

METHOD

The day before ( I did it in the afternoon), in a small saucepan, melt butter with sugar and syrup over medium heat, stirring until mixture is smooth.
Pour into 13x9x2 baking dish.

Cut six 3/4" - thick slices from the center portion of the bread, reserving ends for immediate snacking or for another use.
Arrange bread slices in ONE layer in baking dish, squeezing them to fit.

In a medium bowl, whisk together the eggs, half-and-0half, vanilla, Grand Marnier, and salt until well combined: slowly pour mixture evenly over bread. COVER and chill overnight.

Bring bread mixture to room temperature for 30 minutes.
Heat oven to 350 degrees
Bake UNCOVERED in the MIDDLE of the oven until puffed and edges are golden, for 30 to 40 minutes.
Sprinkle with confectioners' sugar and serve immediately.

FRENCH TOAST WITH CHALA BREAD. # 1. emoticon

Make it the evening before and chill overnight.

INGREDIENTS

• 1/2 cup melted butter (1 stick)
• 1 cup packed light brown sugar
• 1 entire loaf (1 lb, 12 oz) Texas Toast (Not frozen. Don’t use other breads.)
• I’ll use Chala bread instead of the Texas bread. Amazing.
• 4 large eggs
• 1 1/2 cup whole milk
• 1 TB vanilla extract
• 2 TB light brown sugar, mixed with 2 tsp cinnamon
• Powdered sugar for sprinkling
• Real maple syrup for serving, if desired

INSTRUCTIONS

1. Put butter in a microwave safe bowl and microwave in 20 second increments, stirring in between, until melted. Add 1 cup brown sugar and stir until well incorporated Pour into bottom of a greased 9×13 pan, spreading mixture evenly.
2. Beat eggs, milk, and vanilla until incorporated. Set aside.
3. Lay a single layer of Texas Toast in pan, cutting pieces to fit if needed. Spoon 1 cup of egg mixture evenly over bread. Sprinkle with half of the brown sugar/cinnamon mixture. Repeat with second layer, using up the rest of egg mixture over that layer, and ending with a sprinkling of brown sugar/cinnamon mixture. Try to get the custard evenly soaked into the bread slices.
4. Cover tightly AND CHILL OVERNIGHT IN FRIDGE.
5. Bake at 350F for 40-45 minutes on lower middle rack — covered for the first 30 minutes, and uncovered after that. Sprinkle with powdered sugar. Be sure to scrape up all the bottom sticky goodness. If desired, serve with pure maple syrup.

INGREDIENTS

1/2 cup melted butter
1 cup brown sugar
1 loaf Texas sliced white bread
4 eggs
1 1/2 cup whole milk
1 Tbsp. vanilla
2 Tbsp. brown sugar
2 tsp. cinnamon

DIRECTIONS

Grease a 9 x 13 pan. I’m personally a huge fan of this Pyrex Basics 3 Quart Glass Oblong Baking Dish on Amazon.com (affiliate link). I own two of them and use them frequently for baking and cooking. Combine melted butter and 1 cup brown sugar in a small bowl and then spread into the bottom of your prepared 9×13 pan.

Beat together eggs, milk, and vanilla. Set aside. Mix together 2 Tbsp. brown sugar and 2 tsp. cinnamon in another bowl and set aside.

Put one layer of bread on top of butter and brown sugar mixture. Make sure the whole bottom of the pan is covered. Then pour half of your egg mixture on top of bread layer and sprinkle with half of the brown sugar and cinnamon mixture. Add another layer of bread. Pour the rest of the egg mixture on top and sprinkle with the rest of the cinnamon and brown sugar mixture. Cover tightly and chill in refrigerator overnight.

In the morning, preheat oven to 350 degrees and bake french toast covered for 30 minutes and then uncovered for 10-15 more minutes. Sprinkle with powdered sugar just before serving if desired.

I tasted these two cakes in a luncheon, and both were delicious.
They are both from a box mix. Very quick and easy.
I already made therm and put it in the freezer.
Both freeze well.

Crumb cake or muffin mix

The girl who made this cake/bread did not have 1 1/2 cups orange juice, so she used 1/2 cup of orange juice and 1 cup of Ocean-Spray Cranberry - Pomegranate juice.
She also did not have walnuts, so she used 1/2 cup Almonds and 1/2 cup Pecans.
Otherwise, she followed the recipe directions.

