I made my Trader Joe's green drink today! Lot's of pumpkin, emoticon yogurt, protein, greens galore! I feel GREAT! Happy Friday, (date night w/DH) emoticon emoticon

I'm also going to clean our pool, today! it was 67 degrees when I checked. So I'll turn on the solar & hope for a little warmer! I'll be REALLY moving! emoticon It really needs my attention!

The cookbooks aren't written by anyone affiliated with Trader Joe's, that's why they aren't in the stores. They aren't actually a Trader Joe's product, they just include recipes that use their products.

1 container of Tabbouli (Middle Eastern Salad) mixed with 1 can of Trader Joes tuna in olive oil (mix in olive oil from the tuna as well). Eat on pita chips! DIVINE!

I didn't see them at the store...I found them on Amazon...Trader Joe's has several cookbooks there...I just got my vegetarian cookbook...looks delicious and...it's full of TJ humor and advise

I've never seen the tj cookbook, where is it in the store?
I have been using the pre cooked brown rice :-) :-) :-) :-) I know it maybe a bit lazy, but delicious; plain; with veggies & tj terrickai backed tofu; or baked with almond milk, raisins, tj egg whites, & cinnamon for rice pudding!!!!! Love it!!!! emoticon

I made up a cold salad last night with TJ's Harvest Grains Blend, and it's just perfect for a day like today.

1/2 bag TJ's Harvest Grains Blend
1/2 TJ's Golden Cherry Tomatoes, halved
1 medium Cucumber, chopped
1 medium Red tomato, chopped
1 Avocado, chopped
2 tbsp Olive Oil
2 tbsp Lemon Juice
1 tsp Garlic Powder
1 tsp Black Pepper.

Prepare the Harvest Grains according to package. Mix in the rest of the ingredients and refrigerate for an hour. I let my salad sit over night, and it is wonderful! Next time I will add TJ's Roasted Red Peppers as well.

LAZY VEGETARIAN CASSEROLE FOR ONE

1/3 Cup TJ's organic black beans
1 yellow summer squash, sliced
1 TJ's Organic Tofu Veggie Burger
1/3 Cup TJ's Salsa Verde

Pour beans into a soup bowl, add the remaining ingredients in the order listed. Microwave on HI for 5 1/2 minutes. emoticon

Here's a wonderful quick snack: goat cheese medallions or cranberry chvre on Almondina cookies! It's similar to cheesecake.

One medallion on 3 Almondinas=170
1 ounce cranberry chvre on 3 Almondinas=180

I'm sure it would be great on Triple Ginger Cookies, too!

I made the salmon - it's really easy. Just mix soyaki and dijon mustard. Marinate salmon for 10 minutes and broil for 6 - DONE. It was absolutely delicious.

I made a chicken curry with Trader Joe's yellow curry sauce, their Rice Noodles, and the frozen red, yellow, green bell pepper mix. I also toasted some of the wheat Tandoori Naan. Easy, quick, and super delish!

I think the book is interesting because it shows all kinds of variations using TJ's products. Sure, I can come up with some on my own, but I love to get ideas that are new that I would never have thought of. Plus, putting a meal together is quick and easy which is perfect for those evenings when you have to run out the door for kids sports or activities and don't have time to make a dinner from scratch.

Got the "recipe" book - it has recipes and large photos of the dishes they make. As my co-worker commented: it's just a bunch of products mixed together. LOL Of course, he's the same person who makes Indian dishes with jars of pre-made sauces and naan bread he buys at the supermarket. The good thing about the book is it shows you how versatile all the TJ's things are, when assembled in a mix-and-match fashion.

I made this last week because my husband bought some Rutabaga and I didnt know what to make with it. It is quick so easy. Tastes so much better than it sounds, I promise. My husband loved it. Its sweet, spicy and hearty. Hope you like it.

