Patty Pan Squash and other not-so-e very-day veg

I enjoy white eggplant.They seem a little milder to me.
I like different color / varieties of veggies.

Last night I made eggplant lasagna using a white eggplant. Neither dh or I noticed a flavor difference. This one had a lot of seeds but I doubt that had anything to do with the color.

That's interesting. I just get what 's at the market. I would love to grow my own.

I love Cukes, too. For salad dressing I purée one with a little low-fat sour cream. I also put a slice of cucumber in my water. Very refreshing.

I love patty pan squash. I did not grow any this year. We had so much rain that my squash is struggling this year. I have not tried any new veggie this week.
I do have four different types of cucumbers growing very well this year. It is fun to cut them up and see this difference. They make such a nice cool snack. I have them for breakfast, lunch, dinner and snacks.

Love the new team challenge: Eat an extra veg each day. Hope you join the goal.

It so happens I bought patty pan squash at farmer's market. It's great to be able to get something a little different to try out. Now I have to learn to prepare it and collect some recipes to try.

What new veg have you tried? Would you get it again or even grow it? What would you like to try?