The sweetest and best corn pudding recipe - perfect for any occasions, especially potlucks.
So easy to make. Everyone loves it.

Ingredients

½ cup soft butter (which is 1 stick of butter)
½ cup sugar
2 eggs
1 cup 8 oz sour cream
1 package 8.5 oz corn muffin mix (like Jiffy cornbread mix)
½ cup milk
1 15 oz can whole kernel corn, drained
1 14.75 oz can creamed corn

Instructions

Cream the butter and sugar.
Add eggs one at a time and beat well after each.
Add in and beat sour cream.
Gradually add muffin mix, alternately with the milk.
Fold in both cans of corn.
Pour into a greased 9X13 baking dish. Bake at 325° for 45-50 minutes until golden brown.
Serve warm!

Apple cake with applesauce

Summer cake

This cake is wonderful. It has light texture. Great to make in the summer (or anytime)
You can reduce the amount of margarine (or butter), by adding extra applesauce

INGREDIENTS

4 yolks eggs (keep the whites aside. Will use them later)
3/4 cup of sugar (keep aside 1 tablespoon of sugar)
150 grams of margarine (a little over 1 stick) I use butter
250 grams of rising flour (or regular flour plus 1 teaspoon ion baking powder) A little over 8 ounces = 1/2 pound

1 jar applesauce, sweetened (ounces?)
1 package instant vanilla pudding

Make a dough from the above 4 ingredients.
Take 1/4 of the dough out and put in the freezer.

Spray with pam, or grease the pan.
Put the dough in the greased pan.

Bake the dough alone for 10 minutes (probably 400 degrees F)

Whip until stiff the 4 egg whites with 1 tablespoon

Mix together the applesauce with the dry vanilla pudding.
Add gently the whipped egg white to the applesauce mix.

Put the applesauce filling on top of the baked already dough.

Take from the freezer the dough, and grate it over the applesauce filling.

Reduce oven heat to 350F and bake for about 30 minutes

Leave a little bit in the oven after you turn off the heat.

Enjoy

ICED BROWNIE BARS – KEEP IN THE FREEZER FOR COMPANY

INGREDIENTS

1 pan of prepared brownies (8x8" or 9x13")
• 1/2 gallon low fat vanilla ice cream, slightly softened
• 1/2 gallon low fat coffee ice cream, slightly softened
• Canned whipped cream
• 3-ounce chocolate bar, for garnish
• Chocolate or caramel syrup, for garnish

DIRECTIONS

Spread softened coffee ice cream over the brownies. Smooth out the top, and then freeze for 15-30 minutes.

Spread softened vanilla ice cream over coffee layer, and smooth out the top. Freeze for 30 minutes or until ready to serve.

Just before serving, slice into squares and garnish each one with a generous squirt of whip cream, and some finely chopped or shaved chocolate. (I like running a peeler along the edge of a chocolate bar for curls and pretty shavings.)

To take it over the top, drizzle with some chocolate or caramel syrup.

*If you’re baking the brownies at home, UNDER BAKE them by a minute or two to make them easier to slice and serve when frozen. If your store-bought brownies are particularly thick, consider cutting them in half for a thinner iced coffee bar crust.

LEMON BLUEBERRY CREAM PIE

I found it on Pinterest. I served it twice to different people. They all raved about it and they finished the whole pie very quickly (total of two pies).
IT FREEZES BEAUTIFULLY!
I'll always make 2-4 pies at once: Same work, same time, having 4 pies in the freezer, ready for company
I purchased a ready made graham crackers pie crust, the largest size.

************************************

A delicious and fresh lemon cream pie in a homemade graham cracker crust and topped with the most delicious homemade blueberry sauce. This is a perfect summertime treat!

Ingredients

GRAHAM CRACKER CRUST

· 1½ cups graham cracker crumbs

· ⅓ cup sugar

· 6 Tablespoons melted butter

BLUEBERRY SAUCE

· 3 cups blueberries

· ¾ cup cold water

· ¾ cup sugar

· 3 Tablespoons cornstarch

· 1 teaspoons lemon juice

LEMON CREAM PIE

· 1 cup heavy cream

· 8 ounces cream cheese, softened

· ⅓ cup sugar

· 1 Tablespoon lemon zest

· 2 teaspoons lemon juice

Instructions

GRAHAM CRACKER CRUST

1. Preheat oven to 375 degrees F. In a small bowl combine graham cracker crumbs and sugar and mix well. Add melted butter and mix until it is well blended. Press into a 9 inch pie pan and bake at 375 degrees F for 7 minutes. Cool completely.

