I had a similar recipe I tried, once, that was with summer squash. B/C the squash is the same color as the cheese, it's easily hidden in with the mac-a-cheese. Just a nice way to add some veggies without them being obvious. I mashed the squash, so it blended in much better then chunks.

Not a slow cooker recipe, but something I whipped up in a hurry. Got a pkg from the grocery bakery of dinner rolls (the kind that are connected.) On a cookie sheet, I sliced all in half. Spread a lil butter on, sprinkled a tiny bit of shredded cheddar, added 2 kinds of deli meat (sliced small enough to fit on top of each tiny sandwich.) Popped in a 350 oven (leaving them all open, like open faced sandwiches) and putting a loose piece of foil over the top. They're only in there a few minutes. Take the foil off at the end just so the meats can warm up enough. Once they're out of the oven, I cut around each roll so I could assembly them into sandwich sliders.
A quick thing to make and I've never heard one complaint.

A favorite recipe in our extended family get togethers has always been Texas Potatoes. I've made a few simpler versions, to work with a busy schedule and/or limited stock in the pantry. I'm calling it CHEESY POTATOES WITH HAM

32 oz bag of froz hash brown potatoes
1 can cream of chicken soup
1 can cheddar cheese soup
6 TBL butter
16 oz petite cubed ham
about 1/2 C water, more can be added later....

Using a 3 1/2 qt slow cooker, add all ingredients and cook on high setting for the first hour. Then lower to a low setting for 3-4 hrs.
Please note: I never leave my slow cooker for long periods. This time, I had to leave it for an hour, so I added some extra water toward the end of the cooking time. I had intended to scoop out the water (when I got back) but saw that it had blended in just fine and made for nice and creamy cheesy potatoes.

Nice add in to this would be chopped onions, and/or chopped broccoli. Since I'm including this recipe with the kid friendly recipes, I'd say to not add the veggies unless you know it's going to go over well with whoever is eating it. My kids didn't start appreciating the add ins until they got a bit older.
I've discovered that baby carrots are delicious when cooked. You might want to try adding some baby carrots to this, instead of the broccoli. Or, whichever your families favorite veggie is. emoticon

SLOW COOKER TRIPLE CHEESY MAC AND CHEESE
Slow Cooker Triple Cheesy Mac and Cheese is a simple recipe that you can toss together in just 5 minutes. It is truly one of our favorite recipes in our book! It’s pure comfort in a bowl, with perfectly tender corkscrew pasta with twists and ridges that capture the luscious pepper Jack and cheddar cheese sauce. It has just enough heat to wake up your taste buds. Check out the video above the recipe to see how easy this Best Ever Mac and Cheese is to make!
PREP TIME: 5 MINSCOOK TIME: 2 HOUR AND 10 MINSTOTAL TIME: 2 HOURS AND 15 MINS
INGREDIENTS
1 pound cellentani pasta (also known as cavatappi), uncooked
4 tablespoons unsalted butter, sliced into 1-tbsp pieces
4 ounces cream cheese, cut into 1-oz pieces
1 teaspoon kosher salt
1/2 teaspoon cayenne pepper
3 cups whole milk
1/2 cup heavy cream
2 cups freshly shredded sharp cheddar cheese
1 cup fresh shredded pepper Jack cheese



INSTRUCTIONS
Pour the uncooked pasta onto the bottom of your slow cooker. I love my 6-quart for this recipe. Scatter the butter and cream cheese pieces over the pasta. Sprinkle the salt and cayenne pepper over the top and pour the milk and cream into the slow cooker. Stir to combine everything and smooth the pasta into one even layer coated in sauce.
Cover and cook on low for 1 to 2 hours, until the pasta is chewy (not quite crunchy, but very al dente). Your cook time will vary if you use a different pasta, so start with 1 hour and adjust from there. Stir once halfway through the cook time and be sure to smooth the pasta into one layer so it is well coated with the sauce. Once the pasta is ready, sprinkle on the cheddar and pepper Jack cheeses and stir to combine. The cheese will melt into the sauce to create the most luxurious creamy cheese sauce. Cover the mac and cheese and cook for 10 minutes, until the cheese is melted and it comes together. Stir before serving.
DONNA'S NOTES
The cheese sauce will thicken as it cools. If you plan to hold the mac and cheese in the slow cooker on warm, add extra milk as needed to keep the sauce nice and creamy.
Also, if you are going to refrigerate it to eat later, add enough milk to the pasta to thin out the sauce before refrigerating. That way when you pull it out, it will scoop easily and the mac and cheese will warm up perfectly in the microwave or on the stove top. We do this every week and portion it out for easy lunches.

