Today I used my Instant Pot to help me make a batch of japaleno jelly, a batch of tomatillo salsa, and a batch of tomato basil sauce.
With my Ball electric water bath canner I was done with all this is a mear three hours.

As soon as I can get an onion and a bunch of cilantro I'll be putting up more salsa. We are out so definitely next year need to make double (and maybe triple) what we did this year. I am also down to 2 pints of strawberry jam so I need to get the strawberries out of the freezer and put up some more jam.

I did make that apple butter and it was so good that I decided to go get more apples from the neighbor and make more. I just finished canning those 4 pints. It is amazing how many apples it takes to make apple butter.
Between the two batches I used 13 pounds our apples and it made only 6 1/2 pints.
It was less hands on and no splatter since I used my Instant Pot to first pressure cook the quartered and cored (not peeled) apples and then put it on slow cook for 2 four hour periods to spice, sweeten, and thicken. I merely strained out the peels with my hand strainer.
I'm now set for the next year and also have a few last minute Christmas gifts if needed.

I was given some plums the other day and made a plum sauce with them. I canned 1 pt and kept one in the frig to enjoy now.

last weekend i did 13 qts and 1 pt of marinera sauce. last night i did 4 qts of diced toomatoes, today was 2.5 batches of freezer corn. i am not planning on doing more beans. i think i have plenty and my plants are clost to being done. so ill give them to my sister if she wants more.

yesterday, i helped my mom and grandma do saurkraut. we ended up with 78 pints. last night i did frozen sweet corn. tonight i'll freeze some more green beans.

i generally only can tomatoes or tomato sauce. i dont use enough beans or corn for 1 meal to can pints maybe this year ill try apple sauce if my sister gets extra apples.

We have a ton of raspberry bushes in our yard and they are all fruiting now. Most are golden, which are not our favorites, but the reds are really good.
The other day I spend about 20 minutes picking reds and then canned eight pints of whole berries in a simple syrup. This way I can use them in various ways rather than just as jam.

Yesterday I took about 15 lbs of frozen (I picked last year) elderberries and turned them into jam, berries in syrup, and syrup. Two cases of pints and half pints.
I used my electric canner that I learned about on this team a few years ago. It really makes the process easier not having to deal with the stove top canner.

Yesterday I took a pound of strawberries and changed them into 1 1/2 pint of canned strawberries in syrup and one 1/2 pt of just strawberry syrup.
Two days before I made the same strawberry syrup with another pound of berries but turned that into a cake and frosting. YUM.

I have thought about making baked beans, I would have to do more research on my recipe, up here beans have more molasses, less brown sugar, and no ketchup, most people use pea beans, also known as navy beans, they are quite small. Usually salt pork is used, but I have used bacon before.

I miss doing the Bean hole beans, they are done in the ground overnight, my pot takes 10 lbs of beans, so it is nothing I would do with just me!

I made 21 jars of Baked Beans with Bacon !
Jars filled with Prepared beans 2/3 full, then added onion and raw bacon...

Then added Sauce...

Jars out of the pressure canner...

Here is My Recipe....

Baked Beans My Recipe 1-20-20

4 lbs. Great Northern Beans, rinsed ( Anasazi Beans, creamy)

10 cups water

1/2 cup Molasses

1.5 Tbl. Kosher Salt

1.5 tsp. dry mustard

4 cups Ketchup

1 cup brown sugar

2 cups maple syrup

few drops liquid smoke or Hickory Powder

4 cups diced onions (1.5 cups dried onions)

Bacon cut into 1” pieces

Quick soak beans...Boil for 2 minutes, turn off heat, cover and let sit for 30-60 minutes. Drain...

Put beans back in pot, cover with fresh water, return to boil, 15 mins.

In another pot, mix rest of ingredients, minus onions and bacon, slow boil. Should be sweet but not thick.

Fill jars 2/3 with beans, divide onions and a few pieces of raw bacon to each jar, add sauce to 1" head space. Debubble ! Return to 1” head space.

PC Pints = 75 minutes. Quarts = 90 minutes

Last night I finished canning 26 pints of double strength beef stock. I had a huge bag of bones from the beef I took to market. I had bones from both mine and my brothers. It made rich delicious stock!

I also rendered the suet from my beef, ended up with 10 1/2 lbs of rendered suet!

The reason I had so many red onions was from the garden, I usually plant plants rather then sets, they do so much better. However they do come in fairly large bundles, I planted both red and yellow and they lasted me all winter and into the spring. Then there were more red ones and they were starting to sprout so I made a big batch of French onion soup to can. I love having that on tap for a quick meal! As a result I had quite a few bags of peelings to take care of, and there was a crunch in my freezer because my brothers 1/2 beef and lamb is also in my freezers until we meet. So the broth making was needed right away, also doing beef from the bones.

It only happened that once. All the other times it was so good !

