EASY HALLOWEEN JALEPENO MUMMIES
Easy Halloween Jalapeño Mummies are a slightly creepy, fun and healthy food treat.
Prep Time10 minutes
Cook Time15 minutes
Total Time 25 minutes
Servings: 10 Jalapeño Mummies
Calories 147kcal

INGREDIENTS
5 jalapeno peppers
4 oz cream cheese softened
4 oz pepper jack cheese grated
1/4 tsp garlic powder
1/4 tsp onion powder
Pinch Kosher salt and pepper
20 candy googly eyes
1 can refrigerated crescent roll dough
1 egg

INSTRUCTIONS
1. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.
2. Slice the jalapeño peppers in half lengthwise and scoop out the seeds and ribs.
3. In a small bowl mix the cream cheese, pepper jack cheese, garlic powder, onion powder, and salt and pepper. You can also use a food processor to mix everything.
4. Fill the jalapeño pepper halves with the cheese mixture. Don't overfill or the cheese will ooze out while baking.
5. Unroll the crescent roll dough leaving the triangles together and pinching the perforations together. Cut thin strips (about 1/2 inch wide) of dough and wrap one or two pieces around each pepper half. Leave a space at the top open to insert the googly eyes when they are done.
6. Make an egg wash by combining the egg and about one tablespoon of water. Mix well. Place the mummies on your baking sheet, and brush a thin layer of egg wash on each one.
7. Bake for about 15 minutes or until the mummies are golden brown. Remove from the oven and place the candy googly eyes in the melted cheese.
8. Serve immediately and enjoy!


NOTES
SHARON'S EXPERT TIPS:
If you are making Easy Halloween Jalapeño Mummies for young children, you might want to substitute Monterrey Jack cheese for the pepper jack cheese to tone down the kick a bit.
You can find the candy googly eyes in the baking ingredient section of most grocery stores; they are also available at Michael's and other hobby stores that carry baking and candy making supplies.
I use a serrated grapefruit spoon to scoop out the seeds and ribs from the jalapeños. Be sure to wash your hands thoroughly after handling the peppers and avoid touching your eyes or wear gloves.
To make the Jalapeño Mummies ahead, I have found it works best to make and stuff the peppers up to 24 hours ahead of time, then cover and store them in the refrigerator. Before your party wrap them with dough and bake them.
Be sure to add the googly eyes right with the mummies come out of the oven while the cheese is still melted so they will stick.

CREEPY HALLOWEEN FINGER COOKIES
Minutes to Prepare: 10Minutes to Cook: 10
Number of Servings: 1

INGREDIENTS
1 cup heart-healthy margarine
1-1/2 cups white sugar (or sugar substitute)
1/2 cup egg beaters
1 teaspoon vanilla extract
1 teaspoon lemon extract
2 cups all-purpose flour
1 teaspoon baking powder
1 pinch salt
48 almonds

DIRECTIONS
1. In a large bowl, cream together the butter and sugar until fluffy. Beat in the eggs one at a time, then stir in the vanilla and lemon extracts. Combine the flour, baking powder, and salt; gradually blend into the creamed mixture to form a soft dough. Cover or wrap dough, and refrigerate overnight.

2. Preheat the oven to 400 degrees F (200 degrees C). On a floured surface, roll the dough out 1/4 inch thick. Slice into strips and roll between your hands to form finger shapes. Press an almond into the end of each cookie. Place cookies 2 inches apart on ungreased cookie sheets.

3. Bake for 10 minutes in the preheated oven, or until lightly browned. Cool on wire racks.

Makes 48 servings (1 serving = 1 cookie).

Sue - that's the purpose of any challenge, to keep us Trying! emoticon

I was a maintain this week. I ate out almost every night so a maintain was all I expected. I will pull my weight (pun intended) this week.

By my calculations, we've lost 17 pounds. If all 8 of us lose one pound this week, we could end the month 25 pounds lighter. Sounds good to me!

FRENCH TOAST CASSEROLE
Minutes to Prepare: 15
Minutes to Cook: 45
This French toast is perfect for a crowd--no more standing over a hot stove while one person at a time eats breakfast.

INGREDIENTS
4 ounces day-old French or Italian bread, cut into 3/4-inch cubes (about 4 cups)
1/3 cup golden raisins
1 (3-ounce) package cream cheese (low or no fat) cut into 1/4-inch cubes
3 large eggs
1 1/2 cups 1% milk
1/2 cup maple syrup
1 tsp vanilla extract
2 Tblsp granulated sugar
1 tsp cinnamon
Additional maple syrup, optional

DIRECTIONS
Spray 11 x 7 inch baking dish with nonstick cooking spray.