Here is a simple something:

16 oz jar of double cheese pasta sauce
1 lb cooked ground beef
8 oz cooked/ al dente pasta
a lil water ...

I used my 2 qt slow cooker, for this one. It may be better to use cooking spray in the crock, first. I forgot to spray first....so added about a 1/2 cup water to it...thinking that would help to keep any burnt spots. My ground beef had been cooked & froz ahead of time, so I had the crock on high for first hr, then on low for a few hrs till all seemed cooked & well blended.

Just to note, I never leave my slow cooker going for hours at a time when no one is home. They run hotter than they used to and it seems better to be home and able to check on it....being able to turn off when cooking is completed (usually sooner than one expects it to be done, in most cases.) Most times I never run it longer than 4-5 hrs....even when the setting is on low (b/c it boils even when its on low!)

Cut one large onion in half length-wise, spread out on bottom of crockpot. Place 3-5lbs roast (brisket, chuck...) and pour one 18oz bottle of your favorite BBQ sauce on top if it. Add 1/2 cup water, then cover and cook on Low for 8-10 hours. The meat should easily shred with a pair of forks, once you get the hang of spreading the meat apart.

Great for chopped brisket sandwiches served on buns or bread, with pickle and slices of raw onion. We also like to serve cole slaw, cold baked beans/pork-n-beans, and brownies for dessert. Yahoo Buckaroo!

Teach kids how to cook, please. It is a basic Life skill.

I'm not even near perfect, but I know someone who is.

For those who like meat & potatoes, I made a small Crock with:

1 bag of baby yellow potatoes
2 boneless beef steaks (maybe 1/2 lb)
1 can, condensed, cream of bacon soup (DO NOT ADD WATER)

This all fit into a 2 qt slow cooker; cooked on high for 4 hrs. If you're wanting to fix more, use a lb+ of the meat & a 3 1/2 qt Crock.

This was a very simple meal, and good on a cold winter day. I loved that there were only 3 ingredients & it all cooked up nicely.

Wrap russets in aluminum.
Place in crockpot.
Put on lid.
Turn on HIGH for 4 hours.
Remove carefully as is going to be hot. Maybe use tongs.

Kids and/or picky eaters.....

Mac-a-cheese was always a favorite, at our house. I've made from scratch recipes, and even tried one that had butternut squash mixed in (you'd never know it was there!!)

Grandma always fixed the appetizer BBQ mini wienies. When DS fixed them, at Christmas, I didn't realize you're supposed to add a glob of grape jelly to the BBQ sauce. Substitute meatballs, using the same type of sauce. Serve as an appetizer, or serve with mashed potatoes & a veggie.

Chicken nuggets were always a favorite. SP has a great baked recipe, for that, using Panko bread crumbs. I didn't believe it (till I'd tried it) that they really are a good substitute for the frozen breaded chicken pieces.

What are some of the kid friendly recipes you've discovered.

Linsey, I like your idea of copying the meal from your fave restaurant.

When my kids were little and I served vegetables they didn't care for I had them eat their age plus one extra to grow on. Like when my daughter was 5 she had to eat 6 peas or 6 green beans. That was all. Sometimes when they see a big scoop of something they don't like it's overwhelming to them.

