Iíd like to try the Hasselback potatoes, the ones with a row of slits in the top and roasted. Amazing, the variety in these recipes.

Does anyone have any good ideas for quick meals or simple batch cooking? Iíve been relying on frozen brown rice and organic canned beans a lot because of work demands, which is a big help. Still learning vegan cooking, trying to try new recipes frequently. The weekend lunches are a challenge. I rely on planned-overs, hearty canned soups and salads.

I had a bad experience in a swimming pool when I was a kid and never learned how to swim. Ashamed of it. Finally when I was 19 years old I went to the local YMCA and took swimming classes especially for frightened adults. It was called "T.O.W." or "Terrified of Water". At the end of the class I was using the diving board and received a Beginner's Swimming Certificate from the YMCA. Then I used to go lap swimming there at noon for about a year and when I moved to Chicago for college took one swimming class.

Never would want to swim in a lake or in the ocean though! You can't see what's in there or where the bottom is! Indoor swimming for me only.

I hope so Sue. I will have to overcome fear; I had a bad experience at a lake when I was about 7 when a cousin pushed a rowboat over top of me. Now I watch my grandkids play at the pool and admire their comfort in the water. I'll get there but it will be baby steps.

I grew up on Long Island, NY, lots of beaches and swimming. If I could learn as an uncoordinated 6-year old, you'll be able to learn easily. You seem to be a natural athlete. How exciting for you, looking forward to a new environment and new goals!

I think it will be a real eye opener. There is so much information one can access, too much in fact and I would really like to have a solid plan geared to my personal needs. That and a chance to join an age friendly gym are on my list after I get situated in my new surroundings.

I do take a multivite and B12 and D but the tweaks I have made are food related as I know that provides the best intake of nutrients. Once the dust has settled around my house sale and moving I will take the time to source out a nutritionist and really focus on making my food choices the very best for all meals.

I didn't know what you meant by micros, I thought you were talking about the macrobiotic diet. But I see with your explanation that you are talking about nutrients: vitamins and minerals. Absolutely those matter to me, the Nutrition Tracker with SP helped me realize what i need more of and so besides keeping track of those I also take supplements. I try to eat the right amounts. I don't worry if I ingest too much Vit. C or Vit. B because these are water soluble vitamins and excess leaves my body in the form of urine and perspiration. A, D, E, and K are fat-soluble vitamins, meaning that excess is stored in body-fat. I worry about those because the American diet is very high in A and D and I primarily seem to have too much of that and it worries me. However, supplements are not as easily absorbed by your body as people might think.

Do you regularly check in on your micros? For me it has been eye opening as I thought I was getting the right amount of certain micros such as calcium, iron and protein. Simple tweaks have remedied that.

Making Brand new vegan's carrot hot dogs today. Love them cooked in biscuit dough as carrot dogs in a blanket. Dipped in a mixture of ketchup and a little mustard. Baked beans and cole slaw on the side.

Potatoes are so filling and versatile. Had some breakfast roasted potatoes to use up and I added them to some veggie fajitas for breakfast. Yum!

Thanks for sharing that link Sue, excellent information. One only has to go back into history to understand the importance of dense carbs like potatoes to see how a removal from the diet negatively affected people's health. The Irish potato famine is a case in point.

White potatoes are delicious when cubed (1"), tossed with a bit of EVOO and Mediterranean herbs like basil and rosemary and a tiny bit of salt and then baked at 400F for 20-30 minutes, so much better than French fries.

HATE white potatoes unless they're french fries. LOVE sweet potatoes. IF i have to eat a white potato, I will opt for Yukon Gold.

I thought this article was interesting. Ghandi was a vegetarian (not vegan) and he certainly was NOT a stupid man. I was interested in what it said about taurine. It is considered an essential amino acid for cats; it should be on the ingredient label as suplemented for any pet food, wet or dry, for cats. Cats are obligate carnivores, which means eating meat is essential for them, they die without it. A vegan diet is inappropriate for cats, who are predators. I have read many articles by veterinarians online with sob stories about owners who have either killed or permanently diminished their cat's lives by insisting that their cats can eat vegan just as they do.

I didn't eat any meat today nor yesterday. Today I did have plain Greek yogurt and cheddar cheese.

