Yo, Jill... have you ever tried putting apples and/or dried cherries in your salad? Or, in fact, putting apples and/or dried cherries in with your pumpkin or other squash?

Both mixtures are really yummy :) I love putting a touch of fruit in a veggie salad... it's like a fun surprise in those bites :)

My eating's been pretty typical for me... prunes are my main source of fruit, and I eat raw chopped veggies for snacks and leftover cooked veggies for lunches.

Yesterday I had green beans.

Today I don't know what I'm having yet, as I ran out of leftovers yesterday :(

Better think fast, 'cause I gotta start packing my lunch...

yess Im branching out!
yesterday, I had a big party to go to and picked out healthy things.
an asian salad with romaine dried cherries almonds mangerine oranges. then I had
broccoli, tomatoes, bananas and( apples in brown beans) gotta get that recipe it was good.

LOL, Vicky, 4:30am is a late dinner!

I peel the beets and slice them. I lay them on a pan lined with baking paper and sprayed with cooking spray.

This time, I lightly sprayed the tops again with cooking spray, then sprinkled a little Balsamic vinegar over the tops -- only a tiny bit, because I don't like things that are too vinegar-y.

I've also peeled and boiled them -- they take a LONG time to boil, though.

I don't cook the green parts -- in fact, the way I buy them, they don't come with the greens anyway.

Jill, it definitely looks like salad! If you're comfy with what you're eating, it's not a rut... if it's a rut, then it's time to find things you'll enjoy more :)

So my last veggie was, in fact, my roasted beets. Before that was salad with cukes, tomato, avocado and yellow pepper.

My last fruits, of course, were dates and prunes :)

I just love beets, but I'm terrible at cooking them.
How do you prepare them, Mo? Do you peel them? Do you cook the green part too?

Last fruit: clementines (4 of them)
Last veggie: red tomatoes in a salad (eaten with an omelet).
I ate with my dd at 4:30 am. It was breakfast for me and (late) dinner for her. Oh boy, those teenagers!

I finished my roasted veggies from last week's batch. I also had prunes. I'm thinking about making a salad if I get hungry again before bed.

It's good to have a home computer and internet access again, and to be able to come back here!

My eating has been poor in fruits abd veggies lately. We've been eating lots of leftovers from dd's party - it's been protein and starch type.

Last fruit: an apple and dried prunes.
Last veggie: mushrooms and onions in pasta sauce.
That was that for yesterday.
Hmmm... time to come back here regularly and get inspired!!!

Isn't it funny how there's stuff we used to like, but when we stopped eating it, we forgot about it? I go in phases, and eat the same things for a month or two, then change up... and suddenly I'll remember something I was eating a year ago and start eating it again.

Btw, the dish I made for my Saturday lunch/lunches for the week went something like this:

Big roasting pan
Chop up spaghetti squash (what we have here isn't quite spaghetti squash, but it's close) into big chunks (like 2"x2"x1/2" squares), spread in pan.

Chop up zucchini into big chunks, spread on top of/around squash

Thinly slice a large onion, sprinkle the slices around.

Chop up yellow pepper very finely and sprinkle around.

Chop up tomatoes (I used cherry tomatoes) into small pieces and spread around.

Put chicken quarters on top of the vegetables.

Sprinkle liberally with your favorite herbs/spices (I used parsley, basil, a little oregano, garlic powder, and some rosemary)

Bake until the chicken is done. The juices from the chicken run onto the veggies, and then the veggies also have a great flavor.

good for you mobear , you are always so creative ,I guess that's the experience we will have soon. I hope. My mother loves couscous, and I forgot I use to make apples and walnuts with lowfat yogurt, thank for reminding me!!!!!!!!!!!!!!
