my favorite cookbook is "Get Healthy, Go Vegan" by Dr. Neal Barnard. At first I was unsure about some of the recipies because they seemed odd to me (combination wise) but they were yummy, filling, low calorie, and most important -- HEALTHY! (and vegan)

forks over knives cookbooks i feel like is healthy and tries to appeal to meat/omnivore eaters like lasagna and cream of broccoli deluxe, etc.

I love any cookbook by Happy Herbivore. Her food is really good and uses supermarket foods so you don't have to buy fancy VEGAN stuff.

My husband, an omnivore, loves food from The 15-Minute Vegetarian Gourmet by Paulette Mitchel. I make the recipes vegan by substituting milk for almond milk, etc. That seems to be his favorite.

When you're cooking for omnivores, every hint helps!