1 tablespoon olive oil
1 pack of TJ chicken andouile sausage
1 pack TJ chicken and apple sausage
1 onion chopped
1 red bell pepper julienned
2 large Rutabagas diced
2 large carrots chopped
1/2 cup chicken broth
Pepper to taste

cut sausage lengthwise and put in pan with olive oil until browned on all sides. Then add onions and bellpepper. Cook until onions are soft and browned. Next add rutabaga, carrots, and broth. Cover and cook on low heat for 25 minutes or until the veggies are soft.

For dinner I made yummy Shrimp Pitas:

TJ's pita bread (100 cal for 1/2 the pita round)
2 tbs TJs organic roasted yellow tomatillo salsa (my fav)
Little bit of romaine lettuce

Then I took some of the cooked tail-off shrimp in the freezer section, and after thawing them, I tossed them in a hot pan with another 2 tbs of salsa & a lot of curry powder. When they were warm I added them to the pitas.

Garnish with fresh lime juice

-It's wet and messy, but worth it! Wait to put the salsa on last, because my pita got too soft because of it. :( Maybe put the lettuce in first, then shrimp, then lime juice, and salsa last.

The whole thing was just over 200 calories. You can make yourself 2 if you like to use up the entire pita.

Wow. I used Basmati rice instead of the 8-grain package, and it was amazing! So delicious. I figured out the nutritional content. Tons of carbs - yum! I also posted a pic on my blog. Thank you!

Got inspired by the new Meal Guide Fearless Flyer and tried the Chicken Gorgonzola & Fusilli.
1/2 pkg TJ's Italian Fusilli Pasta
1 pkg TJ's Chicken Gorgonzola (from freezer section)
1 Tbsp Olive Oil
Grated Parmesan Cheese

Just prepare pasta, add cooked chicken (comes with veggies and plenty of sauce). I like the addition of the Tbsp oil and fresh grated cheese. Can be served hot or at room temperature - I just added some fresh fruit and a glass of Soave for a complete meal.

Some other interesting possibilities in the flyer - has anyone else tried them?

FYI I ran this recipe through the SP recipe calculator and got these results per serving based on 4 VERY generous servings:

Calories: 365
Total Fat: 3 g
Cholesterol: 12.5 mg
Sodium: 489
Total Carbs: 64 g
Dietary Fiber: 12 g
Protein: 21 g

The only things I add to make this a total meal are a glass of iced green tea and some fresh fruit.

Here's a great main dish salad to serve on a hot summer day - super easy and no heating up the kitchen!

1/2 bag TJ's Brown Rice Medley - prepared according to package instructions
1 can TJ's Marinated Bean Salad - undrained
1 5 oz can TJ's Solid White Tuna in Water - drained
1/2 med. onion - diced
1/2 stalk celery - diced

mix together and serve on a bed of lettuce or on crispy whole grain crackers

I need to post the recipe I tried from TJs ~ you know the kitchen demo they give in the back of the store?

I will make it a 2nd time and figure out the nutrition, and post again. My family did not really like it but then, they do not like most of the healthy stuff I make and eat. LOL

2 cans of TJs marinated bean salad, drained
1 jar of TJs sun dried tomatoes, not drained, chopped
Crumbled feta cheese
Serve chilled

1 pkg. Trader Joe's 8 Grains (couscous, etc)
1 bottle TJ's Yellow Curry Sauce
(Optional: 1 can TJ's Coconut milk)
Cooked, tail off Shrimp

Bring 3 cups water to boil, add grains, bring back to boil, cover and remove from heat. Let stand 10-15 mins.

In large crock pot, pour coconut milk and 1/2 bottle of curry sauce and shrimp (I put mine in frozen, but you can thaw if you want). Heat for a bit and add grains when they are ready, pouring in the rest of the curry. Let sit in crock pot till you're ready to eat--or until the shrimp are thawed!

I have a piece of TJ's Naan bread with it--yummy!!

Today for lunch I made a TJ's recipe.

Stir fry the mini zucchini and yellow squash (about 3 each) and an onion in about 2 tbsp. of olive oil. Add some fresh basil. Stir fry until tender and add a bag of the pre-cooked brown rice. Mix and add 1 c. of the lowfat shredded mozerella and put the lid on it until the cheese melts. This is super yummy and makes 4 servings at about 180 calories each! All the ingredients were from TJ's.

