I also like collard greens especially with pork.

The texture of Kale is something you have to get used to.

We started out roasting it in the oven. It has a nice charred smoky flavor so came to like it that way then branched out to using it in other recipes.

When I was a kid growing up, I could not eat coconut due to the texture so I certainly understand.

I love spinach and red cabbage. I like the taste of kale but I had a problem with the texture. I have never had a fish taco but I bet this would be good on them.

I fixed pork tacos and the more I eat Kale, the more I like it. I wasn't a fan at first but am now.

Red cabbage would be a nice substitute and I love Fish Tacos.

What type of tacos? I would like this on fish tacos. I, personally, would leave out the kale (I'm not a big fan of kale). I might substitute spinach or red cabbage for the kale. It might cut the bitterness of the Brussels sprouts.

Made some kale salad with a kick to go with our tacos tonight.

1 1/2 C. cut up kale
1/2 C. cut up Brussel sprouts
Cilantro to taste - diced with kale & Brussel sprouts
4 green onions/diced
Fresh garlic cut up to taste (some folks like more garlic).
1/2 C. red wine vinegar
1 T. Sriracha sauce

DH thinks it perfect but I feel like it needs something. Any suggestions?

Chicken Meatballs with Dill Garlic Sauce

FOR THE CHICKEN MEATBALLS
1 pound lean ground chicken
1/4 cup panko bread crumbs
2 garlic cloves, minced
3 tablespoons finely diced yellow onion
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon salt
fresh ground pepper, to taste
FOR THE GARLIC DILL YOGURT SAUCE
3 garlic cloves, minced
1/4 teaspoon salt
1/2 to 1 tablespoon fresh dill, chopped + more for garnish
1 cup non-fat plain yogurt
1 tablespoon Extra Virgin Olive Oil
Instructions
Preheat oven to 400F.
Lightly grease a 9x13 baking dish with cooking spray and set aside.
In a large mixing bowl, combine chicken, panko bread crumbs, garlic, onion, thyme, oregano, garlic powder, salt and pepper; mix and stir until thoroughly combined.
Form the mixture into 1-1/2 inch meatballs.
Transfer the meatballs to previously prepared baking sheet.
Bake for 18 to 20 minutes, or until meatballs are cooked through.
In the meantime prepare the yogurt sauce.
In a small mixing bowl, combine garlic, salt, dill, yogurt, and olive oil; mix until thoroughly incorporated.
Taste for seasonings and adjust accordingly. I always find that it needs a tad bit more salt.
Remove chicken meatballs from the oven and let stand couple minutes.
Transfer to a serving bowl and top spoon yogurt sauce over the meatballs.
Garnish with chopped fresh dill and serve.

A lot more complicated than yesterday but it sure sounds good. I will try it definitely.

Just posting one of our favorite Taco Recipes (low carb).

We will serve them on Low Carb Tortillas.

2-Ingredient Crockpot Taco Chicken

Yield: 8+ servings
Prep Time: 15 minutes
Cook Time: 4 hours

2 1/2 pounds boneless skinless chicken breasts
2 - 16 ounce jars good salsa verde
Directions:
Turn a 6 quart slow cooker on low. Pour one jar of salsa verde in the bottom of the crock. Place chicken breasts in the salsa verde. Sprinkle 1/2 teaspoon salt over the top. Then pour the remaining jar of salsa verde over the chicken.
Cover and cook for 6-8 hours. (3-4 hours on high.) once cooked through, remove the chicken from the crock. Use two forks to shred the chicken. Stir the shredded chicken back into the salsa verde. Turn the slow cooker on warm until ready to serve.

It was very good today. DH and I split a ham/cheese sandwich on homemade rye and a side of House made Parmesan Chips. It was just perfect and we didn't overdo on the carbs. When we were going into the new location, I noticed the old location already had a restaurant up and going in it. It was called Thrive - another Farm to Table. We must try it some day.

DH is making a loaf of bread for his Aunt and Uncle and we will drop it off on our way to our Sunday School Social - another dinner. Tonight, I am opting for a salad with grilled Chicken.

Take care my friend and have a Blessed Day. I found out this morning a dear friend of our's in North Carolina passed away. He was diagnosed with cancer less than a month ago, had just finished his first round of chemo/radiation when he became Septic and was admitted to ICU. Bless his wife's heart - no family near where they live so praying their extended Church Family is there for them. We just never know, do we?

I dry some, I freeze some. Some don't dry well. I have a dehydrator. But I prefer them fresh. I used to have an indoor herb garden too but they do better if they are always grown inside. Moving them back and forth stresses them. Some of them are annuals like fennel and dill. Some perennials like chives and oregano. Some are biennials like parsley and caraway. After a while some of the perennials need replaced anyway, like oregano. Some perennials are not hardy and don't winter over here like rosemary.

