One of the things I realized I missed most in quarantine when trying to fit more veggies into my week is a good chopped salad. Stores like Stop & Shop generally put the Dole chopped salad mixes on sale for $3.50, which is a steal compared to the $10+ charged by chopped salad shops in NYC. I stock up for the week (checking expiration dates), and now I have several good lunches lined up. Even if I eat the whole thing in one sitting, most cap out at around 450 calories for the whole bag, including toppings and dressing.

I go to Aldi or Walmart and get my fruits and vegetables most of the time. I like celery, carrots, apples, cucumbers, pickles, mini peppers, sweet potatoes, bananas, spinach, to name a few. I also like tuna packets, salmon packets, and chicken packets that you can get at Walmart for around $1.00 to $2.00 a pack. They are low in sodium and good for lunches. I like avocado but they can be a little pricy depending on your budget but it’s a good healthy fat and is filling. Some other options is oatmeal which is filling and boiled eggs.

I figure with the impact of covid-19, people may struggle with the cost of healthy eating. Healthy foods donít have to be expensive! Please leave any ideas you have.

My go toís:

Cabbage (Red or green)
Carrots
Onions
Beans (any variety, canned or dry)
Bananas
Oats

With cabbage, I make Cole slaw or I will cook it with other veggies.
I sautť lots of onions with other veggies or with beans.
Canned beans are convenient. Dry beans are cheaper and healthier. I soak overnight and cook them in a crockpot with some broth for 6-8 hours. Dry and canned chick peas and black beans have been staples, as well as canned refried beans. I eat beans in place of a meat or I will make a burrito with them. Hummus is another great idea.
Bananas go great with oatmeal for a filling breakfast.