BLUEBERRY SAUCE

1. In a medium saucepan combine blueberries, water, sugar, cornstarch and lemon juice. Over medium heat, bring to a boil stirring constantly. Cook until thickened. This usually takes about 5 to 7 minutes. Cool completely.

LEMON CREAM PIE

1. In a small mixing bowl, beat whipping cream stiff peaks form. Add softened cream cheese and sugar and beat until smooth. Beat in lemon zest and lemon juice.

TO ASSEMBLE:

1. Pour cream cheese filling into cooled crust and spread evenly. Spoon cooled blueberry sauce over the top. You can garnish with lemon curls or lemon zest. Chill for 2 hours before serving.

I ate a farro salad in a restaurant and the chef was nice to give me the ingredients of the salad.

Farro Salad

The ingredients are:

Cooked Farro
Silvered roasted almonds
white chocolate in a shape of small circles (I'll switch to milk or dark chocolate, because white chocolate is all fat. That may be the reason the salad was amazing.)
Dried cherries (I'll probably use dried cranberries)

The dressing is one ingredient: Honey

I ate 3 bowls. It was a buffet style

RICE CRISPY TREATS. - GLUTEN FREE

Today I tasted wonderful rice crispy bars, gluten free. I got the recipe.

So easy to make.

INGREDIENTS

3-4 tablespoons butter
6 cups miniature marshmallows
6 cups rice crispy cereal
butterscotch and chocolate chips for decoration (the large ones)

METHOD

Melt slowly on a very low heat, keep stirring, the butter and the marshmallows.
Add the rice crispy and mix well.
Butter well 13x9 pan. Press down the mix. Make it very compact.
Press down on the top some butterscotch and chocolate chips.

Allow to cool completely before cutting into squares.

Czech Cookie bars – Good housekeeping cookies

I ate it in a party, and it was so delicious!
I asked for the recipe and Kindly got it.

INGREDIENTS

1 cup butter (2 sticks), softened
1 cup sugar
2 egg yolks
2 cups flour
½ teaspoon salt
1 cup walnuts (4 oz.), chopped
½ cup strawberry preserves (may be too sweet)
Note! Delicious with Dickenson’s Merion blackberry jam.
Use it instead of the strawberry jam if you wish. I’ll do that. See note below.

METHOD

Pre-heat oven to 350 degrees
9” square pan, greased
Beat butter and sugar until fluffy and light color.
Beat in yolks, add flour and salt and beat till blended.
Stir in chopped nuts.
Divide dough in half. Put one section into pan. Spread with preserves. Good idea to weigh the dough on a kitchen scale and then divide evenly by half.
Pinch off ¾” pieces from remaining dough and drop over preserves. DO NOT PAT DOWN!
Bake until golden 45-50 minutes. 45 minutes can be too long. Watch.
COOL COMPLETELY in pan on wire rack.
When cool, cut length wise into 3 stripes – then crosswise.

Important note!

Instead of using strawberry jam, more delicious is to use Dickenson’s Merion blackberry jam.
Put the blackberry jam in dollops on the dough and spread with the back of the spoon.

Here is the recipe with only 4 ingredients ice-cream pie
Sounds so yummy.
I saw it on a website. Sorry. I forgot the name....
I made it yesterday and put it in the freezer.
I'll serve it this Saturday for guests and let you know how they liked it.
So easy to make!!!

It was incredible

SERVES: MAKES 1 9-INCH PIE
Ingredients
2 cups crisped rice cereal, such as Rice Krispies
1/3 cup chunky peanut butter
1/3 cup white Karo syrup
1 1/2 quarts softened ice cream

Instructions

In a large bowl, stir the peanut butter and Karo syrup together until well combined. Add the rice cereal and mix with buttered hands, folding the cereal into the peanut butter mixture until well combined. Butter the bottom and sides of a 9" pie pan and gently press the mixture into the pan and up the sides. Fill the crust with the softened ice cream and freeze for 4 hours or overnight. Remove from the freezer and put in the refrigerator for 30 minutes before serving.

I went to a potluck and someone made this salad. Wonderful!