I used to avoid them back in my days of broiled chicken breast and plain salad. No longer! Iím amazed at the variety of types of potato. Right now I have on hand: 2 large russet potatoes for baking and a bag of mini potatoes in purple and red. Plus sweet potatoes. Which when I was growing up, we ate mostly just on Thanksgiving.

I think that notion that potatoes are not good harkens back to the beginning craze of low carb diets. They are an extremely important addition to healthy eating, both white and sweet varieties. I'd be lost without a yummy stuffed potato!

I take b12 but not as often as I probably should. I try to get a little sun on my skin, even if it's only my face and hands in the winter by working outside, playing with the dogs every day.

New Question:Do you believe potatoes are the devil incarnate? Some people (NOT ME) avoid them like the devil!

I too supplement with B12, D and I just take a regular fish oil Omega-3 twice a week. As for the others I am not concerned; my important health markers such as cholesterol, liver and renal function are all good and at age 73 I am not going to get my head in a "tizzy" over the small stuff.

A good article. I supplement with B12, D, and algae-derived EFA. I've read differing opinions on choline and taurine in the diet. Dr. Greger connects some of these chemicals with cancer, particularly choline with prostate cancer. I don't know what or who to believe at times.

A doctor that I see semi-regularly gave me a blood test to check my status with some of the vitamins needed for a vegan diet. I tested well.

Very interesting Molliemac. I do believe that this way of eating will help with dementia.There are so many factors. For those with blockages and a history of heart attacks--that alone (and the lack of oxygen/effect of anathesia) would cause less oxygen to the brain.

I made a No oil, no fat version of Moo Shoo Mushrooms. I used to love moo shu pork before I became a vegetarian/almost vegan. I stir fried cabbage, portabella mushrooms, onions and carrots in a little water (first carmelize the onions with no water). I added a tblsp of soy sauce and 2 tsp of rice wine vinegar (any would do). I made a little sauce to smear on flour tortillas out of hoisin sauce and PB2 dried peanut powder. Just a little adds taste and keeps the wrap from falling apart. A winner of a recipe that we will have often. I serve with a side of beans and add some crunchy salad before wrapping up the tortilla.

I shop discount stores that don't have discount program, already everything is discounted. I have a points reward thing at the more expensive store (where I seldom shop) and every few months or every other month I get a small booklet in the mail of coupons for items Raley's sells. Something is always free (usually bananas) and sometimes a sandwich from the deli. But usually even with the discounts, it's cheaper at my discount store. What is really annoying is the BUY 3 and get the 4th half off! Um...I have limited space and I don't want 4 to begin with. It used to be buy one get one free, but now it's buy more and only get half off of one just about everywhere. I get annoyed with the cards too that are BUY 10 coffees or ice creams and get one free...just one is an indulgence and not in my regular diet to begin with...I had bought a coffee maker (single cup) because it's cheaper to make my own in the first place. Need to get off that coffee, for me with my creamer too many calories. I like tea and the only calories are from the lemon I put in it. 5 calories for one cup of tea as opposed to 350 for two cups of coffee!

I pulled some frozen cooked pinto beans from the freezer to make soft shell tacos--just heated beans mixed with salsa, some roased mini peppers, a little cheese. Quite delicious and filling. I am pleased that I decided to start making use of my dried beans and legumes lately and have stocked the freezer.

Every day I make pieces and parts that can be rearranged to make new meals. Today, I'll be baking home grown butternut squash in backstrap molasses, lime "crema" from plant based yogurt and home made hummus with smoked paprika to be used on buddha bowls all week in different combos (rice, different beans, different veggies) etc.

Today I'll also make some soup that can be used for breakfast the next four days or so. I'm thinking miso soup because I have some greens growing outside.

I really need to start planning out menus. My problem with doing that is when things have to change at the last minute and then I have to adjust the rest of the planned menu to accommodate the change. But at least I wouldn't be stressed trying to decide what to make at the last minute.

I do the big prep( grains mainly or sometimes a large baked sweet potato or baking potato) and I stay away from any meals that take longer than 15-20 minutes to make. My "go to" are roasted veggies, can't get enough of them.

I have the Ďoccasionalí tendency to be indecisive, and so I plan out a weeks worth of meals at a time, using pantry and freezer items I already have. Then I just have to pick a meal from my list every day.

Iíd like to do more meal prep ahead of time. Seems a great idea. I do this for weekend dinners. Chopping vegetables and doing prep in the morning because after doing weekend chores I end up not wanting to cook dinner.