I made the best dinner last night courtesy of Trader Joe's. I was there shopping Saturday and they had the back section where they make things and have samples. They had scallops with bruchetta sauce and pasta. Yummy and super easy to make! You just thaw out the scallops and then sautee them in white wine. Add the bruchetta sauce after about 3 minutes and serve over pasta. Totally delicious and super easy!

Shortcut Chicken Mole - this one's turned into a family favorite:

1 bag TJ's frozen organic brown rice
1 cube Dorot cilantro (frozen section)
12 oz boneless chicken breasts, cut bite-sized
1 TB olive oil
1-2 TB unsweetened cocoa powder
1 tsp ground cumin
1 jar TJ's Salsa Verde
1/2 pkg TJ's frozen tri-color sliced peppers
1 small onion, diced

In a large skillet, cook chicken in hot oil for 3 min or until brown - drain. Sprinkle chicken with cocoa powder and cumin, stir well to combine. Add salsa, sweet peppers and onion. Bring to a boil; reduce heat and simmer about 6 min. until veggies are tender.

Cook rice for 3 min in micro - mix in cilantro.

Serve chicken over hot rice - 4 servings

Nutrition:
334 calories, 5g total fat (1g sat), 49mg chol, 549mg sodium, 44g carbs, 3g fiber, 26f prot.
27% vit A, 94% vit C, 7% calcium, 21% iron

What a great idea! I think I will check into the library and if I end up liking the book enough then I will purchase it. I always forget about that resource.

dena the cookbook has a lot of good n easy recipes

if you have a public library close by see if they have a copy of the book to lend ... if not perhaps you can request it
the library is a great resource .. i even request movies n tv series on dvd . the price is definitely right FREE!!!

Here's one I made last night with leftover chicken.

Sophy's Teriyaki Chicken Pizza

TJ fresh pizza dough
Diced cooked chicken
TJ organic Jack Cheese
Part skim Mozzarella
TJ Island terriyaki
Portabello mushroom
Yellow squash
zucchini
bell pepper
Sweet maui onion

Let the dough come to room temp. Shred up a quarter of a portabello or 2 baby bellas, about 2-3 inches squash & zucchini. Dice up a slice of bell pepper & a slice of onion. Spray a small skillet with olive oil and saut. Putting on a lid over low heat will help steam it faster. Add about a tablespoon of terriyaki.

Roll out the dough, brush with terriyaki and layer on the cooked veggies. Add the diced chicken then shredded cheese. I used one part jack to 2 parts mozzarella. Use as little as possible so you don't overpower the asian flavors.

Bake at 450 for 10 minutes and enjoy with green tea and edemame as a side dish. We all enjoyed it.

For a lower carb recipe, use less crust and roll it out thinner for a larger pizza.

I fallowed the directions on the box of Quinoa, cooked up some ground Turkey, added a can of Tomatoe sauce, chopped my freshly sprouted beans and seeds I got at the Farmers Mkt. with celery and fresh pressed garlic and sprinkled it with a little low sodium soy sauce and it was great! emoticon

So.CA Desert..... What I resist, will persist. I can achieve what I believe. Life is what I make it. If it's to be, it's up to me. ("I" need to take the action!) Just do it! Utilize, don't analyze. Oh yah, baby steps, baby steps...

Tuscan Pasta

3 c TJ Mini Ravioli, cooked as directed
1 bottle TJ Low-Fat Basil or Tuscan Italian Dressing
1 bag TJ Petite Peas, thawed
1 Red Pepper, diced
1 pkg of your favorite TJ Chicken Sausage
1 tub Perilini mozarella cheese

Cook sausage until done. Slice thin and let cool. Mix pasta, sausage, dressing, peas, red pepper and cheese. East and enjoy!

There is also a Trader Joe's cookbook on Amazon.com. It is not put together by Trader Joe's, but by a couple of ladies. There are a lot of recipes and it is on my wish list right now.
