Orange Walnut Spinach Salad (makes 6 servings)

1 (10 oz. bag spinach leaves, cleaned and stems removed
1(11-oz) can mandarin orange segments, drained and liquid reserved
1 red onion, thinly sliced
1 1/3 cups Walnut pieces, toasted
1/4 cup red wine vinegar
2 Tablespoons olive oil

1. Mix spinach, orange segments, onion and walnuts in large bowl.
2. Whisk together vinegar, 2 Tablespoons reserved mandarin orange liquid and oil until blended.
3. Pour dressing over salad, tossing to coat well. Serve immediately.
