Thanks for sharing the links, Bob. As a vegetarian, it's easy for me to give up meat. That's why I'm tackling refined sugar this year.

I'm a year-round vegetarian, so I have to discover other things to give up--but how did it work out for you? (4 years ago, my wife gave up meat for Lent--but she hasn't had any since!)

Lent is also my favorite season of the Church year. I have used it to launch healthy lifestyles as well as some spiritual disciplines. One year I did South Beach and gave up all sugar and white carbs.

Do you eat tofu? I like tofu marinated in soy sauce and rice wine vinegar with garlic, ginger and sesame oil, then browned in a fry pan or on an indoor grill. (Cast iron gives it a nice crispy outside!)
I've also got a good eggplant and tofu stirfry recipe. I'll post it as soon as I can find it!

I'm not sure how big you all are on the season of Lent, but it is my absolute favorite season the church year and Ash Wednesday kicks it all off tomorrow. I'm going the traditional route with Lent this year and giving up meat and eating vegetarian for the next 40 days. However, I don't want that to derail my healthy lifestyle efforts, so I'm wondering if anybody has any good recipes for the Lenten vegetarian? I appreciate the help!