BROCCOLI SALAD

Broccoli, peeled and sliced (raw)
roasted sunflower seeds
Dried cranberries
Marzetti slaw dressing (there is also a light version of the dressing. Wasn't used in this salad....

Mix all and refrigerate

I don't know the portions.....

Gluten Free apple cake

Really good. I had a piece at a luncheon and really liked it.
*Add many more extra apples
*My favorite new Flour is bob's red mill homemade wonderful bread mix. I'll use it in this recipe.
*Can add 1/4 cup coconut and 1/4 cup raisins for a heartier cake

INGREDIENTS

1/4 cup shortening
1 cup sugar
1 egg
3 cups peeled and diced apples ( add much more)
1/4 cup chopped walnuts
1 teaspoon vanilla
1 cup GF flour
1/2 teaspoon cinnamon (or more... I like cinnamon)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg

METHOD

Cream the shortening, sugar, and egg together. Add all other ingredients
place in an 8 - inch greased pan.
Bake 45 minutes at 350 degrees.

***Can add 1/4 cup coconut and 1/4 cup raisins for a heartier cake

INGREDIENTS FOR A GIANT MERINGUE COOKIE
I love meringue cookies. Once I ate the Giant one and it was delicious. It had mini chocolate chips in it.

4 large egg whites, room temperature

Eggs Large White


Pinch of salt
1 cup plus 2 tablespoons superfine sugar
1 teaspoon cornstarch
2 teaspoons white-wine vinegar
1 teaspoon pure vanilla extract
1 1/4 cups heavy cream, whipped (I'll use Cool Whip)
10 passion fruits, for serving (optional) (no)
4 bananas, for serving (optional) (no)
Mixed berries, such as raspberries, blueberries, strawberries, boysenberries, or blackberries, for serving (optional) (sounds great)

DIRECTIONS

Preheat oven to 300 degrees. Using an 8-inch bowl as a guide, trace the perimeter of the bowl onto a sheet of parchment paper. Transfer parchment paper, pencil side down, to a baking sheet. Set aside.
In the bowl of an electric mixer fitted with the whisk attachment, beat egg whites and salt together until glossy peaks form. With mixer running, add sugar in three additions, beating until meringue is stiff and glossy. Sprinkle in cornstarch, vinegar, and vanilla; gently fold to combine.
Mound the meringue in the center of the 8-inch circle. Using a spatula, evenly spread meringue out towards the edges. Transfer baking sheet to oven and immediately reduce the temperature to 250 degrees. Bake for 1 hour and 15 minutes.
Turn off oven and let meringue cool completely in oven. When meringue is cool and completely dry, top with whipped cream and desired fruits.


I cup of fine sugar OUCH!!!!! I think I'll pass it.....

RUSSIAN BISCUITS (another recipe. Use this one)

Note! Make the dough in the food processor. Use for the filling blueberry, raspberry, apricot,or strawberries thick jam or perverse.

Ingredients for Russian DOUGH (DRY INGREDIENTS

4 1/2 cups all purpose flour
3/4 cup sugar
1/2 teaspoon salt
1 tablespoon baking powder

DOUGH (WET INGREDIENTS)
1/4 cup melted butter
1/4 cup orange juice
1/2 c vegetable oil
3 whole eggs
1 egg yolk
1 1/4 tsp. vanilla
1 teaspoon orange rind

FILLING (JAM OR PRESERVES)
blackberry preserves or jam
blueberry preserves or jam
1 1/2 to 2 cups chopped walnuts or pecans
1 1/2 to 2 cups raisins

DIRECTIONS STEP-BY STEP

1. Sift all your dry ingredients into a large bowl.

2. Now in the center of the dry ingredients make a hole and the remaining dough ingredients. Knead this all together until combined well.

3. Cover lightly with plastic wrap and refrigerate the dough for 2 to 3 hours.

4. Remove dough from frig and cut into four equal pieces.

5. To assemble: start by rolling out one piece of dough onto a floured work surface, into a nice circle or triangular shape. Now spread blueberry jam or preserves over entire circle, follow with blackberry jam or preserves layer. (you can use your own combination of jams or use just one kind). Sprinkle over the jam with raisins and then repeat using the nuts.