I'm glad to find this thread. I was going to ask if any of you have a favorite picky-eater-approved-recipe that you'd like to share. My kids were picky eaters, so I had to keep things very simple. DD eventually started liking the same types of foods I like (well, SOME of them....not the spicy ones.) DS is still picky. DD would be the one who would like the crockpot recipes. DS, prob not. He's about to visit me, soon. I'm thinking of serving up the sliced brisket (warmed in the crockpot), along with pork 'n beans, cornbread muffins, & green beans. We have a fave restaurant that used to serve it this way, so I've copied. It's a feast, but, liked by all. emoticon

Turkey Meatballs with Grape Sauce

Meatballs:
1 lb ground turkey
1/2 cup breadcrumbs
1/2 cup buttermilk (I use low fat)
2 egg whites, beaten
2 tablespoons fresh sage, finely minced
1/2 teaspoon salt
Pepper
Non-stick cooking spray

Sauce:
1/2 cup low-carb ketchup (like Nature’s Hollow)
1/2 cup sugar-free grape jelly (like Smucker’s)
2 tablespoons balsamic vinegar

Directions:
Preheat oven to 375 degrees.

In a large bowl combine all meatball ingredients. Shape meat mixture into 1” meatballs and place on a baking sheet sprayed with non-stick cooking spray. Do not allow meatballs to touch. Bake in oven for 20 minutes until meatballs are cooked through.

In the meantime combine sauce ingredients in the bowl of a slow cooker set on low. When meatballs are baked add to slow cooker discarding pan juices and drippings. Stir to coat meatballs with sauce. Cover and cook on low 1-2 hours prior to serving. Provide cocktail picks for spearing meatballs.

Serving size, 3 meatballs. 150 calories, 3.5 grams fat, 9 grams lean protein.

Macaroni & Cheese Crock Pot Recipe

8 oz dried macaroni noodles, cooked according to instructions
3-4 cups grated cheddar cheese (set 1 cup aside)
13oz can evaporated milk
1 1/2 cups milk
2 eggs
1 tsp salt
1/4 tsp fresh ground black pepper
1/2 tsp dry mustard

Combine all ingredients except 1 cup of cheese in crock pot. Then add extra cup of cheese on top. Cover and cook on low for 3-4 hours.

Pizza Rigatoni Crock Pot Recipe

1 1/2 lbs bulk pork sausage
3 cups rigatoni, cooked about half way to al dente
4 cups shredded mozzarella cheese
10 oz can cream of mushroom soup
1 small onion, sliced
15 oz can or jar pizza sauce
8 oz can or jar pizza sauce
3-4 oz package pepperoni, sliced
6 oz can sliced olives

Fry sausage in frypan and drain. Place halt the sausage amount in slow cooker. Then layer as follows using half the ingredients: pasta, cheese, soup, onions, pizza sauce, pepperoni, and olives. Repeat. Cook on low 4 hours.

This is one is one of my kids favorites and I have to that are very picky eaterys.

Crock Pot Pizza Chicken Recipe

Ingredients
• 4 skinless, boneless chicken breast halves - cut into bite size pieces
• 1 onion, chopped
• 1 green bell pepper, chopped
• 1 (10.75 ounce) can condensed tomato soup
• 1 (10.75 ounce) can condensed cream of mushroom soup
• 2 tablespoons tomato paste
• 1/2 cup water
• 1 tablespoon dried parsley
• 1 tablespoon dried oregano
• 1 tablespoon dried basil
• 1 bay leaf
• salt and pepper to taste

Directions
1. Place chicken, onion, bell pepper in a slow cooker.
2. In a medium bowl combine the tomato soup, cream of mushroom soup, tomato paste, water, parsley, oregano, basil, salt and pepper.
3. Mix well and pour mixture over chicken and vegetables in slow cooker.
4. Stir to coat and add bay leaf.
5. Cook on Low setting for 8 hours, until chicken and vegetables are tender.

Please post any type of slow cooker recipe here (beef, soup, vegetarian, chicken, bean, etc) if there are comments such as: children ate it, kids liked it, picky eaters liked this, etc.

As always, when possible please provide as much info as possible: dynamic links others can click on, size of crockpot, setting, nutrition info including size of each serving as well as number of servings, etc.
