The new Spark cookbook is on sale for 16.00 on Amazon instead of it's regular almost $28,00.
Maybe that would help. need help with cooking too. I hate it and I need minimal ingredients and not spicy,

My goal is to decrease my dependence on fast food. I work two jobs and I don't know how to cook a lot of different meals and the time to cook is a factor sometimes. But I am making progress and cooking more and bringing food to work. But I have much further to go. :)

I took a walk the other day, over 2000 steps, but I don't know the mileage because I forgot my pedometer. Friday is my next walk day. I'll keep you posted.

No worries if you get winded- I do too. I take a seated walker and a ton of water with me on walks. That might be something to look into.

Wake up team! It's a brand new day and the Holiday season is coming quickly.
This year let's make it our goal to LOSE, MAINTAIN, JUST DON'T GAIN!

I challenge everyone to set a brand new goal for themselves. What do you want to reach by New Year's Day 2012? Be very realistic- no crash and burns.

I have started to walk a mile every day.
Last week I lost 4.8lbs and this week I hope to increase this to 2 miles a day.

I can now walk 2 park loop laps before I need to sit and rest my back.

I am trying to walk another 2 laps before i sit but have only managed to go as far as 1.5 before I have to sit again so by next week I want to be able to do 2 laps then sit and then do 2 more laps and sit and then see if I can do 1 more lap after that.

We had this for dinner tonight and hubby loved it, I thought it was OK but I am not the chicken fan he is.


Spicy Honey Brushed Chicken Thighs (found on Cooking Light)

Ingredients
2 teaspoons garlic powder
2 teaspoons chili powder
3/4 teaspoon salt
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon ground red pepper
8 skinless, boneless chicken thighs
Cooking spray
6 tablespoons honey
2 teaspoons cider vinegar
Preparation
1. Preheat broiler.
2. Combine first 6 ingredients in a large bowl. Add chicken to bowl; toss to coat. Place chicken on a broiler pan coated with cooking spray. Broil chicken 5 minutes on each side.
3. Combine honey and vinegar in a small bowl, stirring well. Remove chicken from oven; brush 1/4 cup honey mixture on chicken. Broil 1 minute. Remove chicken from oven and turn over. Brush chicken with remaining honey mixture. Broil 1 additional minute or until chicken is done.

I prepared a chicken and dumplings recipe but the sodium content ended up too high. I made a Sweet and Sour type chicken recipe today that was good with 284 calories for a 1 cup portion. Contents are: 2-4oz chicken breast, can of no salt french style green beans, small can of pineapple slices in 100% juice, frozen 3 color peppers and 2T Apricot jelly and 3/4 instant brown rice. It was very filling and loaded with lots of good things.

I made some salsa to go with my fish.

1 mango diced
1 tomato diced
1 small red onion diced
1 jalapeno with or without seeds diced (no seeds if you don't like it hot)
1 tsp of lime or lemon juice
1 tablespoon of olive oil
balsamic vinegar to taste

Mix together and enjoy.