Working to be super organized re meal planning and prep as much of my time will be occupied with getting my home ready for sale during the next few weeks. Days will be busy and long so I don't want to be caught short without something healthy and filling to eat. It's full speed ahead as I have a crew here on Tuesday loading items for an auction sale next weekend.
Cortland apples were on sale this week, $4.99 for a 5 pound bag, tomorrow I make a big batch of applesauce and also cook up a brown rice/ wild rice mix for meals this coming week.

Don't normally menu plan but, since it is just DH and I at home (boys have all moved out on their own), I usually make enough of something for 2-4 meals and put some in the so have something for a quick dinner when I need it. The last two days I bulk cooked legumes. I now have enough beans and lentils in the freezer for 1-2 months!

Susmannie: you have really got it going on. I agree that planning those frozen meals is a smart thing to do. I notice that if I'm sick, I really can't think of anything good to make/eat. Having quick frozen meals is wonderful.

When I worked in an office with a big frig/freezer, I always kept a backup frozen meal in there.
I try to have on hand things to snack on that are healthy and meet my cravings. I love air fried potatoes and also healthy potato salad (see Brand New Vegan recipe).

I plan my meals out for the week before I shop. I have a list of vegan meals I've made (successfully) on my phone, and I copy and paste 5 or 6 meals each week to my menu. Usually one Italian, one Mexican, one Indian, and a burger or Eggless Tofu Salad sandwich and soup. I also have been including at least one frozen meal, sometimes 2. Trader Joe has a variety of good frozen vegan meals that are inexpensive. I'm busy and I get stressed, so I need some easy options. Trader Joe has canned goodies for an antipasti salad. Eggplant salad, roasted peppers, dolmas, and a variety of olives. I buy their precooked lentils and mix with one of these and build a dinner salad. I think comparable foods could be found in a good supermarket if you look.

I cook for my husband and myself. I used to make cold cut sandwiches and salads for lunch. Now I make four servings for dinner every night and put aside 2 for our lunch the following day. Makes it more interesting.

I do that too as I am also alone; a couple of servings for the present week and then another couple to go in the freezer. I tend to keep them simple so that I can add whatever fresh items I have on hand at the last minute. keeps my meals interesting!

I am one person--the way I save money is to make a large meal (like my two meat meals i have decided on for my new Mediterranean diet, Dump n' Bake French Onion Chicken Casserole and Greek-Style Meat Sauce) which yield 6 to 8 servings. I freeze extra portions on the 3rd or 4th day. I am know going to look for lentil and chickpea recipes to make go-to recipes and intend to eat those more often. i already have a mujdhara recipe. I want to eat more salad too. I am in the process of rebuilding my menu repertoire. I am really happy that actually 14 countries surround the Mediterranean Sea, so that includes Israel. Hummus is healthy and delicious, vegan and still part of the Mediterranean Diet. My friend has noticed that since I have returned to eating meat, I have more energy. But vegetables, fruits, and legumes as well as whole grains are the BULK of the Med. Diet. And I need to eat that way if I really want to be healthy.

I am still tofu loyal. And like some mexican meals that are bean only.

I do the same here! I also find that making a menu plan and sticking to it, measuring portions, buying items on special (often eligible for reward points as well) save. Dried breads get cubed and roasted for croutons or ground for coating or thickening of soups and stews.

How do you save money while cooking? I'll start. Yesterday we made roasted cauliflower and brocolli (inexpensive at aldis). Saved the cauli core and brocoli stems and chopped them up small, threw in a zip lock bag and froze for soups next week. Today I prepped carrots and celery (inexpensive usually all year) by cutting in sticks, putting in recycled wide mouthed jam jars with a little water in the bottom. Put in the frig to last the week.

You can also save the pickle jar and juice after you have eaten the pickles and put your fresh vegetable sticks in there for extra flavor.

If you want to really learn about starting your own sourdough starter, read about it on Chowhound (or read ANYTHING, really, on Chowhound). I use it to make pancakes, cornbread, corncakes. I will be experimenting with no oil muffins and cakes with the sourdough as well. It's frugal because no yeast, baking soda or baking powder as leavening.