I tried some onion broth from skins yesterday, the result was really bitter broth, I simmered it overnight and it did have a onion smell, but the total bitterness doesn’t make me want to proceed from here, it is nothing I would want to cook with, I am sure the extreme bitterness would ruin what ever was prepared with the broth. I am wondering if it is my taste buds, I have always had extreme taste problems, so bitterness along too much sweetness and even the caproic acid in goats cheese is not something I can tolerate. I used a mix of red and yellow onion skins, and added peppercorns, celery, a couple bay leaves, salt and some thyme. But all I can taste is bitter, I know salt masks bitterness for me sometimes maybe I will check that out.

The suet cakes look great, I just got back the beef so I have a huge chunk of suet to take care of along with a big bag of bones for stock, thinking about discarding the onion stock and doing the beef now.

Made a 5 gallon pail of very red applesauce from one of my favorite trees yesterday, put 20 quarts of applesauce in the freezer, plus saved some for breakfasts!

Also finished stuffing 5 lbs of hot Italian sausage. Pork has been very cheap lately, 99 cents a lb, so I bought two roast, ground them up and made 5 lbs of breakfast sausage, and 5 lbs hot Italian sausage. So much better then the ones in the store now.

I pick up apples off the ground down the road from us, making sure there are no punctures on any that I collect.
All along I have been making pies, crisps,and bread with them for eating and the freezer, until today when I made and processed 7 pts of spiced apple preserves.

I went to the flea market early this morning...I got another bushel of roma tomatoes emoticon to make more spaghetti sauce later this week....the last batch I made was fantastic! thick, flavorful and very tasty...

6 quarts of thin tomato sauce done
i was going to do juice but i boiled it and it becaue thicker then juice but i think it was thinner then store bought sauce. i will eventually used it for marinera so it should get thicker.

I bought tomatoes from the flea market Sunday for spaghetti sauce...I ran them through the processor, bagged them and froze them ready for the job this coming Sunday... emoticon

today i cooked down some tomatoes and canned juice - 1 pint and 3 quarts. i still have more in my freezer but i had a counterfull and i did not want to plug in the other freezer to store more tomatoes.

today i did frozen corn. rmy dh helped but otherwise did it by myself. normally i do it with my mom. i helped her and my sister last weekend do applesauce. i may try making my own in a couple weeks

Bought some nice fresh blueberries and strawberries the other day. Today I canned them. Only two pts straw and 3 pt blue berries, but something for the winter.

Yesterday I put up 16 pts of my own bbq sauce.
So far this season this is the only thing I have canned. My garden is only two small boxes of salad like veggies for the two of us.
I have frozen some things but that's it.

Last night I finished 30 pints of double strength chicken broth curtsey of the 7 roosters I was sent instead of pullets. They were quite large, I vacuum packed the breasts, and cut up the rest for the stock pot. There was also a couple packages of chicken feet from the big Cornish cross from last summer, I know a lot of people will say ewww, but they make the best flavor stock, and scrubbed up are really no different then other parts of the chicken.

After going through all the onions from my garden I decided to go ahead and make French onion soup. I peeled and cut up a pile of onions that resulted in 12 lbs of onion slices. I spent quite a while one day slowly caramelizing the onions in small batches, while I deboned 3 huge 3 gallon pots of chicken. So it was easy to finish up the onion soup while the chicken stock was pressure canning. The broth part of the onion soup was 16 cups of my homemade bone beef stock, along with 2 cups of red wind and spices. I simmered the stock and other ingredients separately and filled the jars with 1 cup of heated caramelized onions then topped with the broth. I ended up with 2 pressure canner loads 14 quarts all together. 75 minutes is a long time to pressure can, luckily it was only 2 batches. One jar didn’t seal so I had half the jar for lunch, it is delicious!

I still need to work on my onion stock, I have 7 gallon bags stuffed with onion peelings. After looking at the video it looks like they only used one bag for 6 or 7 quarts. It doesn’t seem to be enough, but only doing it will tell.

I have been saving the onions for a while, last fall I made and canned huge batches of spaghetti sauce, pizza sauce and tomato soup, lots of onions there! Made a lot of tomato paste too, first batch was 3 quarts and I used that for the.sauces, second batch was just as big and I canned that in small jars. I usually give veggie scraps to the chicken but I think I may collect some of them to make vegetable stock, I love having good stock on hand. I made lots of chicken and turkey stock when processing the birds for the freezer.

Maple syrup season is just starting up here, I am thinking I will skip it this year, I still have a lot left and my knee is not going to like the snowshoe thing, it has been troubling since the trip down the barn stairs not on my feet lol. Also too much going on right now with lambing and I have 13 calves I am feeding, and it seems like the AI breeding is picking up lately.

I was gone from SP for a year, but it is a good reminder to stay on reasonable track, so I am back. I missed a lot of people here!

You save your scraps, too ? I tried this last year, saving onion, celery, carrot, parsnip etc. scraps in the freezer. Mostly onion skins and ends...It made the most wonderful onion broth ! So nice to have it on the pantry shelves ! :}
How's your syrup going this season.? So far, we have 7 gallons and still have a week or 2 to go. I tapped some black walnut trees and made syrup ! So Good !

I have two gallon bags of onion peelings in the freezer, I think I will try some French onion soup first to can then use the peelings on onion broth all together.
