This sounds good. I am not sure I have every encountered unrefined barley. I just discovered barley and started using it in our meals this past year. I had never eaten it before and decided we should try it for a change

Christmas is coming up, and here is a Scandinavian tradition - porridge. I put the recipe out now, which gives you plenty of time to test run it before the 24th - which is the day Christmas is celebrated in Scandinavia:

Nowadays we eat a "rice pudding" but rice is being transported from Asia, and pot barley can be grown near by, so this is a much more environmentally friendly alternative. And yummy.
