That is a touch decision to narrow it down to one. I really like chick peas and tofu.

I could not possibly agree more!!! I ADORE avocados (they call me GuacaMolly!) I used to think they were horrid - I mean they're green for Heavens sake! But when I grew up (read: turned 20 maybe!) I fell head over heels in love. I think the best part is it can make a vegan meal feel a bit... decadent, you know what I mean? If vegan mayo is not an option, throw on an avocado. If you're craving a creamy pasta dish like Alfredo, make an avocado pesto. Things like that. All hail the humble avocado! :-) ~ Molly

What single food/ingredient do you think is the healthiest for vegans?

I'm actually voting for the humble, yet often overlooked avocado. I should eat more of these and find myself in the same mindset that maybe many of you have, and that is that because they're fatty that they must be bad. Not so. The avocado is full of good stuff, and has the magic power of being filling, so after half an avocado we're not tempted by other food as much.

What's your favorite go-to food for instant power and nourishment?
