My goals are to cook most of my meals, keep my fridge and pantry stocked with healthy food, get rid of unhealthy foods, and revamp old, unhealthy recipes into healthy ones! I'm also on a mission to create the best veggie burger.

I'm also going to start a cookbook of healthy recipes. Oh, and I need to keep my kitchen clean to encourage myself to cook every night!

My goal is to be more organized and use what I have on hand instead of running to the store for 1 thing and coming home with 20! A weekly menu-plan and inventory of what's on hand in my kitchen should do just that!

My goal is to eat fish atleast once a week. I want to incorporate fish into my diet more and I have purchased a big bage of frozen tilapia, so I will always have it on hand to make something quick, delicious and healthy.

I would also like to incorporate one vegetarian meal into my dinner schedule. Not just pasta or just leaving meat out, but something hearty but meatless.

1. Keep my sodium intake under 3000 mg-that's not ideal, but for me will be a big improvement.
2. Eat less processed food.

I plan to make my kitchen a place i really want to be in. Re organize and utilize space better. My mom bought me a food steamer today which i placed next to my food processer, mixer, blender and crockpot. I also have purchased some new healthy foods I have never cooked with before and a friend brought me a bag of health foods like bulgar and cous cous and hummus. I want to learn some new recipes to incorporate these products that will be tasty. I absolutely love to cook and come from a family of cooks. Problem is that we cook with lots of grease and creams and rich foods. Lots of fried and lots of red meat and potatoes. So I really have to learn a whole new way of thinking about food and cooking food. Hmm... ought to be interesting...

I cook most everyday, we rarely go out to eat. My challenge therefore is to come up with new, healthy recipes at leat 3 times a week. I will also be cleaning out the cupboards and doing some rearranging. I love to cook with the crockpot so I will be finding new recipes for it. Look forward to this challenge.

My weekly goals

1) to get more reorganize in the kitchen
2) Eat more veggies and fruits
3) Use my George foreman grill more to cut the fat
4) try to get my family to eat more healthy foods
cause right now I am the only one eating healthy...

I have a big family to cook for cause their 8 of us and we never have any left overs.

I have dozens of healthy recipes, but my kitchen is not organized; so this week my challenge is to clean out and organize my cabinets, freezer and refigerator.

I want to develop the discipline to try ONE RECIPE PER WEEK.
We go to the fruit market pretty much every wk or so, and cook huge batches of vegetables when we get home, that last us a wk. We just add grains or protein when it's time to eat, efficient, but not RECIPES per say, you can't serve that to guests - so anytime we have guests, it's all PREPARED FOOD, bought from the store. So i'm not known for ANY recipe, i would like that to change
(i don't LIKE to cook - i've seen my mom get upset because she'd spend more time preparing the meal than it would take to prepare: believe me, that SELDOM happens to me
i see how it can be a passion for people, so perhaps an attitude adjustment and an investment of a few more minutes a week could make a big difference...
I'm excited to be in the group, because it makes me more aware of my goals (i've wanted for YEARS to try one recipe per wk, but when there is nothing to remind you, life gets in the way, and old habits remain, you just forget. Being part of a Team, you CAN'T forget.

My challenge goals include:

Meal Variety--Creating new or modified recipes to replace those that I tend to eat on a very regular basis.

Meal Planning--Due to particular health issues, it is almost impossible for me to plan my meals in advance. So, rather than adhering to the typical "meal planning" process, I have decided that my meal plan will consist of a "list of meals" (lists of breakfasts, lunches, dinners, and snacks) that I consume on a regular basis. Depending on how I feel on a particular day, I can then select the option of choice.

Pantry Inventory--I will do an initial inventory of my pantry and freezer establishing a starting point for the challenge. Then, by using what I have on hand before buying more, I "will deplete" my current inventory and "then replenish" with fresh items.

Cookbooks--Currently, I tend to refer to the same cookbooks for recipes. I will now plan to spend time looking through some of my other books in order to come up with new meal ideas and recipe variations.

My goal is to plan and cook a menu for a week's worth of dinners for two (two crockpot, one more bean than meat, three quickie meals and the last two flexible). I also want to set up a quickie spare meal in case something unforeseen happens. All of it needs to be low-cal, low-carb, low-sodium or at least reasonable and budgetable (nutritionally and financially). To do this, I feel the need to do some organizing and purging in my kitchen.

I would like to be more organized with my meal planning. Usually I'm figuring out what's for dinner on the way home from work and it more often than not ends up being unhealthy, quick foods, like frozen pizzas or chicken fingers. Sometime I only cook a real meal once or twice a week.

My goal this week is to encourage my 18 year old daughter to eat home made meals. I always cook dinner but she tends to hit the drive thru. I began yesturday by getting her input on what to purchase for dinner. I made dinner for me and daddy and made her special request. I hope to have her cook a meal with me by next week.

I very rarely cook at home, even though I enjoy it. My reason for joining this challenge is to get me making meals at home more often. Right now I eat maybe 2-3 meals a week at home and they are generally out of a box or somethign that I can microwave.

By the end of the four weeks (which I'm sure will actually take me longer that 4 weeks) I'm hoping to reorganize my kitchen so it's meal planning/creating friendly, being making weekly meal plans and grocery lists, and start eating a majority of my meals at home. I know that this will be rather difficult due to an odd work schedule but I think it's possible.

For week one: clean/reorganize kitchen and make at least 2 healthy dinners at home (meaning from scratch, not from a box like everything else...). ^_^

My goal for this challenge is to be able to make my meal plans with ease. As my health has become more challenging so did my food options. I know that I will be more successful and happier if I have my meals planned out because it has worked me in the past.
