I was raised in the south & grew up cooking like Paula Deen so becoming vegan was a shock at first however, I love to cook so all of the new dishes I have learned to make hooked me!!! I love cooking delicious vegan feasts & seeing the surprised look on my familys faces when they realize how absolutely yummy fruits, veggies & beans can be!!
I have found so many delicious things that I never knew exsisted before!

This is so true! Almost always the wait staff and even kitchen staff at a restaurant will work with a vegan to make sure that everything is okay. I have personally been able to eat at a wide range of places, even at Outback Steak House! It isn't that I particularly wanted to eat there; the point is that I was able to.

I agree that most of the time people who think it's hard don't want to do it. Then again, eating meat and dairy is so cultural and so many people have done it throughout childhood, so it's a pattern that is reinforced by their upbringing and by society.

I have found that folks who claim it is too difficult really do not want to do it.

I have found that even eating out the restaurants do work with me and even offer suggestions on way to make healthier choices.

I second the fatfreevegan website for great recipes- a great one from that website to take to potlucks in a crock pot is the african peanut stew- everyone likes it, it is easy and not too expensive to make, and you have a yummy and hearty vegan and calorie-appropriate meal even if there isn't anything else there you can (or want to) eat.

Now it's the season here in the Midwest for gourds of all kinds! I don't even recognize some of the gourds in the grocery store. It seems like every possible type is ready for harvest.

Did you know that the cantelope and the pumpkin are in the same family? That I did not know! I was watching my husband carve out the inside of a cantelope yesterday and I commented on how it is a bit like carving a pumpkin, and he gave me that tidbit of information. He used to have a lot of property, with an orchard and huge area for all kinds of fruits and vegetables. When it comes to produce I trust him (well, being my husband, I do trust him in everything, however recognize that one of his specialties is produce). emoticon

I LOVE butternut squash and butternut squash soup!!! My dad used to grow his own squash in his garden, then we'd eat it in the fall. He split it down the middle, took out the insides and mixed a bit of butter/butter substitute in, and baked the halves. Yummy!!! Fall always reminds me of my dad, with the pumpkin carving (he also used to grow pumpkins), the raking, squash, etc.

Do you have any fall rituals that just seem to really mean something to you like I have with those memories of my dad? Are you making new memories with your own kids?

Don't overlook pumpkin soup. Many people haven't tried it or thought of it, however it's very good and nutritious. I can't find a good recipe for it or I'd give you a link. My aunt makes some mean pumpkin soup though; I'll see if she'll give me her recipe for you!

Guess my favortie vegetable for today would be butternut squash. I made spicey butternut squash soup today and it was yummy!

My fave veggies? I personally favor tomatoes (though botanically classified as a fruit), crooked neck/yellow squash, and baby spinach. For fruit I like berries (except raspberries!), and bananas.

I'm happy you found some recipes that were written vegan. They're really a lot easier to work with, because the person who wrote it already did all the "veganization" for you. I learned to convert omnivore+vegetarian recipes, however I think that took a little effort, time, and knowledge of what vegan substitutions are out there to pull off.

I have some ideas for you.

There are several great places to find vegan recipes. I use the Spark recipe database and select that I want it to search vegan recipes. I also go online. A good site is www.fatfreevegan.com

As far as cooking dairy-free, there are good substitutions if you're using regular vegetarian recipes and converting them to vegan ones. I use Earth Balance, a vegan alternative to butter and margarine, for cooking and as a spread. It can be used in equal proportions in the same way you would use dairy products. There are other types and brands also available. I'm just telling you what I personally use. Tofutti brand and Tofurkey brand are both good for dairy and meat substitutes. Those are just 2 of several on the market that I personally have had good experiences with.

There is even Egg Replacer. I can't remember the brand name; I'm sure someone here has a better memory than I do and can recall the brand name. It acts as a binding ingredient, like eggs, in cakes and other baked goods. It won't make an omelet, but it can help with a cake. Apple sauce is a good alternative, and there are others as well.

There are different routes you can go with vegan cooking. There is always trying to convert meat/dairy recipes (some of which are omnivore recipes and some are vegetarian), and then there is using recipes that were written as vegan. I prefer to use the ones written as vegan. This is because it takes the advanced guess work out of trying to substitute the meat and dairy. I can use those omnivore and vegetarian recipes, however it takes some time to learn how to do that. For your purposes, I'd stick with vegan recipes and learn from there.

