Oooo, this sounds tasty! :) I love salmon, but my mate - not so much. Still, I can make it for me. :D

I made my mom's salmon salad (pasta salad really) for the poly picnic this weekend (at my mate's suggestion), and it was very popular! I've posted the recipe on my cookbook page over here: recipes.sparkpeople.com/recipe-detai

i found that salmon is one of the only fish that i enjoy eating. that looks good but i am not too sure about the avacados, not really a big fan

I'm headed to the farmers market this a.m. anyway sooo, am going to pick up some avocado too :)
I luv salmon, usually just have it grilled on a plank.

Printed the Salmon recipe. Have not found a good one for Salmon. Going to try it next week. Avocado mayo sounds good.
This week are doing no meat. My husband is finding all sorts of things to make. Not to bad, but I like chicken.

I will let you know when I try I and how my family likes it. Thanks for sharing. ttyl Shelly emoticon

This is one of my favorite recipes and I thought I would share it with you guys

Salmon with Avocado Mayonnaise
34 min | 20 min prep

Ingredients

1 tablespoon brown sugar
2 teaspoons paprika
1 1/2 teaspoons salt
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon black pepper
6 (8 ounce) salmon fillets
2 tablespoons olive oil
1 ripe avocado, peeled and cubed
2 teaspoons fresh lemon juice
5 tablespoons mayonnaise

Directions

In a small bowl, add the first 6 ingredients; stir to combine, then set aside.
Rinse the salmon fillets and pat dry.
Put the salmon, skin side down in a broiler pan.
Brush each fillet with 1 teaspoon oil.
Sprinkle the fillets evenly with the brown sugar mixture.
Broil about 5 inches from heat source for 1 1/2 to 2 minutes or until brown sugar mixture begins to caramelize.
Lower oven temperature to 425 degrees and bake 8-12 minutes or until fish flakes.

In a small bowl, mash the avocado until mostly smooth.
Add in the lemon juice; stir to combine.
Whisk in the mayonnaise until smooth.
Cover and chill until ready to serve.
Serve with the salmon fillets.
