I tried the link but it does not lead to an article / recipe...

My food today:
Breakfast with oats and nuts and fruit and soy milk and 1 glass of green smoothie.
Lunch was veggie soup with beans and iceberg lettuce with the dijon date dressing (about 140 calories). Strawberries for dessert.
Snack was 2 tangerines, some beans with 1 Ts hummus (store bought), 2 carrots and a handfull of pumpkinseeds.
Dinner was a dish of eggplant with tomato and garlic and beans. Frozen peach for dessert.

Calculated it: this was 1861 calories.

Today so far I had breakfast with oats, nuts, fruit and flaxseeds with soy milk, and a glass of a green smoothie of lettuce and cucumber with fruit. I have that every day.
My lunch was a bowl of tomato soup with a salad with the dijon date dressing, two ricecakes with vegan cheese (I know, not very ETL-approved).
My afternoon snack: a carrot, blueberries and 4 rice cakes with peanut butter.
I plan to have cauliflower tonight with mushrooms and onion and beans, with quinoa or potatoes. Probably followed by some frozen fruit.

I had overlooked a large zucchini, a bag of carrots and a red pepper that needed to be used. So I lightly cooked them and added frozen green beans, peas and corn. Wonderful flavors! Later I separately cooked up some kidney beans and red lentils. Yummy eating ahead besides greens for salad!
I'm planning to bake 3 large yellow delicious apples and enjoy them for dessert.

I plan on-
oatmeal and flaxseed and blueberries and soymilk

Huge salad for lunch

and since it is so hot maybe just a smoothie for supper...prob Summer will not have th emost creative meals.. keeping ti simple.
I have a potluck to go to (JULy 7) so I plan on cooking up a few dishes that are Eat to Live friendly
