For those who have issues with dairy products for any reason (health, choice, religion, et al) I encourage you to look up recipes utilizing butternut squash for making something that can fool the tastebuds of cheese-heads.
Here is a link to a website that offers such a recipe, easy to adapt for many dishes:
www.veggieinspired.com/butternut-mac
/

This will help my calorie-intake, bad cholesterol, high blood pressure, obesity, and help me get minerals and vitamins into my wife's diet.

I am a disabled caregiver for my disabled wife, living below the poverty level. It is possible to be healthy and eat on a budget.

May the forks be with you.

Can't have too much sugary creamer in your coffee? Before perking, sprinkle any spice you like, such as ground cinnamon, on your coffee grounds. Tastes just like expensive flavored coffee. Use a little skim milk if you like. I want to maybe use some vanilla extract. Ground cinnamon tasted delicious. At a $1.00 a bottle of whatever you like at Dollar Tree, you are saving alot of money while you are at it.

Kathleen, a good while ago, I found once (then could never find again) on-line a woman who had a list of items at Dollar Tree that you could find coupons for in the Sunday circulars and on-line. So, here are some items for you that may be found at Dollar Tree AND you just might be able to use a coupon with also!

Some of these may be sweet, but as diabetics know, there are times when the blood sugar is low and you need to have something sweet. Good to have, right?

Also, there may not be very much to work with here, but you just have to be creative. Being that you are tired of pasta and eggs, I did not include. But, as you probably know, Dollar Tree has pasta, eggs and even pizza crusts. Dollar Tree has pizza sauce, cheese, pepperoni, mushrooms and crusts! Why not make pizza? However, if not, here are some groceries to work with and be creative. Don't forget to look for coupons!

Snyder's Pretzels
Snack Pack
Luigi's Italian Ice
Banquet Breakfast Meals
Dannon Yogurt
Frozen PicSweet Vegetables
Jimmy Dean Breakfast
Progresso
Nature Valley Granola Bars
Nescafe Taster's Choice singles
Snapple
Sunny-D
Brisk Tea
Arizona Tea
Lance Cookies, crackers, peanuts
Hunt's Diced Tomatoes
Hormel Pepperoni
Libby's Canned Vegetables
Kraft Sizzling Salads Dinner Kit
Vlasic Bold and Spicy Pickles
International Delight Coffee Creamer

GRALAN,

What advice would you give Kathleen? How about YOU other team members...what would you suggest?

Kathleen, you have a very good question...

First of all, do you live near a Dollar Tree?

I would love to know how to eat healthy on VERY VERY little money for diabetes. All I eat now is eggs, toast and pasta. I just don't have money to get in 2 meals a day any other way... or so I believe.

There are different problems people have when buying food and cooking, such as health problems. For examples, anywhere from anorexia to hypoglycemia.

Often, people need to know just what they do need...having enough money, knowing what to buy and how to prepare.

I think as members of Sparkpeople that we should address this.

Any comments? emoticon
