Southwestern scrambled eggs:

1/2 C. diced green & red peppers
dash diced onions
1 & 1/2 C. egg-beaters (southwestern or regular)
3 oz. fat-free or low-fat ham
dash chili seasoning

1) Spray pan with Pam and cook peppers & onion on medium-high for two to five minutes, until peppers just slightly translucent on edges. Remove from pan.
2) Spray same pan with more Pam. Pour in eggs. Sprinkle with chili seasoning. Scramble.
3) Add peppers, onions, and ham. Cook for about two minutes, until heated through.

Serve with salsa (if desired).

Cream of Mushroom Soup-

2 large cans 98% fat-free cream of mushroom soup
1 large can chicken with rice soup
8 oz. sliced fresh mushrooms
1 green pepper, diced
1/2 C. onion, diced
1 & 1/2 cans water (use empty can from above)
1/2 to 1 C. minute rice (I use brown)


Stir well and cook 3 hours at 250 degrees, stirring well every hour.

Strawberry Salad

2 pkgs tapioca pudding
1 pkg strawberry jello ( I use the bigger box of jello
3 cups water
cook to a boil, stirring.
add 1 box frozen strawberries and stir until thawed
cool completely and then add a 8 oz tub of fat free cool whip. Stir and refrigerate.

"Healthy" Egg McMuffins

Okay, I have another breakfast one. I got this from a WW cookbook, but I adjusted it slightly.

2 Weight Watchers English Muffins
1/2 C. Egg-beaters
4 slices Canadian bacon
2 slices fat-free chedder slices

1) Toast muffins

2) Divide egg-beaters into two "coffee" cups. Microwave until egg-beaters are done. Do NOT stir. Pop egg-beaters out of cups..this will leave you with two round cooked "eggs"

3) Heat canadian bacon either in microwave or boil in water on stove.

4) Split english muffin. Place one cheese slice on each muffin. Top w/ 2 slices canadian bacon. Top w/ one "egg" each. Place top of muffin on.

Healthy French Toast:

4 slices "healthy bread" (I use Sara Lee 45 calorie 100% whole wheat bread)
1/2 C. egg-beaters
2 Tbsp. fat-free skim milk
dash cinnamon
Sugar-free syrup (I use Smuckers)

1) Heat a large skillet on medium/ med.-high heat.

2) Mix egg-beaters, milk, and cinnamon in a bowl.

3) Spray pan w/ Pam. Dip each slice of bread in egg mixture coating thouroughly. Place in pan. Cook 2-4 minutes per side, until well-browned. Repeat with each slice.

4) Serve w/ sugar-free syrup.

I'm going to add a super simple and super good one as it's Summertime! And, you can make it as lo-cal as you can do!

Who says you can't have an ice-cream sandwich this Summer -- or any time! Make your own and let your imagination go for choice of flavors and combinations of the same!

Take 1 reduced-fat sandwich-type cookie (read the label to see the calories, etc., that you track) -- but up to you -- Split the cookie apart -- scrape out the frosting -- and spoon on a tablespoon or two of frozen yogurt -- again your choice of flavors -- in place of the frosting -- put your cookie back together and that's it! You can make these ahead of time -- wrap them well and individually -- I've used wax paper first and then plastic wrap -- and store them in the freezer for a quick and lo-cal snack for the whole families wonderful Summertime treat! Easy to make and easy to feed that urge for something a little sweet, but one without all the calories, etc.

1 small bag Navy or Baby Lima beans
1 package Hilshire Farms Smoked or Jalapeño Sausage
1 small or ½ large bag of little Carrots
1 small or ½ large Onion
1 can Green Peas
1 can Evaporated Milk (or substitute equal amount of the milk you drink)
1 tsp. Salt
Course Ground Black Pepper to taste
A very large dash each of…
Mrs. Dash’s Onions and Herbs
Mrs. Dash’s Table Blend
Garlic Powders
2 dashes Worcestershire Sauce
Cook beans until tender: do not drain. Add sausage, carrots, and onions. Simmer on medium heat for 15 to 20 minutes. Add remaining ingredients and simmer on low heat for 15 to 20 minutes, or until the carrots are tender. Good with corn bread or crackers, or just by itself.

1/4 tsp celery seed (optional)
1 16-ounce bag of ready-shredded coleslaw mix

In a small bowl, whisk mayonnaise, cider vinegar, mustard, sugar and celery seed together. Empty coleslaw mix into a large bowl. Pour dressing on top and toss. If you need to thin it a little, add a tablespoon or two of nonfat milk. Refrigerate until ready to serve.


We liked this and I will make it again.

Bake as directed on box

cut into 18 pieces (if you are doing weight watchers this is 2 pts per slice )

We just tried this recipe and loved it. It's "Whole Wheat Vegetarian Pizza".

For the crust you need:
1 pkg. dry yeast
1 c. water (very warm)
1 tbsp. honey
2.5 c. whole wheat flour (not white flour!)

Sprinkle yeast into water; add honey, stir, and allow to stand 10 minutes. Add flour and work to form dough. Knead and place in lightly oiled bowl. Cover and let rise about 45 minutes. Punch down and spread on pizza pan. We like our pizza crust very thin, so this made enough dough for two 16 inch pizzas. I had to take a plastic tumbler and really press to spread it out, but it made a great thin crust. I precook the crust for about 7 minutes on 350 so it doesn't end up being soggy from all the veggies.

For the other ingredients:
Fresh garlic (if desired)

Low calorie spaghetti sauce (50-60 calories per half cup. You could use pizza sauce if you want to, but we were trying to save on calories and sugar.)

Low fat mozzarella cheese (enough to cover the sauce; more or less depending on your preference)

Fresh veggies: We use onions; zucchini, yellow squash, sweet peppers (red, orange, and green), and mushrooms. Also, artichokes and hearts of palm are great.

Cover the pizza crust with up to a bottle of the spaghetti sauce.
Put as much garlic as desired on top of the sauce, then cover the sauce with the mozzarella cheese. Add the desired veggies on top of the cheese.

Cook at 350 degrees until everything is hot and the veggies are completely cooked (about 20 minutes in my oven).

I love this recipe because of its versatility. Any kind of spaghetti or pizza sauce can be used, as much or as little cheese as you like can be used, and you can select any type of vegetables that you want! If you wanted to add some cooked chicken breast or ground turkey that would still make for a healthy pizza.

I hope other people enjoy this recipe, too!
