Layered Strawberry Tirasmu 180 calories of yummy

Prep Time: 15 min Total Time: 3 hr 15 min Makes: 20 servings What You Need!1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened 3-1/2 cups cold milk 2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding 2 pkg. (3 oz. each) ladyfingers, split 1 tub (8 oz.) COOL WHIP Strawberry Whipped Topping, thawed 2-1/2 cups sliced fresh strawberries 2 squares BAKER'S Semi-Sweet Chocolate, grated Make It!
BEAT cream cheese in large bowl with mixer until creamy. Gradually add milk, beating until well blended. Add dry pudding mixes; beat on low speed 1 min. or until well blended.

COVER bottom of 13x9-inch pan with half the ladyfingers; top with layers of half each of the pudding mixture, COOL WHIP and berries. Repeat all layers.
REFRIGERATE 3 hours. Sprinkle with chocolate.
I get the calories down more by using sugar free pudding.

this is good as a side dish and I keep a bowl in the refrigerator all summer.

3-4 Cucumbers, sliced thin
2 green onions, about 1/4 inch slices
1/4 cup apple cider vinegar
1/4 cup balsamic vinegar
salt and freshly ground pepper to taste.

Toss everything together, marinate a few hours in refrigerator before serving. Cool and refreshing side dish.

I am getting hungry reading these....

Claremont Salad

1/2 head of green cabbage sliced thin
3 carrots sliced thin
2 cucumbers sliced thin
2 stalks of celery sliced thin
(I use my food processor to slice)
1/3 cup apple cider vinegar
2/3 cup olive oil
1 TBL celery salt
2 TBL sugar
Pepper to taste

Combine all the veggies in one bowl. In a small bowl combine the rest of the ingredients. Pour the dressing over the veggies and mix to combine. Refridgerate the salad for at least 1/2 hour before serving.

Makes 12 servings at @ 150 calories per serving.

Summer Salad

A simple, fruity salad with a twisted dressing. The salad below is for one serving, but the dressing may yield extra.

15 Minutes to Prepare and Cook

Ingredients

For the salad:
1 cup cut/shredded romaine lettuce
0.5 cup sliced cucumber (with peel)
Half a small pear, cut to bite-size pieces
10 raspberries, preferrably fresh
6 seedless grapes, cut in halves

For the dressing:
Two heaping spoonfulls of any light or skim fruit yogurt (I often use strawberry)
1 tablespoon light mayo
1 tablespoon olive oil
Lemon juice to taste, the acidity is needed


Directions

Take the shredded lettuce and put in a bowl. Next, on a cutting board, cut the cucumber into slices, cut the pear into bite-size pieces, and halve the grapes. Add these to the lettuce in the bowl.

Next, to make the dressing, you take another (smaller) bowl and first put in the yogurt. Next add the mayo, olive oil and lemon juice on top. Mix well to combine.

Spread the dressing over the salad you just prepared. The recipe may yield more than one serving of dressing, so it can be stored for a few days in your fridge.
Serves one.

oh perfect, this is exactly what I need! I'm moving into my new apartment soon and have been looking for recipes!

I like Greek Salad:
lettuce, chopped red onions, cucumbers, and tomatoes mixed together. (cals vary, depending on how much of each ingredient is used)
1 oz. of feta cheese (70 cals)
5 kalamata olives, halved (50 cals)
dressing: mix together 1 tbs. olive oil, a little bit of crushed/diced garlic, and 1 tbs. red wine vinegar (about 120 cals)

total (for one person) comes to around 300 cals, depending on the amounts used. It's fast, delicious, and nutritious!

My favorite salad...I have it about 3 or 4 times a week

1 cucumber, peeled and sliced
5 small tomotoes, quartered
2 cups baby spinach
3 ounces grilled chicken
1 ounce cheddar cheese, shredded
1 ounce onion, raw and chopped

this can be up to 3 servings and around 258 calories (although I usually take the entire thing in for lunch and have it in 2 settings - My "Elaine from Seinfield" inspired BIG Salad)

I make salads alot to take to work. Alot of the salad recipes come from wwww.hungrygirl.com Here is one I like:

Ingredients:
3 cups chopped romaine lettuce
2 oz. cooked boneless skinless lean chicken breast, chopped
2 slices (about 1 ounce) extra lean
turkey bacon
1/2 cup cooked & chopped asparagus
1/2 cup chopped tomatoes
1/4 cup canned beets, drained & chopped
1 large hard-boiled egg white, chopped
2 tbsp. shredded fat-free mozzarella cheese
1 tsp. minced scallions

Directions:
Cook bacon according to package directions (either in a pan with nonstick spray, or in the microwave). Once cool enough to handle, chop and set aside. Place lettuce in a large bowl. Add your chopped ingredients by placing them on top of the lettuce in individual rows in this order: turkey bacon, cheese, asparagus, chicken, tomatoes, egg white, and beets. Sprinkle the scallions on top. Serve with your guilt-free dressing of choice (check out HG's latest grocery list for some of our faves), and enjoy! MAKES 1 SERVING

One of my faves is to chunk watermelon, freeze, then make add water to cover in the blender with a little sweetener. Blend and enjoy! It is super-refreshing!

ASHLEYGRACE- I make that salad all the time.

I love to grill, so my fave thing would be cedar planked salmon, with veggies on the grill seasoned with lemon pepper and olive oil. SO tasty!

Here is a pasta salad recipe that gives you lots of veggies:

6cups cooked penne noodles cooled in the fridge
1 cup feta cheese crumbled
1 bag of baby spinach rinsed and drained
1 small carton of little tomatoes
1/2 cup chopped fresh basil
1 can of black olives pitted - empty out the juice
1/3 cup olive oil and 1/3 cup balsamic vinegar mixed in a jar shaken, adding pepper to taste

Mix together about three hours before serving. Chill.

You are what you want to be

Salmon on the BBQ is my favourite summer recipe:
Wrapped in aluminum foil, top it with all your favourite spices (I like to use dill, lemon juice, oregano and paprika) and grill it nice and slow, Delicious!! emoticon

I make a chocolate smoothie.
I have frozen bananas in the freezer and I'll take one out throw it in the blender with a chocolate underground yogurt(stoneyfield) and wahla! If I have berries that need to be used I'll throw them in also:) emoticon

We make soup a lot since it is really refreshing even in the summer. With corn, black beans, carrots, peas, onion in a chicken broth with beef bullion and mushrooms, also I add a lipton side order of pasta and it sauce packet for a good hearty soup.

I love soup year-round, but am not a fan of soup with clear broth. So I chop summer veggies - any will do, really - sautee them with onion and garlic, simmer them in broth until they're soft, then hit them with my immersion blender. Add your favorite seasoning and you're good to go. If you can use a crock pot, even better, since you don't have to heat up the kitchen. And you can imagine how vitamin-loaded this soup is, as well as being low-fat. You might add some beans (garbanzos are my favorite!) for protein, or maybe sprinkle some shredded parmesan on top...or both! Yum!

In the summer I take chopped zucchini, tomato, yellow squash, and corn: and saute them with just a bit of oil or butter. I add cumin and salt pepper and maybe garlic. Cook until everything is yummy and soft. It is very colorful and pretty. emoticon

I am with ADAMII, with the tomatoes and mozzarella, but I also do Cantaloupe wrapped in prosciutto. ADAMII is right the Italians know how to do it.

My husband has a garden in our backyard. I add his fresh vegies to stir fry meals. We also freeze the vegies for use all summer/fall long.

I want to eat more zucchini so the other night I sauteed garlic and onions in olive oil, added some cannellini beans (rinsed to remove most of sodium) salt and pepper to taste and canned tomatoes (drained most of the juice out) and chopped up some zucchini and covered to cook. Grated some fresh parmesan cheese over the top. It was good as is or could be served over ww pasta.

I split it in half. I cut the watermelon inside into chunks.
Then I use a big bottle of Sprite and pour
it over the watermelon and serve for something different!

Ok one of the things I have been eating here in Italy is caprese. Fresh tomatoes and buffalo mozarella together with a little olive oil and basil. It's simple the tomatoes here ar teh MOST delicious in the world and everything is very fresh. I dont think the mozarella di bufalo is the thing to eat when trying to loose wheight but it is delicisous! Italians swear by it. I try not to over it too much of it. Try! I'm sure it could be made with a slimmer mozzarella.