6. In jelly roll fashion roll the dough up nicely. Using a pastry brush brush the top and sides of the roll with egg white and then sprinkle with cinnamon and sugar

7. Cut the roll into 1 to 1 1/2 inch slices (about 10 to 12 slices per roll)and place on lightly greased cookie sheet about 2 inches apart. (Making sure the sugared side is up)
Note! Better to bake over parchment paper, greased lightly. Will not stick to the paper.

8. Bake in preheated 350 degree oven for about 20 to 25 minutes. Remove and allow to cool. (Optional . I'll not do) You can sprinkle while hot with additional sugar or drizzle them lightly with a glaze of powdered sugar, milk and vanilla)

I tasted this delicious Corn Casserole in an early Thanksgiving lunch. It was so yummy. Outstanding!!!
I requested the recipe. Now I understand why it was so delicious.

So, Here is the big question:

Shall I make it and eat a very small portion of it and enjoy it tremendously, or shall I make a makeover corn casserole that tastes just okay (compare to this recipe), and eat a bigger piece from the not so great corn casserole recipe.
I know the answer! I'm making the most delicious one and tasting a small piece.

What do you think?

CORN CASSEROLE

1 stick of butter, melted

1 can whole kernel corn, drained

1 can cream style corn

1 cup sour cream

1 pkg Jiffy corn muffin mix



Combine all ingredients, Place in a greased 1-1/2 quart casserole or 13x9

Bake 350 degrees uncovered for 1 hour

PUFF PASTRY ROLLS WITH CHEESE AND SPINACH FILLINGS

I always have in the freezer these delicious puff pastry rolls with yummy fillings, but UNCOOKED. I just fill them with any filling and freeze them UNCOOKED.
I only buy Pepperidge farm frozen sheets. (until I'll make my own puff pastry dough.........smile....)
When I want to bake them, I thaw them on the counter for about 30 minutes. I brush the outside with egg wash, and bake according to the directions for puff pastry.
I usually put it on a pre-heat oven about 20 minutes before guests are coming. I only use Pepperidge farm brand name.
$4.99 a package with two large sheets. I can make four rolls out of two sheets with a lot of filling in each one. I buy two packages for 8 rolls.

Notes after I made the puff pastry yesterday:
1. To make 6 huge rolls with lots of filling, for 25 people I use the dough as is, meaning:
I buy 3 packages of puff pastry sheets, Pepperidge farm. Each package has two sheets. 3 packages will have 6 huge rolls.
2. I made more filling of spinach/cheese, so the last roll half was filled with the ricotta cheese and the other half with spinach/cheese
3. Cheese filling: 1 1/2 pounds polio ricotta cheese and between 1/2 and 1 package of Feta cheese (I used 1/2 a package of Feta cheese. I can add more.
Fresh baby dill, chopped. 3 eggs and spices.
Spinach/cheese roll: I used 3/4 pound of mozzarella and provolone mix.
Buy 1 pound instead. Also 1 pound of grated cheddar cheese (instead of 3/4 pound.
8 packages of frozen chopped spinach (1 pound each). 3 eggs and spices.

The amounts of all the ingredients are for 6 huge rolls with lots of filling (3 packages of puff pastry)

FILLING # 1 - CHEESE FILLING for 3 huge rolls with lots of filling emoticon

1 pound crumbly white Feta cheese (or equal quantities of Feta and cottage cheese)
4 tablespoons of finely chopped fresh baby dill (or parsley or chives or mint) I use more.
2 pounds of polio ricotta cheese ( higher in fat)
3 eggs (lightly beaten)
Do NOT add any salt

Mix well all the ingredients. Fill the dough and freeze it.

FILLING # 2 - SPINACH FILLING for 3 huge rolls with lots of filling emoticon

I quadruple the recipe (by 4 times) This recipe is 4 times larger

Eight packages 8 oz. each (250 grams) of frozen chopped spinach
1 tablespoon butter (optional)
1 pound grated Gruyere or cheddar cheese (I buy cheddar. It is cheaper)
I sometimes mix regular cheddar with super sharp cheddar, but much less super sharp)
3 eggs (lightly beaten)
black pepper (to taste)
1/4 teaspoon nutmeg, optional (I love this spice)

METHOD

De-frost the spinach and squeeze ALL the water out
Add butter (optional) and grated cheese, the lightly beaten egg, and black pepper to taste.
Do NOT add salt unless necessary. Take into account the saltiness of the cheese melting into the spinach.
Mix well. Fill the dough and freeze it.