Google or use Amazon (or whatever you prefer) to find vegan cookbooks. Veganomicon is a good one, and the author of that book (can't remember her name) has written several other vegan cookbooks. She's pretty good. I like her books because they are written in conjunction with a nutrition expert and the nutrition breakdowns are given with the recipes.

Hello to all!!! Today was a busy day of shopping for me, along with getting my driver's license renewed.

Why is it that the people at the BMV conspire to take the worst possible pictures of us every time, so that we look like someone on a Wanted poster?

Last time I tried to get my license renewed was last month. I couldn't pass the eye exam, even with my glasses! I had to go to the eye doc and he doubled the strength of my prescription. Ouch. I'm almost 33 and my eyes changed that much in the 2 years since my last exam.

Have no fear; today I passed the dreaded eye exam and got my picture taken, and look like a serial killer on my driver's license.

Since I don't drink and therefore don't buy alcohol, no one will ever see my DL, so I don't have to worry about people thinking I look evil, right? That's what I keep telling myself anyway. We're going to Vegas in a week and the airport people will be looking at my license, and they'll probably want to see it to make sure I'm of age when we go to clubs in Vegas (I look a lot younger than I am).

Wow, it's August already!!! This means that there are only a couple more months of nice weather (at least here in Ohio) before the fall sets in, and then it's ICE for several months straight, until spring starts to come around again.

I tell myself every year that this is the LAST year I'm living here; we're moving to Virginia! I want to go south enough where it's a bit warmer, however not so far south that there are BUGS. BUGS aren't on my menu!

That's one of my little secrets- I'm so disgusted and disturbed by bugs. I'd rather live in North Dakota and be bug-free and put up with the weather than live in Florida in bug heaven.

Has anyone been up to anything interesting? We're going to Vegas in 10 days!!! I've been spending some time getting ready for the trip.

Any suggestions on how to make a Vegas trip one to remember? Also, any states or areas I could move to and avoid both extreme weather and bugs? (It seems that they're mutually exclusive).

Yeah, sorry about that. emoticon I haven't been feeling all that great lately, and so I've let my teams (I have 2 teams) slide a bit while I've been recouping.

I feel much better now, so onwards and upwards!

For the ladies- What's your favorite go-to store for your more formal dresses? Keep in mind that I wear an 8 (can't wear Torrid clothes, even though some are cute!). I'm going to Vegas next month and need a couple of dresses I can wear to shows. I'd like one that's more on the conservative side and one that's a little wilder, but not TOO wild

For me - I accept what God allows - I believe that God orchestrates or lets things happen. When I say that God has ordered your steps, I mean from Psalm 119:133
"Order my steps in your word: and let not any iniquity have dominion over me." For me these words mean Order my steps in thy word - My goings, or, my conduct and life - by thy word; according to thy requirements. Let me be wholly obedient to thy will.

So for me, this is your ordained time, God has set the whole thing up. That is how I see it, and not to try to say that you would see it that way.

I was told once that prayer is a form of meditation. You get into the same brain wave state in prayer as you do in meditation, hence the categorization.

What do you mean for how God has ordered your steps? I'm not sure I understand what you mean and I'd like to understand it.

While I've never been told that as far as I can remember before, it came to my mind while I was meditating the other day. I told my husband on our walk yesterday that we both have each and every day to wake up and make it our best day- it's our responsibility to do that. I take that to mean do my best in every facet of my life, from weight loss to my marriage, family relationships, etc.

Team- It's really doable! You know, in the beginning of this journey I felt like it would never end. It would be impossible to lose 40 lbs. It would be like me finding buried treasure in the back yard. I changed my lifestyle, and went with it, but never really visualized the end game. I couldn't see a day when I would be at goal.

Now I'm seeing it! It's going to be real! Only 19 more pounds to go! I'm over half way!

Some of you have already hit goal and are maintaining. Others are just starting, like I was. It's worthwhile I think, at any stage of the weight loss journey, to respect your progress and always have another goal. That goal doesn't have to be weight related; we all have stuff in our lives to work on. Having a healthy weight is just one piece of being a healthy person.

I can't talk about my husband's food, because he ordered tuna steak and I obviously don't eat that.

My food, a veggie burrito, was really good. They used a non-dairy sauce for it that made it just yummy.

I did get into some tortilla chips emoticon , however not too many, and that was it for my bad behavior.

Sorry that I wasn't around yesterday. I was pretty busy and didn't have the chance to get in front of the computer.

Did I mention that I'm starting grad school at the end of August? I'm pretty excited about that.

I know I've talked about the Vegas trip.

I'm losing an average of 2.7 lbs/week.