I love my herb garden. Some herbs are hard to find locally. Nurseries used to offer more than they do now. I grow thyme, basil, oregano, marjoram,chives, fennel, dill, sage, rosemary, coriander, lemon balm, tarragon, savory, chervil, caraway, cardamon, parsley, spearmint, peppermint, chamomile, lavender, garlic, and some uncommon herbs like sweet woodruff. My favorites are thyme, basil, oregano, chives, fennel, dill, sage, rosemary, coriander. And you can usually find all of those. You may have better access there than we do as a lot of our nurseries were put out of business by places like Lowes and Walmart. They can't compete with their prices. We are expanding our garden this year. The world is very unstable now and some experts are predicting inflation.

I have been thinking of planting a herb garden under the windmill so may just do some more research and do that this year.

We haven't had a vegetable garden for a couple of years and I sure do miss it.

I love cooking low carb as it really helps me to expand my use of spices. I am learning more about spices and how they enhance our food experience but I still wish I knew more.

We have two asparagus beds and I can't wait until spring. Love that Asparagus and I fix them in the oven also with garlic and olive oil. I bought some spears at the grocery store today to have with our scallops tomorrow evening and they were $5.00 a bunch. Wow!

Yes, too soon here also for asparagus, but it won't be long. I bought some turnips today at the store along with brussel sprouts. I will be roasting some veggies for supper. I think I will try something like a mashed potato also with them.

I've never put onion powder on my veggies when I roast them. I will have to try that. I bet it would be good. With the warmer weather I am thinking asparagus. I have a good sized bed of it and in the Spring it is featured in some dish or other daily. I will be planting and trying different turnip dishes also.

Great job on the weight loss. I tend to cook simply. I cook meat in the oven with lots of herbs and spices or use the crock pot a lot for stews and soups. I eat a lot of cauliflower or broccoli as they are easy to fix in the microwave. I can cut them into florets of equal size, put them in a bowl, cover them with a microwave cover, put them in the microwave for 4 minutes and then take them out and put a pat or two of butter in them, some onion powder, pepper, and season salt. Hubby loves it. I also fix asparagus spears in the oven by mixing a little melted butter, olive oil, season salt, pepper, and onion powder and bake on a baking sheet until they are still crisp but hot. I like Brussels sprouts fixed the same way with the addition of a splash of balsamic vinegar and a little bacon grease. I fry a piece of bacon and add a tbs of butter and 1 tbs of olive oil, and a chopped onion in a skillet and fry to limp and then a half head to a head of cut up cabbage, add a cup chicken broth and 2 tbs of vinegar and cook until cabbage is done. We love it. We eat a lot of green beans cooked with onion powder and pepper. Turnip slices with a little cooked bacon, season salt, onion powder, and pepper. We use very lean uncured bacon as it is healthier. I like pickled cucumbers a lot. And homemade slaw. Lots of salads and salad veggies.

Good for you. 70 #'s is amazing. I am impressed!! Sweet potatoes have carbs but they also have lots of fiber so wonder what the net carbs would be. I love turnips so hope it turns out.

You helped Sunny. I don't do sweet potatoes or tapioca at this time due to the carbs, but I do like turnips. I looked up the nutritional value and I should be able to work it in.

I did an elimination diet and found that gluten, dairy, and nightshades cause joint pain for me, so since I love being painfree, I steer clear of them. Plus I have lost close to 70 pounds.

Fix a couple of nice steaks with a Turnip Puree, baked sweet potatoes and maybe a nice bowl of Tapioca for desert.

I have been reading up on the nightshades but sure do have more to learn..

I don't know if my suggestions will help or not.

I am looking for ultra low carb (keto) that is free of dairy and nightshade veggies. Does anyone have any good recipes that fit this restrictive diet?

BTW, I make a recipe like the Italian Beef posted here, except I use pork and add a can of beef broth. It's very good. I am sure it is also good with the beef.

We go every labor day weekend as that is when they have the Cheese Festival. My DIL, her Mom, Sister, and a couple of nieces. We also take that weekend to get a start on our Christmas shopping at the Outlet Mall in Arcola.

Some of the Amish people here built our pole barn but the huge group who lived closest to me are not here any more. There used to be tons of them that would eat in a big group at Burger King. There are still plenty of them here just not the numbers there used to be.

We used to have a couple of Amish stores here but not any more. I don't see the buggies like we used to. We do have Amish and Mennonites that sell in roadside stands and farmer's markets. We sometimes have eagles that fly over our house. They next at the lake a half mile away.