I made the lovliest loaf of sourdough bread yesterday. I didn't have time to feed the sourdough but let it bubble most of the day before I made the loaf. I make it with 1/2 whole wheat an 1/2 white, no oil and it tastes like french or italian bread. If you put a pan of water in the oven while you bake the bread, the crust is nice and crusty! I think it's important to get probiotics in your gut and this is one way we do it. I don't eat bread more than once a day, really and don't eat it when having pasta (too much flour). Since we don't use butter or oil, I put a small amount of honey on the bread when having it with, say, my oatmeal.

Fiber can't be destroyed by a blender; if the apple peel is on an apple that is liquidized, the fiber remains. Some very high powered blenders retain the fiber by completely liquifying the fruit, seeds and all. When a juicer separates "pulp" from the juice--then you are throwing out the fiber. And most commercial juices lack fiber because the juice is strained--that means the pulp or the fiber is strained out. .

I don't like apples very much. I eat them cooked in things or in a salad with lemon juice spritzed on them very quickly before they can brown.

Vegetables have all the nutrients as fruit for less money (and without the fructose). So that's what we eat mainly. That is crazy Allison. Apart from frozen blueberries and cranberries the frozen fruit I buy (mangos, berry mix and sometimes coconut) all come from either the USA or Peru/Chile. Most of the veggies do come from Canada and I only buy the frozen when they are out of season. Often I can buy them "two for one" and if I am lucky can also get reward points on my Presidents Choice Optimum card; this past week PC frozen fruits offered 800 points per $2 spent (1000 points=$1).
That is one of the other reasons that I don't do smoothies, they gobble up one's food budget in a hurry.

I envy you. I pay nearly $10 for a 3 lb bag of frozen fruit! I use 1-2 cups in my smoothies. The smaller amount if I also use fresh fruit or spinach.

Frozen fruits and veggies are usually weekly specials at our supermarkets; 600-800gm bags for $1.99-$3.99. I keep my freezer stocked and add them to soups, stews, hot cereals, pancakes and waffles. I don't like smoothies but they would be great for them as well.

Buying fruit when on sale or in season and freezing it for the winter is the way to go. Frozen fruit is more affordable than dried fruit anyway. Marked down bruised banannas are sweeter than pristine banannas and do the job when sweetening oatmeal or making healthy cookies (add a little pb, oats, fl and banannas, chips).

Good article. I put dried fruit in my oatmeal (generally 2 TB) because I often run out of fresh fruit and it lasts longer than fresh fruit, especially in the winter. Won't be swayed from doing that. ANYMORE than 2 TB is too many calories, that's quite enough!

All dried fruits are calorie dense, many are sugar laden and others contain large amounts of sulphates. Much better to stick with fresh or frozen.

Good point, Molliemac. I like to use fresh/frozen cranberries (real ones) for that purpose so I an control the sugar.

If you miss the yellow coloring in your broth when you make vegetable broth, use onion skins (you can put them in cheesecloth and take out later).

Watch the sugar content of the dried berries, they are loaded! You can buy pure unsweetened cranberry juice here (local cranberry bogs) and I use it like adding lemon juice to water. Cranberry cocktail is highly sweetened.

I eat sweetened dried cranberries all year round. Sometimes I drink cranberry juice because of it's health benefits. 100% juice, no HFCS sweetened junk.

Saw a great recipe for sweet and sour sauce that was (based on my memory) 1 can cranberry sauce, 1 tsp or tblp worchestire sauce, 1 tsp onion powder and 1/2 tsp garlic powder. I saw cranberries on sale for $1 at walmart yesterday and should have stocked up

Love cranberries this time of year, I add them to my apples when making sauce. Great source of Vitamin C and frozen cranberries are quite inexpensive.

Ha! I just realized my last post made no sense as I was replying to another thread of Molliemac's about growing her own greens.

For my part, I harvested turnip greens and bok choi from my garden They were volunteers, so not enough to make a "mess o greens" as we say. I'll chuck them in my lunch salad.

One doesn't have to go far here in Nova Scotia to be close to market farms and the major supermarkets all carry as much local produce as they can get.

I rely on frozen produce such as kale and Brussel sprouts and here closeby we have greenhouse grown cucumbers, sweet peppers and vine tomatoes grown year round. Root veggies, onions,radishes, cabbage, mushrooms, apples, pears are local and I buy imported avocados. Winter salads include beans and grains with roasted veggies and fruits for example. I have no problem getting 7-10 freggies every day year round.
