Hmm, I think that calls for veggie burgers & sweet potato fries for dinner emoticon

Funny,I was just coming over to thank team for veggie tray and say how approriate tray is because I just started meatless Mondays.So, I already have loads of veggies raw and cooked in fridge .Dinner will probably be a lettuce,beet,seedless cucumber ,peas,corn and carrot salad with Italian salad dressing and cap of Bragg's Apple Cider Vinegar. emoticon

Since I am on course today and staying on base (Army!), I will eat at the mess... So, easy challenge! I will pick the vegetarian option of the day!

PREPARE A MEATLESS MEAL!

For dinner tonite try going meatless.

Here are ideas for substituting ingredients and making nutritious, meatless dishes:

~ Make a soup using beans, vegetables (such as onions, carrots, celery, squash), and grains with a vegetable stock instead of meat stock; lentil, pea, and tomato-based soups are good options.

~ Use beans in pasta sauce instead of meat.

~ Try vegetarian meat replacement options, such as soy or veggie burgers or hot dogs.

~ Replace meat in casseroles with potatoes or mushrooms.

And, of course, experiment with condiments, spices, and seasonings to experience a new world of flavor.

You can combine any of these with a salad try sunflower seeds or meat-free bacon sprinkles for a topping and whole grains for a more filling meal.