BABCI KOSTON SWEET BREAD

*** Note: I made it today. I only have a hand mixer and for this recipe I need a strong mixer with dough hook, which I don't have. It turned wonderful, but not as airy and fluffy it could be.
It was very messy to work with the hand mixer.
***Conclusion: a strong mixer machine with dough hook is needed for this recipe.

Step 1) 1/4 cup warm milk
(warm 2 cups total)
In a large bowl, Mix 2 pkg. dry yeast with 1/4 cup warm milk until thick
(if I have a yeast in a jar, 2 1/4 teaspoons equal 1 package of yeast)
2) Add 1 &3/4 warm milk
add 1 cup flour (spoon lightly into measuring cup)
Mix together

3) Let rise 1 to 2 hours in bowl covered with cloth

4) Melt 2 sticks butter and cool for later (step 10)

5) Mix 3 to 4 egg yolks and 1 white
with 1 & 1/4 cups sugar until THICK( in separate bowl)
I use my hand mixer for this.

6) Add 1/2 tsp. vanilla
1/2 shot Cherry Brandy
grated orange rind
juice from 1/2 orange TO sugar/egg mixture

7) Add 1/2 tsp. salt
3 cups flour(spoon lightly into measuring cup)
to sponge (sponge is the first 3 numbers, relating to the yeast rising and looking like a sponge)

8) add sugar/butter mixture
9) Mix 20 minutes in mixer with dough hook
10) Add cooled butter

11) Add 3 & ½ cups flour (8 total)
Mix 20 minutes more in mixer with dough hook.
12) Put dough on floured board and knead by hand until smooth. (2 min.)
Put back into lightly floured bowl
13) Let rise in bowl covered 1 hour or until doubled in size
14) Divide dough into two pieces for large bread pans
15) Let rise in buttered pans about l hour or doubled in size
16) Preheat oven to 350 degrees
17) Bake on middle rack for 30 minutes or until nicely brow
18) Take out of pan and cool on racks

TWO " NOT GUILTY" PLEASURES TO "DIE FOR"

Here are two recipes that do not fall under healthy eating, but on rare occasion, we can have a small piece.
I made the apple pie and the brownies for a large group, and they all wanted the recipes.
Both can be frozen very well, months before the event.
Just take them out 3 days before your event, to the refrigerator.
It is nice to warm up the apple pie in the oven, and if you have Ice Cream, put one scoop over the warm apple pie.

On a scale from1 to 10, (10 is the best) , the apple pie and chocolate brownies are 15 !

emoticon DECADENT CHOCOLATE BROWNIES TO "DIE FOR"
Please read recipe first.
*** At one point you need to work pretty fast.
Pre-heat oven to 350 degrees
*** See list of ingredients on bottom of recipe

INGREDIENTS

Mix A:
Put in a large bowl:
2 cups flour
2 cups sugar

Mix B:
Melt on the stove on LOW heat:
1/2 cup margarine
1/2 cup Crisco (I used butter instead)
1 cup water
4 tablespoons cocoa (I used Hershey's Cocoa, natural unsweetened)

While melting Mix B, put 1 teaspoon baking soda in 1/2 cup buttermilk in a cup.
If you don't have buttermilk, you can mix instead 1 teaspoon vinegar with a little over 1/2 cup milk,

Add melted Mix B to Mix A (sugar and flour)
Now add to it 2 eggs.
Then add the buttermilk and baking soda.
Then add 1 teaspoon vanilla.
Use 15 1/2" x 10 1/2" greased pan.
Bake for 20-30 minutes.

*** When COOLING ( for only 10 minutes) the baked brownies, make QUICKLY the frosting.

FROSTING

Melt on the stove on low heat:
1/2 cup of margarine
5 tablespoons milk
4 tablespoons cocoa

Take off heat. Add to that ONE POUND powdered SUGAR (yes! one pound)
Now add 1 teaspoon pure vanilla AND 1/2 cup chopped nuts, your choice (optional. I didn't add nuts)

While the cake is still WARM, add the hot frosting on top of the baked warm brownies. Make sure the frosting does not fall to the sides of the brownies.

Cool and refrigerate

These brownies freeze beautifully.
Before your event move them from the freezer to the refrigerator.

