I am not too good with veggies, but will add some to make soup or stew (usually tomatoes and carrots and potatoes, sometimes try a little celery). I will add some to omelets, too. This morning I have asparagus in one. Others would be spinach and tomatoes and mushrooms. I forgot about those this morning. I will also make salads.

I will substitute something like spaghetti squash or zucchini for pasta.

I sometimes make casseroles too, but they need to be adapted... I make the veggies the star and add only a fourth of the usual starches... pasta or rice or potatoes, I don't need bunches of those any more. I have come to relish the blend of different textures and how the flavors are enhanced. Someday I'll try them with no starches at all!

I also love making soup. Makes a great meal. I always make enough so I have a few quart containers in the freezer as well for future quick meals.

Stir fry is also another good way to get veggies in

I like to do the homemade soup thing too, and make it different every time! LOL
I do have a few favorites... and I too can add salad and or few ounces of meat. Have to be careful about plant proteins because I am prone to hyperkalemia so too much dietary potassium is a no-go...

i make homemade veggie soup and freeze it then eat a bowl or 2 daily

looking for friends to connect with, get to know, and encourage each other along this journey. :-)

I don't know if this helps but dinner is a protein and a veg (the veg can't be a starchy one like potatoes or corn). Because we are eating only two things, we make the veg portion large - really the equivalent to two or three portions. Sometimes it is an all-veg night. e.g., veg soup and a salad. I think growing herbs in the house is a great idea.

I'm new here, and would love ideas on how you get veggies into your regular food rotation.

One thing that I find motivating is to grow lettuce and herbs. I just found a lazy method that uses big Mason jars, and am hoping that helps me with the snowy winter months.

What do you do?