Place bread cubes in single layer in prepared baking dish. Sprinkle golden raisins and the cream cheese cubes evenly over the bread cubes.

Beat eggs in medium bowl with electric mixer set at medium speed until well blended. Add milk, maple syrup and vanilla extract; beat until well blended.

Pour egg mixture evenly over bread mixture. Cover; refrigerate at least 4 hours or overnight.

Preheat oven to 350 degrees F. Combine sugar and cinnamon in smnall bowl; sprinkle evenly over casserole.

Bake, uncovered, until puffed, golden brown and knife inserted in center comes out clean, about 40 to 45 minutes. Cut into squares and serve with additional maple syrup, if desired.

emoticon Yes Kim a maintain is good. Your body is adjusting before getting ready to drop more pounds. It needs a rest.

emoticon I loved the articles Bee. "Beating the Restaurants at their own game" was very timely because I'm going out to eat with girlfriends on Saturday, Tuesday, and Wednesday. Then on Thursday, Paul and I are going out of town for an overnight mini vacation. Yikes! That's a lot of eating out.

Yes Dee - any little movement helps. Class night tonight so dinner is always late since I don't get done with class until 9pm. Then it is hard to go right to bed, so I'm sitting here wanting to snack while I wind down. Instead, I'm keeping my fingers busy posting and packing my bag for tomorrow. After this, I'm going to gather up my clothes for tomorrow and start heading upstairs where I'm a staircase away from the fridge.

We can find those distractions. Favorite hobbies. Redecorating. Cleaning out a junk drawer. Going through the pile of junk mail. Give your fingers something else to do. Think about why you are doing this. Keep that thought in the front of your thoughts. You know it is so worth it.

Pork chops, green beans and a side salad -- nice low calorie, nutritious meal, Wendi.
We had busy day soup and a slice of garlic bread for dinner tonight.

Laura -- great strategy to avoid mindless night time snacking. That's a danger zone for me.

Brenda -- cauliflower breadsticks sound yummy.

CHEESY GARLIC CAULIFLOWER BREADSTICKS
A delicious cauliflower breadstick recipe that is a low-calorie option to real bread.

INGREDIENTS
1 cup cooked, riced cauliflower
1/2 cup shredded reduced fat mozzarella cheese
1/2 cup Parmesan cheese
1 egg, beaten
1 tsp dried oregano
1/2 tsp crushed garlic
1/2 tsp garlic salt

FOR TOPPING:
2 tablespoons softened light butter
2 cloves garlic, finely minced
1/4 cup grated parmesan cheese
1/4 cup grated reduced fat mozzarella cheese
*Optional Marinara sauce for dipping

DIRECTIONS
Preheat oven to 450 degrees.

Chop the cauliflower florets into chunks and steam them in a steamer or on the stove until slightly soft for 15 minutes. Place in a ricer or grate.

One large head should produce approximately 3 cups of riced cauliflower. The remainder can be used to make additional pizza crusts immediately, or can be stored in the refrigerator for up to one week.

TO MAKE THE BREAD:
Spray your baking stone or sheet with PAM and top with parchment paper.

In a medium bowl, stir together 1 cup cauliflower, egg, Parmesan and Mozzarella. Add oregano, crushed garlic and garlic salt, stir.

Transfer to the baking stone or sheet, and using your hands, pat out into a large rectangle

Bake at 450 degrees for 15 minutes.

Remove from oven.

Mix 2 TBSP butter and garlic in a small bowl and.spread the butter and garlic mixture over baked cauliflower bread and top with Parmesan and Mozzarella cheeses.

Place back in the 450 degree oven until all cheese is melted.

Slice and Serve!

Good reason for the delay Kim. I'm sure you were burning the calories today.

I'm loving these plans. Stick to them ladies! It will make a difference come Friday.

Since my homework this week is less than usual, I am making a concerted effort to distract myself from wanting to do late night snacking. I'm instead concentrating on doing some cleaning and a bit of redecorating preparing for "fall/thanksgiving" color scheme. Ordered some new items for a table centerpiece that should all be here by the weekend. Cleaned out a couple of my pantry cupboards.

Do yourself a favor when you feel like lounging with mindless munching - get up. Move around. Find a task to do. Favorite trick is to gt up every commercial break and get something done.

Work your plans!

I've got my meals planned. Tonight's dinner was grilled hamburgers with sweet potato fries.

My lunches resemble "bento boxes." Today, I brought leftover moc mac & cheese (cauliflower); baby carrots; grapes, and unsweetened applesauce.
My snack was Quaker Buttermilk Rice Crisps.
