I love making a white chicken chili with extra veggies! Cuts out the red meat and allows for some extra fiber. I'm not crazy about HOT but do love most reasonable mild varieties of all peppers. Using different peppers adds a subtle 'different' flavor. Try something besides to old bell pepper in you next meal.

In summer, I freeze jalapeņo- all you have to do is wash them and stick in a freezer bag. I can do the same with bell peppers, but I cut them up. Then I use 1 or 2 in chili. If there is a good supply of organic summer tomatoes, I roast them and freeze for winter. If I can't do that for winter, I use canned tomatoes in winter as organic are not available.

The recipe sounds very similar to what I make. I like two different colors of beans.
