Calorific value- I guess it depends on what milk you use? I have fully skimmed milk Kefir and I can't say I miss the fats.

Whatever milk used, I think the positives far outweigh the negatives, so keep fermenting!

Edited to add:
Actually, I quite often throw the resulting whey and curds from my grain hotel when I refresh and add more grains- I keep it in my fridge so it's very slow growing- I bet it would make great cheese!

Well, I decided to try the Kefir Cream Cheese as shown in

It turned out great. Now on my 3rd batch. Umm ok, I am sure this is going over my calories but it is soooo good.

I have added different seasonings to it just as a trial, and so far have loved all of it.