Enjoy (a small piece)

LIST OF INGREDIENTS NEEDED
2 cups Flour
2 cups Sugar
1 cup margarine
1/2 cup butter or Crisco
1 cup water
8 tablespoons Cocoa
1/2 cup buttermilk (or vinegar with milk)
Baking soda
2 teaspoons pure vanilla
1 pound powdered sugar
1/2 cups nuts. Your choice. Optional
2 eggs

1. I like to mix Fuji and granny Smith apples. More Fuji apples.
2. I use at least 3 times more apples than the recipe indicates. Add more water and lemon slices
3. Make the cake when apples are on sale......Remember: You can freeze the cake very successfully.
4. Size of pan is 10" diameter

INGREDIENTS

THE FILLING

3 pounds apples
1/3 cup of sugar
1/2 cup water
2 slices of lemon

DOUGH

2 cups flour
1 teaspoon baking powder
1 cup sugar
1 stick of margarine (2/3 and 1/3)
2 egg yolks
1 tablespoon sugar (I use a little more)

DIRECTIONS

1. Peel, Core and slice the apples. Put in a pot on the stove and add the sugar, water and lemon.
Cook for about 10 minutes until the apples are soft, but still keep their shape.
2. Pre heat the oven to 350 degrees and make the dough:
In a large bowl. put in the flour, baking powder and sugar.
Add 2/3 of the margarine and egg yolks. Mix until you get crumbs like barley size.
3. Put aside 1 cup of the crumbs for later.
Put the crumbs dough in a greased pan. Press the crumbs down and lift a little to the sides. Press well.
4. Drain the liquid from the cooked apples and arrange them over the dough. Put the reserved 1 cup crumbs over the apples.
cut to little pieces the 1/3 margarine stick and spread over the crumbs. Spread now the 1 tablespoon sugar on top.
Bake about one hour, until the cake get a nice golden color.

Serve either cold or better, warm cake with Ice Cream on top or whipped cream.
Yum!

You can cool it well and freeze it, if you wish.

CHOCOLATE AND WALNUTS CAKE

The frosting is optional.
This is not a friendly weight watchers cake, but rarely I make it and serve it when I have guests. I can enjoy a small piece too. Everything about moderation.
It freezes beautifully and tastes divine. Very easy and quick to make. While the oven is pre heating , the cake is ready for the oven.

INGREDIENTS

5-6 oz.(150 g) semi-sweet chocolate (or chocolate chips)
1 1/4 (150 g) sticks of butter (or a little more)
1 cup (200g) sugar
3 eggs
1 cup (140g) rising flour, sifted ( I use all purpose flour and add to it 1 1/2 teaspoons baking powder and 1/2 teaspoon salt, mixed well with the flour)
1 cup (100g) chopped walnuts
1 cup (160g) chocolate chips (milk or semi sweet)

DIRECTIONS
1. Pre heat oven to 350 degrees.
Melt the 1st chocolate and mix with the butter and sugar.
Take off the heat and add the eggs, one at a time, mixing between
2. Add the flour, walnuts, and 2nd chocolate and mix well.
3. Pour into a greased 9x13 pan (or a little smaller) and bake around 40 minutes,
Watch the cake after 30 minutes and check often the oven. It may be ready a little sooner.
Cool the cake completely (you can freeze it now, or make also the frosting)

Optional frosting (delicious. I add it)

1/4 cup pure maple syrup
small container of heavy cream

Mix together over low heat until boiling. Let it boil gently for 1-2 minutes.

Pout the HOT frosting all over the COLD cake
Wait until frosting is cool. You can freeze it now, if you wish or refrigerate, ready to serve.

Before serving, take out the cake from the refrigerator and let it "warm" up about an hour.

Enjoy

SINFUL SWEET AND SAVORY

Why have this food category when the title of our team is "superb healthy recipes" ?

Personally, I can't be perfect and I do not wish to be perfect. Sometimes I crave those sinful sweet or savory foods. Sometimes I don't want the lighter healthier version of the real thing.

The article below describes well those rare occasions when kale or celery will not satisfy as comfort foods.

MODERATION! MODERATION! MODERATION!

Sometimes, a small portion of the really sinful sweet or savory food, may help me the most.

In this food category I'll post those dishes that I still make today (for many years, mainly for company) and enjoy them tremendously, eating a small portion.
Indulging rarely in sinful sweet and savory foods, helped me stay at maintenance for almost 14 years.

This food category may not fit all of our members. I totally understand and respect those member's wishes.

If you wish to share some sinful recipes, that will be wonderful.