Thank you. I love learning, I just don't always feel like doing the work - but I get around to it. Next week will be one of those weeks for me. I got work to make-up. My doc's visits went well, please read the blog for May 19.

SWEETLIPS- That's quite an accomplishment! Congrats! You'll have to keep us informed!

As for me, I'm getting my Master of Education in Human Resource Education. This is a fancy way of saying that I'll be helping people in companies to learn and work better together.

On some days I'm enthused, and on other days I'm not. I guess that's the nature of the beast. That's how I felt about undergrad, so I guess that's just me.

In August my husband and I are going to Vegas! Woohoo!!!

I'm disappointed that at poolside I won't be drinking adult beverages due to my meds, but that's okay. I can always order a Shirley Temple. emoticon

I applied for a job yesterday. We shall see how it goes. The store is going to be having a huge sale soon, and they need more associates to work it. I hope they hire me. They have panel interviews, with a few candidates being interviewed at the same time by a manager. I think I can do well and stand out in that kind of arrangement.

Any tips?

So true!
I've given up giving myself sugar and all kinds of confections. This is because then my body craves them, and it makes it hard to say no to eating them again. I used to eat my weekly vegan cupcake from the local vegan bakery. No more! Now I'm focusing on staying away. I don't want to make my efforts harder.

Have you noticed that for yourselves, that eating treats makes it harder to resist treats? My husband is in this journey with me and noticed that for him it's true too.

I SO believe that, too. I've never met a vegetable I *couldn't* like, given enough time and a variety of preparations. I prefer salty foods, but hot fudge used to be my treat, I do love chocolate.... maybe real, vegan fair trade chocolate could be a very occasional splurge, but that other crap is just that, crap.

I've been popping fresh blackberries like candy the past couple days; they are just luscious in season.

I am making raw vegan snacks and sweets now. Being raw, they are highly concentrated, so I eat less, like fudge balls or fudge itself, brownies, I have now even moved to lighter ones, like lemon puddings or chia puddings. As we grow our palate's will change, the more vegan or raw vegan one becomes, you may find you desire far less sweet and more savory. Just added by 2 cents worth - sorry with gas prices it won't get a cup of coffee.

SWEETLIPS- Thank you for sharing that with the team! I believe in the powers of gratitude, persistence, and prayer. We all need to appreciate the blessings we have.

Evelyn- I'm sorry to hear about your loss. I think your mom would have approved of the way you spent your day. We all need emotional catharsis to face the battles ahead I think.

As for eating fudge, well, unless it's homemade vegan fudge I've given up on trying it as a "treat". A long, long time ago I gave up on non-vegan or even overly processed vegan treats. They just make me feel unhealthy and give me heartburn! What kind of "treat" is that? emoticon

Cearabrede, I agree with Evelynf, your mother would approve as well as Evelynf's day of grace as well. Keep working towards your goal and even if there is a slip, it is not final, you just begin again with the next meals.

Team leader, I have been at this since 2009 and not so much as a hard dedication, but small changes and a lot of faith in the creator - trying to keep my temple clean. I can do better thought. I eliminated eating out for a few months, added in exercise, express gratitude, I have learned to have laugh fest, and I smile. Here recently, I had another bout with cancer, and I truly believe that my attitude and my faith was the key in reduction of my tumors without having to work with traditional medicines. Thank you for asking.

Cearabrede I can empathize, my mom passed away a year ago yesterday. I spent the day in my garden, I think she would have approved and I think yours would have too. She would be very happy with the healthy choices you are making and glad to know that what happened to her is probably saving your life.

Glad you're feeling better, Sweetlips, and thanks for the encouragement! Really, thanks, everyone. I'm loving my food. I used to have such a nasty relationship to food - I "loved" food in that I was so addicted to it, my life revolved around when I could eat next, overeating, restricting, trying to restrict, guilt.... and now I just love food for the sake of how it makes me feel and how it tastes! I still eat way too much whole grains and starchy vegetables (oh, potatoes, how I adore you!) but that's way better than any refined flour or animal fat.

Yesterday was really hard for me because my mom passed away in December - of heart disease, one of my primary motivations for pursuing health through a vegan lifestyle - and her birthday would be tomorrow, so I did allow myself to put a big ole spoon of hot fudge on my banana after our mother's day cookout at my inlaws and mope in the morning, but I know she'd be so proud of me and the changes that I'm making. I just wish I could've shared it with her. (And the hot fudge tasted chemically and acidic and totally gave me heartburn, so there you go. Today my splurge was the most delicious blackberries ever on my oatmeal.... :G:)
