I almost made all three meals meatless... breakfast and lunch. I'm on call for week this week and it was very busy today, worked too late.

I did pick out some tips from the spark article. I've been working from home since March 14th, been slipping into sloppy habits so I have this printed out and put it on my desk for daily reminders......

Keep a water bottle nearby in the office, your car and at home, and sip frequently.
Walk around or stand while talking on the phone.
Shut off all technology at least one hour before bedtime.
Build in time to practice stress management techniques on a weekly basis. Try meditation, yoga,
Keep your desk free of unnecessary clutter. Assign a daily time dedicated to a quick cleaning.
Ask for help when you find yourself procrastinating because you need more information or don't know how to complete a task.
Make firm decisions around when you are working and when you are not, and stick to that decision. The more often you make exceptions, the more blurred that important line will get.

Any pasta dish with veggies and marinara will do for me. Especially if it involves mushrooms.

My favourite meatless meal is baked spaghetti squash.
I cut it in half, clean out the seeds and roast it at 350° for about 30 minutes. While it is baking I quick fry some fresh veggies (onions, zucchini, garlic, tomatoes, broccoli, etc), add some basil, oregano, S&P, and about half a jar of bottled pasta sauce (Classico tomato basil is my favourite). I pull the squash, drain off anystanding liquid, pour the sauce over top, then top it all with shredded cheese and return it to the same oven for another 10-20 minutes.
Simply scrumptious!
