10 Minute Chicken & Noodles in the Pressure Cooker

2 TBS Extra Light Olive Oil
4 oz Kielbasa Sausage, 1/2" dices
1/2 lb Button Mushrooms, stemmed & quartered
1 C Yellow Onion, small dice
1 C Carrot, small dice
1 C Celery, small dice
1 TBS Garlic, thinly sliced
8 - 10 C Chicken Broth/Stock
2 lbs Chicken Meat
2 C Elbow Macaroni or small shell pasta, dry
3 sprigs Fresh Thyme
1 Bay Leaf
1 TBS Essence
1 TBS Kosher or Sea Salt


Set to the Browning setting and add the olive oil.

Place the sausage and the mushrooms in the bowl of the pressure cooker and cook, stirring until the mushrooms and sausage are well caramelized, about 5 minutes.

Add the onions, carrots, celery and garlic to the bowl and cook until most of the liquid has cooked out of the vegetables, about 5 minutes.

Add the remaining ingredients to the bowl, being sure that the liquid does not exceed the max level on the side of the bowl of the pressure cooker.

Place the lid on the cooker, being sure that the pressure limit valve is set to close and seal the lid to the machine.

Set the cooker to "High" pressure and the timer to 10 minutes.

Start the machine and allow the soup to cook undisturbed.

When the timer goes off, set the pressure limit valve to the steam release setting and allow the pressure to slowly escape.

Sweet Snack Mix (or Christmas Popcorn)

14 cups popped popcorn
2 cups rice krispies
2 cups salted peanuts
1 pound white candy coating
3 Tbs. creamy peanut butter.

Mix together popcorn, rice krispies and peanuts in a very large bowl. Melt white candy coating and peanut butter together, stirring until smooth. Pour candy mixture over the popcorn mixture and thoroughly stir with a spatula, being careful not to smash the popcorn. Spread out in a thin layer on wax paper and let dry.

Now that the days are getting colder, there's nothing like a big pot of chili to warm you up.

Keeper Chili

1 lb Ground Beef
1/2 lb Ground Turkey
1/2 lb Italian Sausage
1 Onion, chopped
1 clove Garlic, minced
1/2 tsp Pepper, ground black
dash Cayenne Pepper
8 oz Tomato Sauce
8 oz Tomato Paste
8 oz Water (rinse out tomato paste can)
1 can Rotel tomatoes with green chilies
1 tsp Brown Sugar
1/2 C Pace Chunky Salsa, med. or hot, depending on how you like it
2 Chipotle Peppers in Adobo Sauce, seeds removed, chopped, +
1-2 tsp Adobo Sauce
15 oz Light Red Kidney Beans, rinsed & drained
15 oz Dark Red Kidney Beans, rinsed & drained

In a 4 Qt. kettle (or larger), brown the meats in batches, to insure they brown, rather than steam - Pouring off excess fat between batches.

With a slotted spoon, remove meat into a stainless steel bowl lined with paper towel to drain.

Brown the onion.

Add everything back into the kettle.

Mix well, and simmer for at least an hour. The longer the better.

I've never used this recipe but discovered it while searching for a hazelnut bread recipe... its from Cooking Light web site, so only providing a link:

Pork Roast - In The Crock Pot

Cooking time - 6 to 8 hours on low - Depending on crock
My crock pot does this recipe in 6 hours if the lid is not lifted during cooking.

1 lb. small red potatoes, cut in half
16 oz. pkg. baby cut carrots
1 onion, chopped
2 tsp. garlic, minced (I use the stuff in a jar)
3 lb. boneless pork loin roast, trimmed of fat
1/4 cup Dijon mustard
1 tsp. dried tarragon leaves
1 tsp. dried thyme leaves
1/2 tsp. salt
1/4 tsp. pepper
1-16 oz. can beef broth
Place potatoes, baby carrots and chopped onions around bottom of 4-6 quart crock pot.

In small bowl, combine mustard, minced garlic, tarragon, thyme, salt and pepper.

Spread mustard mixture over the roast. (I smear it on with my hands, covering all sides.)

Place roast in crock pot and pour beef broth over all. Cover crock pot and cook on low for 6 hours until pork is 150 degrees F and vegetables are tender.
